Happy Monday! 🙂 It’s Day 36 of the Spring Low Carb Challenge, and we weigh in every Monday morning.

My current weight is 148.4 pounds, for a total of 6.2 pounds lost in the last 5 weeks. That’s up almost half a pound from last Monday, with dips down to 147.8 and back up. 🙄
While my weight loss is insanely SLOW, I’m really pleased with my consistency – and of course the fact that I’m at least losing, and not gaining. 🙂 I also started exercising consistently during this challenge, which feels GREAT!
I’m just under 5’5″ and short-waisted, so 148’ish pounds means I’m still pudgy around the middle. Losing weight will be challenging from this point forward though, given I’m so close to a goal weight for my age (almost 43 years old).
I’m okay with that. I just want to look and feel my BEST. 🙂

Day 35: Sunday’s Low Carb Meals
I didn’t have much of an appetite yesterday. I just had coffee in the morning, then a healthy low carb snack of pecan halves (1/4 cup, 30 grams) around 11am while the kids were prepping to grill out.
My son and his girlfriend were in for the weekend, and treated me to a beautiful low carb Mother’s Day cookout. 🙂 You might remember that he made me a one pound ribeye for Christmas dinner too. What a great kid, right?! 🙂
His girlfriend is vegetarian, he’s a meat eater, and I’m low carb. Perfect combo for an awesome cookout!
They started with veggie skewers using mushrooms, zucchini and yellow squash.
I made the deviled eggs…
I do Deviled Eggs very simple: mayo, mustard & dill relish.
Zack decided to use the charcoal grill instead of the big gas grill (his preference) and added corn on the grill for them.
While they were grilling, I fried two plump avocados. I just melt 2 tablespoons of real butter over medium heat, slice up the avocado and put it in the hot butter, then salt it and brown it crisp.
Fried Avocado is a favorite of mine. 🙂 It reminds me of home fries!
I had a HUGE hamburger steak, veggie kabobs, fried avocado and deviled eggs. That was one very big plate of food, lol…
I couldn’t finish it all. I attempted to eat my leftovers later last night (plate below) but barely picked at it. I literally just ate a few bites, and decided I didn’t feel like eating.
I’m not sure what’s up with my appetite lately, but my food log shows a bit more than I actually ate. I also felt tired all weekend, so I rested a lot and ate very little.

I have tons of leftovers from yesterday’s low carb cookout, so I’m sure I’ll be eating on those for a few days, lol. I had a wonderful Mother’s Day. I did miss getting to see my daughter (she was working, and lives 4 hours away), but we talked on the phone and made plans for a FUN beach trip in a few weeks.
I admit… I was a bit disappointed with my weigh-in this morning. I feel bloated and icky, I’ve been tired the last few days, and my appetite is pretty much non existent.
I may do that off plan meal (a total reset) this week, while I’m already feeling crummy lol. I think some downtime will do me good. And exercise – because I’ve hardly moved the last two days. 😛 haha…

Finally the scales are moving a bit. Down to 204.5 from 215 – 10.5 pounds gone!!

I’m thinking maybe you’re in deep ketosis – you’ve been posting that you have little to no appetite and isn’t appetite suppression one of the great things about low carb eating? Would you still have a little low carb flu going on?? I love looking at your meals – and when I’m thinking about what to eat, I always remember the combinations. You don’t seem to eat a ton of mayo – unfortunately I love it in chicken salad or deviled eggs or almost anything LOL – lotsa cals – and I think it affects my weight loss or lack thereof.

I’m not sure, Deb. I think I’m just experiencing exhaustion lol. I really pushed myself HARD last week, then had company for 3 full days (very full house). 😛
I love chicken salad, egg salad, tuna salad etc too so sometimes I do eat more mayo than other times. The calories don’t seem to affect my weight loss. And often it helps me meet my fat macros. But lately the pecans for breakfast are doing that…

Wow! Your mothers day cookout meal looked scrumptious. YUM!!!! What a great son you have!
I had lunch out with my oldest daughter and my granddaughter. All the restaurants were so crowded so we decided to do Panera Bread Co….(her idea) i was a bit nervous about eating there as the name implies—-they have yummy fresh breads and pastries there. 😮
But i knew i could order a nice salad there
I had a half of a Greek salad with balsamic dressing instead of the greek dressing and a nice cup of iced acai unsweetened tea with lemon
I would have usually, in the past, ordered the cream of broccoli soup with bread but i was happy with my salad
I want to plan an off meal one day but i can’t think of anything at this time that would entice me to do so.
I am quite happy with my choices of food on my Lc woe for now
i went to my other daughters house afterwards and exchanged gifts and i had fun talking to her and visiting with my two small grandchildren there
No food involved…just fun! 🙂
I missed my fancy dinner Saturday night. 🙁
We had tornado warnings out and my daughter did not want me to be out driving. There will be other times. 🙂
O last night i made myself sausages and SW style
scrambled egg beaters. Yummy!
And my treat was cream cheese and rasberries. Delicious!
Today i weigh the same as last week. I am maintaining my 3lb. Weight loss in two weeks….a total of six lbs lost now….not a lot but at least i am losing
BUT……i got compliments my my daughter and hubby who both were amazed at the way i look
I know i am losing more I inches than pounds now. My clothes are big. On me!!
I j ust have to be patient with that darn scale!
I have been consistent with 0 cheats this week……maybe i need to cut down on dairy and nuts this week……:)

I hate to hear you missed your outing, but maybe it was for the best. I know you were unsure about the food choices there. It sounds like you had a fabulous Mother’s Day though! 🙂
With your tracking, are you getting at least 70% fat in your macro ratios every day? When I’m not losing (or losing slow) I know the first things to cut are: cheese, cream cheese, nuts, bars/shakes, any processed foods (including processed meats). I’ve been thinking of doing that more myself – cutting back on those things.

I do not have anyone to BBQ for me and i wont fire up the Barbi. 🙂 but maybe i could use my indoor grill. 🙂
I am like you….i do not enjoy cooking anymore…..i cooked for the last 34 years when my kids were growing up…Now its just too much of a chore to cook for myself only…..i rather be doing other stuff. 🙂

I’m not sure how he seasoned the burgers. Salt & pepper I know, but I’m not sure what else. They were great though, not overly seasoned at all.
I don’t grill (alone) either, but I always love it when my kids come home and grill out. 🙂

I can’t tell you how much joining this challenge has changed my family. I lost about 25 lbs prior to this doing low carbs. Fine. Started this challenge and now teen daughter and husband have joined me. So much easier with all of us on the same page. Since beginning this challenge I am down a bit over 14 lbs. Almost to high, high-school weight and now only 24 lbs from my goal. It has been decades since I even thought this was a possibility. I can’t help but think that you, Lynn, and this interactive group has helped me be a success this time. Thank you. I know you probably don’t love taking pictures of everything that goes in your mouth, but I do appreciate it! 😉

I just started the challenge today. I forgot to weigh…ill do it in the morning. I actually did and felt better than I thought. I only consumed 23 net carbs and didn’t ever feel really hungry. I’m excited!! Thank you for all the wonderful tips. Very motivating!!!

I’m a bit disappointed at my weigh-in this morning. Not only have I not lost but I’m up a half a pound. I developed a bad cold on Mother’s day – fortunately after the celebratory event with family. My hubs thinks your body holds water when you have a cold. I think he’s just saying that to make me feel better. Honestly I have not cheated one bit, not even on Mother’s Day. I can’t complain I guess since I have lost 13 since March 1st. Oh well… keep on keeping on…

Oh no, hubs is right on that point! 😉 I show a slight gain anytime I’m sick, or even just taking Advil. I hope it passes quickly!
