I got a cool package in the mail this week, and I also went to the grocery store yesterday to stock up on my favorite low carb staples, so I’ll share both of those things with you today – along with my super easy meals from yesterday. No cooking involved!! lol…
Day 68: Friday’s Low Carb Meals
I got a cool package from Atkins as their #AtkinsSpringFling winner last week. 🙂 I have the original Atkins book but they sent me The NEW Atkins Made Easy book.
I haven’t read this one yet – have you??
These are the Cashew Trail Mix bars they sent me. It was good, a nice salty/sweet combo, but small and 6 net carbs…
I had some errands to run around lunchtime so I grabbed a Low Carb Thickburger from Hardee’s. I ordered it plain with cheese, mayo & tomato. It came to 1 net carb and 77% fat – and delicious. 🙂
For dinner I made my favorite “low carb cereal” with 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries.
It comes to 5 net carbs and 85% healthy fats:
I was planning to have some cream cheese & raspberries last night, and even pulled the berries out to thaw – but I was too tired to eat 😛 so I just saved it for this morning. I was slightly hungry, but just went to bed.

While I was running errands yesterday I stopped by the local grocery and stocked up on my usual low carb staples: frozen strawberries, bottled water, pecans, almonds, sausage, cheese, butter, cottage cheese, cream cheese, coffee, creamer.
I already had eggs, frozen berries (blueberries, raspberries, blackberries), spinach, almond meal, etc at home.
What are some of the low carb foods you ALWAYS keep on hand??
I’m disappointed I didn’t get my workout in yesterday…
I’ll definitely get it in today!
Oh, and tomorrow (Sunday, June 12th) is Peanut Butter Cookie Day. I have a simple recipe for low carb peanut butter cookies if you’re in the mood! I think I’ll make some myself. That sounds delicious. 🙂
