I’ve had a super busy week, which I can’t complain about really. Having plenty of work is a good thing!
That means I’ve been eating mainly convenient low carb foods & meals over the last week or so, though.
I wish I could show you more homecooked meals and beautiful fresh vegetables in this week’s keto food diary… but some weeks I’m just NOT in the kitchen much, if at all. 😉
I am still MAKING time for my home workouts DAILY though, which feels GREAT! Now that I’m in a good routine with my arms/abs/booty workout, I’m looking to start adding in more variety.

My Low Carb Meals on Monday
Monday was a usual busy, long work day so I started off with a quick low carb snack plate at my desk.
It’s 60 grams of pecans, some colby jack cheese sliced off the block, and one of the new Cranberry Almond Nush Cakes that’s in their new variety boxes. I love those!
I actually snacked on that all morning and into the afternoon, so my next meal was more of an early dinner.
I made 3 eggs scrambled with cheese. I scramble them in about a TBSP of butter with plenty of colby jack cubed off the block. 🙂
I got a little hungry again later that night because I had to work late, so I grabbed a Peanut Butter FatSnax Cookie. This one is Chocolate Chip, but the Peanut Butter is a great quick LCHF snack with a coffee.
I didn’t really eat a lot on Monday, it was a busy day and I didn’t have much appetite is all…

My Low Carb Meals on Tuesday
Tuesday morning is when I had the brand new Lemony Lemon Cookies with Matcha Frosting for breakfast that I told you about in my last post. 🙂
These were SO good, so I’ll definitely be having this again over the weekend! 😉
I don’t usually like lemon flavor, but these are so light & yummy. Even my housekeeper agreed it “looks weird… but tastes amazing!!” lol.
The Matcha Fat Tea has a very refreshing lightly sweetened taste, and it’s even better as frosting than tea. It’s even great to dip pecans in!
I was out later that day so I picked up a Double Sonic Burger from the Sonic Drive-In on my way back. I just ordered it “no bun, please.”
That was quick, easy & delicious. 🙂
I didn’t really eat dinner. I think it was one of those days again where my breakfast was really late and my lunch was more like an early dinner.
I did eat a keto bar with some nut butter on it when I got hungry later that night. I used the Legendary Foods Peanut Butter Chocolate Chip Almond Butter, which I’m HOOKED on. 🙂
I had it on one of the original Keto Brownie keto bars – which they don’t make anymore. I had some of the last ones left, and finished those off this week. 🙂
I think their newer products: Keto Brownies & Blondies are sold out right now.

I got up and made eggs for breakfast…
4 eggs, extra cheesy. 🙂
I had TWO coupons left for free McMuffins at McDonald’s so I had those for lunch. I just ordered them “no cheese, no muffin please.”
I don’t know what’s up with my lack of dinners this past week lol – but I did have a keto bar and a pack of the FatSnax cookies later that evening when I got hungry again.
I’ve been really tired at night all week! 😛

My Low Carb Meals on Thursday
I didn’t feel great on Thursday. I woke up with a headache and a sore throat and just felt tired most of the day. I feel fine now so it must have just been allergies.
Anyway, I made a quick snack plate to eat at my desk while I worked:
It’s 60 grams of raw pecans, and two of the Nush Foods organic low carb cakes. Those are like the blueberry & banana nut muffins I miss so much. 🙂
I was out running errands later and picked up take-out for lunch: a huge half pound hamburger steak with roasted veggies plus a side salad of just romaine & mozzarella.
I ate about half the meat & veggies for lunch, the finished the rest plus the salad for dinner. And I dipped everything in ranch. 🙂
I had a Keto Blondie later that night too, because I was up way later than I meant to be and got hungry again. 😛
That blondie put me over my 20 net carbs but it was totally worth it! 😉

This morning I made another Blueberry Egg Loaf so I could fry it up in butter like french toast sticks, which is what I had for breakfast. 🙂 Yum!
I know it’s not GREAT to rely so much on keto products and low carb convenience foods, but on the other hand… it’s nice to have those options and still be able to stay within my macros – and stay IN ketosis – even when I’m running nonstop and don’t really have time to cook.
Hopefully over the weekend and into next week I can get in the kitchen a little more. Or at least get out for a good steak with fresh steamed broccoli maybe. 😉

p.s. I’m not going to be in Atlanta this month as planned, which was meant to be this weekend. My “senior” great dane is not feeling 100%, so I’m sticking close to home for a bit taking care of him.

I still have two boxes left of the original Keto Brownies. My wife and I love them. We both do not like the new one even though we have one box of each left. We had them yesterday and
just for sure know we do not like them. We will finish what we have but never order again.
We have eaten at least 20 boxes of the original ones. Why they left a winner I do not
understand. I look forward to receiving your travelinglowcarb e-mails. You are very good
at what you do and informative. My wife and I have been on Keto now for almost 2 years.

It’s so great to find someone else that loved the original Keto Brownie bars! Unfortunately so many people did NOT like them and they got a terrible review when they went out in the monthly Keto Krate subscription box… so he switched to what people want: an actual brownie.
I think people assumed by the name that it would be more of a sweet treat than an actual keto bar. The fact that it had NO sugar alcohol is what I loved best about it. π
The new Keto Brownie is really great with almond butter on it. Try that as you finish what you have left on hand. π You can also chop them up into small chunks and bake them into homemade low carb peanut butter cookies or low carb muffins.
Actually, I think I’ll try that myself. π
