Zucchini Pasta has been a hot topic in our Low Carb Challenge group on Facebook lately. (That photo was taken by Emily Drew, who helps me moderate the group.)
The big question is How to Shred Zucchini Pasta easily for fun low-carb meals and side dishes. There are two easy ways!
The easiest, safest and most popular option is to use a Paderno Spiral Vegetable Slicer which ranks #1 on Amazon in Kitchen & Housewares. Itโs only #34.81 with FREE shipping.
This handy little gadget makes the coolest looking Zucchini Pasta ever โ as you can see from Kim and Emilyโs photos.
You can also shred cabbage, make beautiful garnishments, create cucumber swirls to jazz up your salads, andโฆ well, the ideas are endless!

โShred Zucchini Pasta in SECONDS!!!! You really will think you are eating a big bowl of pasta except you feel totally healthy and good after!
So you have super cool โZoodlesโ aka Zucchini Pastaโฆ now what?
Kim said: โI saute them in olive oil, garlic powder, salt & pepper until they get a little cooked down, then I use Raoโs marinara and simmer it down for about 15 minutes. A little parm and YUM! I have also made a homemade meat sauce with my zoodles. So many possibilitiesโฆ.โ
Emily said: โMy favorite so far is a Scampi White Wine Sauce with Low Carb Wine. You only need a 1/4 cup wine for the whole dish which serves six. I also like the idea of trying it with pesto and a cream sauce.โ
Those are just a couple of ideas Iโve seen in our Low Carb Group lately. Obviously you can replace the pasta in any recipe with your new โZoodles!โ
Oh, and I mentioned a second optionโฆ Personally I would prefer to use the inexpensive spiral slicer, because it has SO many uses and creates such a beautiful end result โ and we do want our dishes to be gorgeous, right?! I love food art. ๐
But hereโs another idea you can try too from the Top With Cinnamon blog:
๐ฏ ๐ฏ That looks a little scary! ๐ฏ ๐ฏ
Here is another fun โZoodleโ photo from our Low Carb Facebook Groupโฆ
In the above photo, Emily is using the Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable that I mentioned before. It ranks #1 on Amazon in Kitchen & Housewares. Itโs only #34.81 with FREE shipping:

So now you know how to shred zucchini pasta, and have a few delicious ideas for using โZoodlesโ in your low carb recipes. If you have a favorite method for shredding zucchini, or a fun Zoodle recipe, share it with us in the comments below!
Iโve seen those vegetable slicers and I want one for myself! I might try using the second method though because as far as I know they donโt sell those slicers in Finlandโฆ.
The seasoning instructions are good too.
There are a lot of fun Zucchini Pasta recipes in the Facebook Group lately! Are you sure you canโt get one in Finland? I havenโt checked, but definitely would. This makes food FUN. ๐
I use the Paderna model, too. It is awesome! The pic above is what I was in the process of getting from just one zucchini. I need things to be easy, quick and of course delic! If I am using this tool several times a week, then anyone can easily do this!
In our quest to a healthier lifestyle, weโve been eating a lot of veggies, including zuchinni (the kids love it). I think zoodles will be a big hit in our house and the Paderno will sure help save my knuckles from the perils of the cheese grater! ๐
Zucchini Pasta is brilliant!
I like the idea, but I just donโt need another gadget! I might try the regular grater method first.
I use a vegetation one from Walgreens. Best $15 Iโve spent. I made a peanut sauce last night. Yummm
Pampered Chef has a Serrated Peeler, Item Number 1072 for $9.00. It works great for Zoodles!!.

I am going to get this and try it out. Zoodles, here we come.
If you have a Kitchen Aid Mixer you can get an attachment that will do this. Then you donโt need another gadget to store
Thatโs great to know, Beth! Thanks for the tip. ๐
which attachment is it ?
I bought the Veggetti Spiral Veggy Cutter, I ordered it at Amazon, just tried it. Man, what a treat! Thank you for the tip.
What do you think about using Zucchini โspaghettiโ in Shrimp Fettucinni? I want to make it for a party and want to avoid the noodles. I was thinking about spaghetti squash, Zucchini would be cheaper.
Sounds delicious, Clarise! ๐ I donโt really like spaghetti squash, and find it difficult to work with. Just donโt overcook your zoodles โ steam them โ and it should be fabulous!
I just got one for Christmas but I havenโt eaten noodles in so longโฆ. I donโt know what to make them with! Post some recipes for what to do with these โnoodlesโ!
Fun, Tara โ youโll love it! ๐
Are you in my low carb challenge group? If so, this thread has TONS of ideas: https://www.facebook.com/groups/lowcarbchallenge/permalink/1191163794244982/ Enjoy!
We recently tried zoodles and LOVE them! But, they seem watery. How do you get the excess moisture out before cooking? I have salted and let my egglplant โsweatโ before cooking. Anybody have an a tried and true method they use? TIA ๐
Hi Lisa ๐ I asked other people because I wasnโt sure the answer, and got LOTS of great feedback here: https://www.facebook.com/lowcarbtraveler/posts/1323000617728530 ๐ *cheers*
Thanks Lynn!
Have you guys tried Mexican Gray Squash? Just called Mexican Squash in some stores. Iโve seen it at Winco a lot. It looks a bit like zucchini, but lighter green and a little speckled. It has a milder flavor than zucchini. As much as I like zucchini, I prefer this! But most importantly for making โnoodlesโ is the texture. It has a lower water content so it stays more firm and holds up better when frying, steaming, etcโฆI havenโt tried it as noodles yet, but Iโve had a lot of success with other dishes and canโt wait to try this! ๐
Great find, Nicole โ Iโll have to look for that here! ๐
