It may seem strange to include zucchini in a porridge and itโs probably not something many people would consider doing, but I love experimenting in the kitchen. Iโm also constantly looking for ways to get more people to eat more veggies.

The zucchini actually adds depth and texture to the porridge. And the dish itself makes a delicious and satisfying breakfast porridge, that is very satisfying and will keep you going for hours too. ๐
Zucchini Coconut Porridge Recipe

โข ยฝย cupย almondย flour/meal
โข ยผย cupย sunflowerย seeds

โข 1ย cupย desiccatedย coconut
โข 1ย teaspoonย cinnamonย powder

Personally I donโt count calories, measure or weight food. You can work those measurements out yourself by inputing them into any of the free calorie counters online.
This serves two, I know I can cut everything in half but would rather heat the second portion the next day. Would this hold in the fridge for a few days to be heated up?
