Tonight I actually cooked dinner at home. I know, rare. But I have to confessโฆ it was hardly cooking.

We had pulled pork , green beans, and โcheesy parmesan cauliflower bakeโ.
(yes โ I made that up)
They were canned green beans, with a few pieces of carver board roast beef (thick sandwich meat!) added for flavor. A bag of frozen cauliflower.
Even the pulled pork was bought packaged from the local grocery store. So it was more like a โheat and serveโ than actual cooking. ๐
My plate was around 7 net carbs, tops โ and all โgood carbsโ of course.
The cauliflower was fabulous, by the way! Hereโs how I made itโฆ
I should start by saying this is usually how I prepare broccoli at home, when Iโm bored with plain old steamed broccoli.
But I was out of broccoli, and happened to have a bag cauliflower in the freezer.
Cheesy Parmesan Cauliflower Bake
I boiled the cauliflower until tender. Drained it, then added: salt, butter & grated parmesan cheese (to taste). I put it into a non-stick pan, turned the oven on about 375, covered the cauliflower in shredded cheese, then baked it until the cheese was good and bubbly.
Thatโs it!
As I mentioned, the pulled pork was a โconvenience foodโ I found at my local grocery store.
They had two options: with sauce, and without sauce. This one (without sauce) is very low carb and absolutely delicious! Itโs flavored with vinegar I believe โ tangy and tender. Yum!
Itโs ready to eat after about 3 minutes in the microwave.
Easy, delicious, FAST low carb dinner!
And the kids didnโt really know the difference (ie low carb), they just thought it was a usual dinner. ๐

Did my first low-carb grocery shopping today. Felt weird to buy so much meat, but balanced that with lots of salad stuff and NO cereal, rice, and chips. I did buy some small wheat tortillas, but will eat sparingly. The net carbs arenโt as great as I hoped for for those, but need something to stick my turkey and cheese into.
I usually roll up turkey & cheese together and dip it in Caesar dressing (finger food). ๐ Or you can add lettuce and roll it up in that too. Just some ideas!
I keep frozen broccoli & cauliflower on hand for easy side dishes โ and cucumber too. I like salted slices, or cut it into cubes and stir in a tablespoon of mayo. Egg salad & deviled eggs make nice sides too.

Were you using a specific low carb plan? Mine is simple: just eat less than 20 net carbs a day. Iโm curious what caused you to get off track after you had started (curious because it happens to a lot of people)โฆ was it just old habits that crept back in, or what? -if you donโt mind sharing.
I think it was a combination of many things. I moved and the stress of the move, So easy to grab fast food when you are busyโฆ and letting old habits creep back in I think ๐ This blog is motivating me, I must say I did lose 10 pounds though. Scared to get back on the scales now. I am raring to get back with it and I think the 20 net carbs a day is a great idea. ๐
Thatโs understandable โ any major change is hard (like moving), or it is for me. I still eat a lot of fast food & convenience food, and also eat out a lot. Itโs just part of my busy lifestyleโฆ whether Iโm at home or traveling. Fortunately there are low carb options for people who canโt be in the kitchen all day! ๐
