I thought I would check in and give you a photo tour of my low carb meals this week, plus my MyFitnessPal diaries so you can see how I log my foods.
The keto food diaries below are for four full days: Monday, Tuesday, Wednesday and Thursday.
I went hiking on Wednesday too, so I’ll have to tell you all about that in my next post. It was such a great hike! 🙂
I was actually going to go caving, snorkeling & dancing this weekend – but I changed my mind, or that’s “so far” at least. I’m still deciding what I’ll get into tonight and tomorrow.;)

My Low Carb Meals on Monday
My MyFitnessPal diary (below) is logged backwards. I didn’t actually have breakfast on Monday, but rather an early lunch.
I ordered my favorite low carb delivery: a half pound hamburger steak with roasted veggies. I picked around the carrots of course. 😉
With a side salad of just romaine & mozzarella – and ranch for dipping. This actually made two meals for me, an early lunch and an early dinner.
Later that night I was watching a movie and got hungry again, and had 3 of the 4 different flavors of FBomb nut butter packets from their variety pack:

Protein: 74 grams

My Low Carb Meals on Tuesday
Breakfast on Tuesday was “cheese fried eggs” which simply means I fried eggs (in butter) and fried cheese on them – on both sides. 🙂
I like fried cheese, and I like fried eggs, so this was a great combination!
I had to run out later and was famished, and found this chocolate Atkins shake hiding in my fridge – so I grabbed that and drank it while I was running errands.
On my way back I stopped at Sonic Drive-In and ordered “a Double Sonic Cheeseburger with no bun please.” They put it in a coney box!
I brought it home and chopped it all up together into a “keto cheeseburger salad.” 🙂
I had a pack of Peanut Butter FatSnax cookies while I was making breakfast, and another pack that evening – along with two of the FBomb nut butter packets.
So my day went like this:
Cookies & coffee, fried eggs, Atkins shake, bunless burger, cookies & nut butter. Which would be considered 5 small meals – or two meals and snacking otherwise. 😛

My Low Carb Meals on Wednesday
I got up on Wednesday and worked through the morning, grabbing a Nush Foods organic low carb cake to eat with my coffee at my desk.
I was in a rush to wrap things up so I could get out for a hike! 😉
I stopped for gas on the way and picked up this beef & cheese stick snack. I have no idea why, because I already KNOW that I don’t like them, lol – yuck!
I ate it anyway on my 90 minute drive to Ozone Falls. 😛
A few miles later and still hungry, I broke into my low carb snack stash and had some raw pecans and another NUSH Fods cake – this time Pineapple Mango! 🙂
By the time I finally got dinner later that evening I was famished, so I stopped in at the local Mexican restaurant on my way home.
I ordered a taco salad, like this: “I’ll have a taco salad please, with no taco, beef and grilled chicken both, avocado slices instead of guacamole, and a side of cheese dip – no chips, but you can leave the salsa.”
I just prefer avocado to guac, plus I don’t have to worry about how it’s made or what’s in it. 😉
That was a delicious meal! I could only eat half of it, so I brought the other half home for leftovers.

My Low Carb Meals on Thursday
I got up and made enough cheesy eggs to last me two meals, because I had a busy work day. It’s FIVE eggs, and I can only eat maybe 3 at the most at a time.
I finished the rest of my eggs for lunch, then for dinner I had my leftovers from the Mexican restaurant the night before.
The salsa, sour cream & cheese dip turned into more of a “sauce” when I heated it up – which was yummy. Like taco salad soup! 🙂
I pulled all the limp lettuce out of it and added a serving of Coconut Oil & Himalayan Salt Pili Nuts – for the soft buttery crunch, and to make it filling enough for a meal.
I also had a Keto Blondie and an FBomb nut butter packet sometime that day…

Protein: 82 grams
79% Fat, 18% Protein

Yesterday I had my usual cheesy eggs and a few plain wings and a low carb beer – and tried something new from a low carb bakery that I’m still researching.
Just another typical day in my low carb life!
Today I’m having roasted broccoli and cheesy eggs for dinner… just because that’s what I had on hand, lol. Weird combination I know, but it tastes great and it’s all real foods. Simple is good. 🙂
My hike this week was GREAT and such a nice (much-needed) break! I’ll have to share the pictures and the story with you in my next post – including my very UNgraceful attempt at a backbend, and my creepy run-in with a man-eating jellyfish plant!

I’m freaking out! I got a new iPad and was attempting to follow the instructions to get the net carbs to show up on MyFitnessPal.Com account. The ability to add the Net Carbs has been removed, I had downloaded and set up MyFitnessPal in my HP computer and had the Net Carbs on my list, but when I downloaded the app to fix it on my iPad, it took it out of my computer, too, and now I can’t fix it. Help!

It won’t work on the iPad or any mobile apps – only online in Firefox or Chrome browsers. I’m not sure which browser you’re using on your HP computer, but you should be able to disable/remove the original plugin from your browser and add it back in – or reactivate it from your browser settings.

I love the cheese fried eggs. π A nice change from my usual cheesy scrambled eggs at least. I’ve been going through A LOT of eggs lately, lol.
I worked the first aid booth at our local Greek Festival this weekend. I had fried kasseri cheese for one meal, it was about 3 oz cheese, dipped in milk, and a very light coating of flour (I know, not keto, but they didn’t have almond flour), it was fried on a grill, no added oil, they squeezed a lemon slice over it, and got it crispy for me, yummy! They served it with toasted Pita bread for everyone else, but I just took the fried cheese. It was incredible!
Saturday morning, I heard one of the male cooks talking about the scrambled eggs he was making for his kids that morning, he used some fried onion, a homemade greek salad dressing for marinade for the onions, then added some feta cheese and cooked that until it melted, then added a couple eggs to the mix and scrambled them. It was heaven on a plate! If I used just a tbsp of onion, the recipe would be completely keto as the dressing is made of greek olive oil, vinegar, and some greek seasonings. Yummy stuff.
That sounds delicious, Susanne! π And great choices, keeping it very low carb while still enjoying the event and the foods. Smart! The recipe for eggs is amazing I bet – I love cooked onion!
I love me some cheesy eggs, yours look delightful. I appreciate your by-number breakdown of everything you posted, it really does help to keep it in perspective.I just ran across a great resource you might also enjoy, it had a ton of easy high protein recipes. The Ultimate Protein Cook book by Melanie Wildman. I love that she is a mom trying to live this healthy life, while also demonstrating it to her kids! I can appreciate that!
That’s awesome, Heather. π I don’t eat high protein though. I mean, by grams I get more than the daily recommended about, but I eat high fat / moderate protein. Too much protein can cause all kinds of problems.
But it has to be by ratios or percentages, not grams, as some proteins are also fats. It’s all about the science of food combining. See: http://www.travelinglowcarb.com/7006/macronutrients/ for a simple explanation & illustration.
The only reason to ever eat “high protein” is if you’re trying to bulk up for muscle mass, specifically for a competition or show – for competitive body builders. π
