I had pesto salmon with creamed spinach & green beans on Friday (picture below).
Saturday I had pork tenderloin with broccoli, sautéed mushrooms & steamed spinach. 🍄🥦 Sunday was chicken, mushrooms & zucchini.
I’m happy to have my appetite back! 🙌
I’m still only eating a full meal about once every 24 hours, so I try to make it count. 😉
Otherwise I’m having my collagen coffee in the morning ☕️ and my antioxidant & electrolyte drink in the afternoon 🍹 and a protein bar around mid day with my supplements. 🍫
I’ve also been getting a little exercise this summer while the pool is open. 🎯❣️ I’m able to walk the swim lanes and do some easy water resistance exercises for a solid half hour now, and almost daily lately!
I had a good swim/walk already today. That made me happy. 🥰 💦🌞

Iβm so glad to see you improving your health after long covid! I just started IF and doing 16/8 sometimes longer! Iβm 67 and struggling with belly fat! I follow low carb as well! I start my morning with perfect collagen in my coffee and donβt usually eat until after noon or Iβm hungry then I do eat dinner! I take supplements that need to be taken with food so Iβm struggling with trying to get them all in since I need to take some twice a day! No weight or inches lost but itβs only been a month since I started IF! I do feel better and seem to have improved energy and less inflammation in my joints so thatβs a huge plus!
Any health improvements are a BIG win in my book! I use the pk bars I mentioned to take my supplements, sometimes half a bar in the morning and the other half in the afternoon if I don’t have much appetite but need a little something on my stomach.
I’m not sure what supplements you’re taking, but for me: the focus is on gut health. That’s the source of my weight and bloating issues, along with inflammation and edema & circulation issues etc. Getting WELL from the inside out is my TOP priority. Weight loss is more of a result of that.
Even in the beginning, when I first started eating low carb 12+ years ago, I wish I had focused more on that than my weight, and the number on the scale. Specifically: getting healthy, living healthy, BEing healthy – and just allowing the weight loss to happen as an obvious result of that lifestyle change. That definitely would have kept me in the right mindset back then! And helped me stay on track with less frustration. π
Some new things I’ve learned on my recovery journey over the last few years that are helping: 1) lymphatic massage (you can do this yourself, it’s easy!), 2- focus on GUT HEALTH, 3- an elimination diet is a great way to start out, allowing you to eliminate things that aren’t serving you and create a “diet” that serves YOUR body well. We’re all unique in our bio-individuality, so finding what works best for you is the key! xo
