This week I made the most delicious Cinnamon Spice Keto Muffins for breakfast. They’re also gluten free and super healthy, so that’s a plus!
They made for great “low carb meal prep” with a whole batch of muffins I could easily grab for breakfast in the mornings. 🙂
This recipe uses a product (an ingredient) I thought I didn’t like… until I came up with a creative way to use it, and realized I actually LOVE it!
To be clear upfront though, I DO NOT LIKE PILI NUT BUTTER.
Why then, you ask, have I scraped so many jars clean over the last few months?! 🙂
The truth is, I just don’t like it “straight” like other nut butters or even just regular almond butter or peanut butter. I discovered though that it’s one of the BEST nut butters to cook & bake with, because Pili Nuts are softer and more oily than other nuts, making gluten free keto recipes turn out way less grainy and super moist!

For this recipe I used the new Fungi Fuel Lion’s Mane Pili Nut Butter. I avoided that one for a long time because it sounded gross -lol. It turns out it’s more like pumpkin spice flavor – not a mushroomy flavor like you’d imagine.
And also because I read up on the benefits of Lion’s Mane!
My all time favorite gluten free, keto friendly low carb recipe makes DELICIOUS waffles and muffins – and pancakes too. This is the same recipe I used this time with a few slight variations. See the original recipe here
I used the “fall spice” flavored Fungi Fuel Lion’s Mane Pili Nut Butter plus added chopped Pili Nuts for a delicious nutty muffin with a soft buttery crunch!
Cinnamon Spice Keto Muffins Recipe
Ingredients:
- 1/2 cup Fungi Fuel Lion’s Mane Pili Nut Butter, room temperature
- 4 Large Eggs
- 2 TBSP Melted Butter or Coconut Oil
- 1/4 Cup Almond Flour
- 1 TBSP Sweetener
- 1 tsp Baking Powder
- 1 tsp Cinnamon
- 1 tsp Vanilla
- 1/4 tsp Salt
- Optional: 1/3 cup (62 grams) of Pili Nuts, chopped

I used Granular Swerve as the sweetener in my recipe because it measures the same as sugar and leaves NO aftertaste in my low carb recipes. If you use a different sweetener, you’ll want to use the equivalent to 1 TBSP of sugar.
You can use ANY kind of nut butter in this recipe. The Fungi Fuel Pili Nut Butter has a nice “fall spice” flavor to it already though, so if you use a plain nut butter you’ll have to add your own flavoring and spices.
Directions:
It helps if your eggs are not TOO cold, to prevent the melted butter or oil from clumping on you, and you definitely want your nut butter to be room temperature. I usually whisk my eggs first and set them aside on the counter while preparing everything else.
Preheat the oven to 350 degrees.
Stir together the first three ingredients until smooth. Add the other ingredients. Mix well. If you’re adding in the Pili Nuts for a nice buttery crunch, you can break those up easily by hand or using a measuring cup, then simply fold them in at the end.
Use a silicone muffin mold, grease a muffin tin liberally or line a muffin tin with muffin papers.
Dip out a heaping 1/4 cup of batter for each muffin. Bake at 350 degrees until golden brown. Check after 10 minutes. Depending on the size of your muffins, they could take 10-18 minutes. They are done when a toothpick comes out clean.
Just as mine came out of the oven, I mixed a little Cinnamon and Granular Swerve together and sprinkled that over the hot muffins for a nice sweet topping:
I took what was left of the Swerve/Cinnamon mixture and tossed it in a small bag of Pili Nuts to enjoy for a snack later. 😉
Using the exact recipe above, my Cinnamon Spice nutty keto muffins came out to only 1.25 net carbs each with perfect LCHF macros. 🙂
They came out nutty, super moist – and absolutely delicious! ♥
You can make them with or without the nuts, or use less if you prefer, but I really loved that my muffins were chock full of nutrient-rich Pili Nuts – making them a nice filling breakfast or even a quick snack to grab on the go.
I’m a little intrigued with this Fungi Fuel Lion’s Mane Pili Nut Butter. Like I said, just the name of it alone had me scared of it at first – lol.
It’s not an overpowering “Pumpkin Spice” flavor, and in fact you could easily add more nutmeg and cinnamon to enhance the flavor when baking with it.
I was thinking those muffins would be even better with raisins in them, but of course those aren’t low carb. Then I realized… this same recipe would probably make a PERFECT zucchini bread!
That’s what I’m going to try next…

The Original Pili Nut Butter makes the BEST low carb blueberry waffles too. Simply add diced blueberries and cook in a waffle iron instead of a muffin tin. 😉
The pili nut butters are oily and rich, making your low carb recipes super moist – instead of grainy and dry. Of all the nut butters I’ve tried with this recipe, the Pili Nut Butter definitely came out the most rich and the most moist!

Those look good. π I would replace the milk with half & half or heavy cream. Then simply put all the ingredients into the free MyFitnessPal recipe calculator based on your brands/amounts and the number of servings you make out of the recipe. That’s the best way to log the macros accurately!
