It may seem strange to include zucchini in a porridge and it’s probably not something many people would consider doing, but I love experimenting in the kitchen. I’m also constantly looking for ways to get more people to eat more veggies.

The zucchini actually adds depth and texture to the porridge. And the dish itself makes a delicious and satisfying breakfast porridge, that is very satisfying and will keep you going for hours too. 😀
Zucchini Coconut Porridge Recipe
Cook time: 10 mins
Total time: 10 mins
Serves: 2
Ingredients
• 1 large zucchini – grated
• ½ cup almond flour/meal
• ¼ cup sunflower seeds
• 1 cup coconut cream or milk of your choice
• 1 cup water
• 1 cup desiccated coconut
• 1 teaspoon cinnamon powder
• ½ teaspoon ginger powder
• Pinch nutmeg
• 2 teaspoons vanilla
• Optional: Honey or stevia to sweeten
Instructions
Place all ingredients into a small pan. Heat slowly over a low heat and then simmer for 3-5 minutes until zucchini is cooked a little and the mixture is thick, creamy and heated through.
Serve as is for a spicy aroma filled porridge. If you prefer it sweeter add a bit of stevia. You can also add some extra coconut cream or milk on top for serving.

How many carbs, how many calories are in this recipe, please?

Personally I don’t count calories, measure or weight food. You can work those measurements out yourself by inputing them into any of the free calorie counters online.

This serves two, I know I can cut everything in half but would rather heat the second portion the next day. Would this hold in the fridge for a few days to be heated up?
