I like to call it “gluten free protein bread” because it’s packed full of all the good stuff, without any of the junk – including 12 grams of protein for 2 slices, at just 1.7 net carbs per thick slice and 85% healthy fats.
The end result: an amazingly delicious low carb grilled cheese!

I have to say though, I ate three other slices of this low carb sliced bread as is – and loved it plain too, hot or cold.
It’s so good, not grainy or course like other low carb breads, and not spongy or eggy like a lot of keto bread recipes.
It’s not as dense either, although it’s quite firm (holds together well) but also soft & fluffy.
You know I’m not much of a cook and definitely not a recipe developer! So this is the SAME recipe I have repeated multiple times that started out as keto waffles turned into keto blueberry muffins turned into a keto banana walnut bread recipe. 🍌
It was that “better than the real thing” low carb banana bread that gave me the idea for this PLAIN keto sliced bread recipe. 😉

You can use a different nut butter, but this recipe works best with a super soft nut like macadamia nut butter or pili nut butter.

🍞 Keto Loaf Bread Recipe
This is smaller than a store bought loaf of bread and while it’s not heavy, grainy or spongy like most low carb bread recipes, it’s quite filling!
You could experiment to make a larger loaf if you like, you’ll just need to adjust the cooking times accordingly.
As is, with the ingredients and amounts below that I used, and cut into 15 thick bread slices, here’s how the macros work out for this bread recipe:

196 calories per slice
88 grams of fat per slice
6 grams of protein per slice
1.7 net carbs per slice
You can use the Free MyFitnessPal Recipe Calculator to easily log your servings with the ingredients/brands YOU use, and the number of servings you slice it into – which may be different than mine.
📝 Ingredients:
- 1 8oz Jar Perfect Keto Nut Butter* room temperature
- 8 Large Eggs
- 4 TBSP Melted Coconut Oil
- 1/2 Cup Almond Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- optional: parmesan and/or Everything seasoning for a savory crust

You’ll need a loaf-sized silicone mold, or you’ll want to grease a bread pan liberally. I haven’t tried other pans like a glass dish or metal baking pan, so you may find you have to adjust the baking times if you don’t use the same size silicone mold I used – or if you change the recipe in any way.
This silicone loaf mold is PERFECT for this exact recipe, as it is above, and the entire loaf of bread pops right out with NO sticking.
You’ll want a sharp bread knife. I had one in this pretty knife set I got on Amazon. I love how the handles are shaped for easy handling, and how colorful it is. 🙂

📌 Recipe Instructions
It helps if your eggs are not TOO cold, to prevent the melted butter or coconut oil from clumping on you. You definitely want your nut butter to be room temperature too.
I usually whisk my eggs first and set them aside on the counter while preparing everything else.
Preheat the oven to 325 degrees.
Stir together the first three ingredients (eggs, nut butter & oil/butter) until smooth. Add the other ingredients. Mix well. I find it easy enough to mix the ingredients by hand with a large spoon, without using a hand mixer.
Place your silicone loaf mold on a baking sheet, and pour the batter into the mold.
Make a “foil tent” to cover the loaf and leave room for rising, and bake it covered the first half hour.
⏱ Bake at 325 degrees 50-60 minutes until golden brown.
Optional: Make a blend of parmesan and Everything Seasoning to create a savory top crust, and sprinkle that on the top of the loaf 10-15 minutes before it finishes baking. You want it to “stick” to the bread but not scorch or burn.
Depending on your oven, the dish you use and the size of loaf, cooking time may vary. You’ll know it’s done when it’s golden brown and a toothpick comes out clean.

Let it cool completely before slicing.
If for some reason it’s not done in the middle when you do slice it, cover it and put it back in the oven on 325 degrees again and keep an eye on it.
Use a sharp bread knife to cut 15 thick & fluffy slices from your loaf.
This loaf bread is IDEAL for making traditional french toast for breakfast, that’s guilt free and keto friendly!
The first thing I did though, was make a very buttery and very cheesy KETO GRLLED CHEESE sandwich. 😍
The grilled cheese had to be my favorite way to use this bread, but like I said earlier… it was even great as a “plain cold slice” straight out of the refrigerator.
Store it in the refrigerator after it cools completely since it’s made with all natural ingredients.

I love their bars too, and a lot of people have mentioned the price of those. ALL bars are expensive in my book (even the ones on store shelves) so I definitely watch for the deals.

Lynn, it looks good! I’m thinking of trying this with my favorite organic natural peanut butter (just peanuts, nothing added). I know peanuts, being legumes, are hotly debated in keto circles, so I wonder how my keto friends would like it. Pinning.

p.s. lol at the hot debates π I know what you mean! For me personally, if it does not knock me out of ketosis or cause any other issues or symptoms, it’s fine.
Everyone is different, so I use a blood glucose/ketone meter to test foods so I can add/eliminate and enjoy the widest variety of whole foods possible while maintaining nutritional ketosis. π *cheers*
