Here is my Low Carb Food Diary for Day 67 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s NEVER too late to join if you haven’t already!
This has been an AMAZING challenge for me so far. I hope things are going well for you too! 🙂
I’m consistently staying below 150 pounds, my legs are really toning up, and I feel leaner & stronger than ever.
I still have A LOT of work to do though, mainly on my core and upper body – well, in plenty of spots actually. 😛 I feel good, and I even feel like I look good in my clothes. Which is SO nice to say and FEEL for a change…
But I took some (gross, lol) “bikini pics” yesterday as before pictures… because I plan on making a shockingly cool transformation to my body this summer. 🙂
I’ll share those with you soon, along with what I’m going to be working on – because I have some new (seriously ambitious!) goals for the next few months.
My scales finally moved back down, so I’m 146 pounds this morning – again, lol. That’s what I weighed last Wednesday before my scales started “dancing”. I’ve lost 8.6 pounds since the challenge began.
Day 67: Thursday’s Low Carb Meals
I woke up out of pecans! I decided to use my leftover sausage and just make a quick one-skillet scramble with that plus 4 eggs and 1.73 ounces of colby jack cheese.
It was delicious, and was easily two full meals – but I spread it out into three smaller meals.
Last night I had a low carb grilled chicken club from Hardee’s on the tailgate at the park. Delicious, messy! lol, and 7 net carbs.
I also had a Slim Jim thing sometime in the afternoon…

Here’s a photo of me enjoying my low carb sandwich on the tailgate at the park last night. My legs are really shaping up nicely! Minus a little dimply fat there the side of my upper thighs, lol. Minor stuff considering how far I’ve come, and how hard I’m working on toning right now. And the fact that I just turned 43 this week. 🙂
I felt GOOD while taking the progress pictures yesterday. They are gross (nekkid bodies aren’t really that sexy, lol) but they INSPIRED me and let me know exactly what I need to work on…
I can’t wait to see what it FEELS like to be lean and strong! Meaning: in amazing shape and top physical condition. I can imagine it in my mind, and that image is what fuels me day after day. 🙂
It’s easy to look in the mirror (or at pictures) and just feel disappointed and disgusted. I’ve done that for way too many years now. This challenge (even just losing 8-9 pounds) has encouraged me to accept myself as I am, where I am.
The pictures WERE hard to look at. I don’t SEE much difference between those and the pictures from almost 30 pounds ago. But I know I can’t even wear the other swimsuit anymore (it hangs off of me!). And I DID feel good just knowing how far I’ve come, how much progress I’ve made, how hard I’m working at this, and also because I know exactly where I’m going with it all – which is what really EXCITES me.
I think it’s the commitment and resolve that has improved my confidence so dramatically. Just DOING IT, and knowing I CAN DO THIS… has totally changed the way I feel about myself. (And the way I feel about food.)
I’ve only lost 8.6 pounds, but I feel like I’ve dropped TONS of mental baggage in the last 67 days!

I’m REALLY excited about my summer goals, and how HARD I’m going to be challenging myself!! I still have a good way to go too. When I share my “bikini pics”… I think everyone will be shocked at what’s underneath my (smaller) clothes right now. π haha Ugh!

I think you look great Lynn – and I truly enjoy seeing what you are eating. Curious – do you feel like you’re eating fewer veggies these days? Does that affect how you feel? I’m doing great – have lost about 5 lbs. this week – and for me (turning 60 this month – yikes) that’s incredible. Trying to keep carbs/cals down – cals are harder because low carb is intrinsically higher calorie because of the fat. But I’m trying! I need to walk/exercise more than I am – I’ve been lazy this week. You are an inspiration and I love knowing what others are eating and being successful with!

I eat fewer veggies when I am home because I tend to eat super simple foods I can just grab real quick. When I eat out I always get plenty of veggies – like the broccoli & cucumber salad in Monteagle on Wednesday, my meals at the beach last weekend, etc.
But no, I feel great. π I eat plenty of berries at home which are also good fiber and nutrients. And sometimes I actually cook, lol.
