I had good intentions of whipping up half a dozen new creative recipes today, but I was over it after the first one -lol.
It was a great one mind you, but I had enough messy hands and messy kitchen.
Not to mention it takes up a lot of time!
I’ll share it with you soon…
I think tomorrow I’ll try my hand at the low carb dessert recipe, because it sounds really great and like something Aaron would LOVE. So maybe I can share that one with you this week.

While I’m working on all that here’s a quick tour of my low carb foods yesterday, plus my MyFitnessPal food diary so you can see how I logged everything.
My Low Carb Meals on Sunday
I should think I’d be tired of this meal by now, but I just bought my 3rd bag of the Smithfield sausage patties – and keep eating it!
The sausage is all natural with very few ingredients and zero carb.
That plus 3 eggs scrambled in real butter with colby jack cheese makes a HUGE (and very filling) meal for me… and it’s so easy.
I can’t eat all of that in one sitting, so I finished off the rest of it around lunchtime.
Along with a delicious Keto Brownie. 🙂

For dinner I made a turkey sandwich on cauliflower sandwich thins. These are a new product I’m testing, and I haven’t finished testing them yet – so stay tuned for more about their products. 😉
I piled on almost 5 ounces of sliced turkey with mayo, and had a side salad leftover from take-out the night before to go with it – just romaine & mozzarella.
Then I realized I had some work to do, and couldn’t type with messy mayo hands (lol). I chopped it all up together in a huge serving bowl and made one big salad out of it – so I could eat it with a fork at my desk. 🙂
That was delicious!

It’s been a rainy day here in Tennessee, which was perfect to enjoy my breakfast on the deck with the raindrops hitting the tin roof.
After breakfast I finally potted the hens & chicks I got myself for Mother’s Day. Something about playing in the dirt on a rainy day makes me SMILE inside. 🙂
Spring seems to be seriously off schedule this year so I’m just now starting to clean up the deck and work on my plants. I’m not complaining though. The cool nights and rainy days feel amazing!
I hope it helps to see a single daily LCHF food diary with keto macros, just to give you an idea what a typical day looks like. It doesn’t always have to be fancy or include elaborate recipes or big home cooked meals.
I like simple. 🙂
I’m still doing my Tricep Dips daily in a dedicated effort to tone my arms back up, but I’m motivated to step up my game and get into a full body fitness routine.
I miss being lean and tone!! I also really miss being out & active. We have flash flood warnings here in Tennessee right now so I’ll be in for a few days… and doing home workouts instead.;)

This makes the third week I have not logged. During my weight loss journey, I have gone from 277 to 174 pounds. Paleo and Keto sure have made it all possible. I thank you and several others for the information that I needed to achieve my results. I must admit I do not ‘purchase’ any of the premade Paleo products. I do make several cookies and waffles and have become relatively making anything from the basic, eggs, almond flour, protein powder mixture that seems to appear the basis for many of the recipes. The waffle/pancake mix has been a great help, as I went for most of a year without any such item. From there I have made many different flavored cookies, cakes, etc. just by adding flavors, nuts, sugar-free dark chocolates, cocoa, vanilla, sunflower seeds, etc. When I stopped logging I was sure my weight losses would cease, and I did bounce up two or three pounds but then last week saw those and one or two more pounds fall off. So, perhaps I will be able to control my weight just by following the plan without the log. But, I do believe it is the logging that will make people successful in their weight loss efforts. Thanks for being part of my weight loss ‘team’ and keep inspiring others to get on board.
Congrats on more than 100 pounds lost, Don – that’s amazing! π I agree that tracking is key, not only for getting those macros right… but also for getting in the habit of more mindful eating.
I log my foods BEFORE they get made or ordered, that way there are no surprises. π I learned the hard way there are lots of hidden carbs out there! lol – Plus it got me to spend that $10 on a little kitchen scale and know for SURE what I was eating and how much.
There are so many great recipes. I do love the versatile recipe for the waffles, pancakes & muffins because you can do SO much with it. I’m trying two new dessert recipes this week. I agree it’s best to stick to staple ingredients – but for those on the road or on vacation, traveling etc, it’s nice to at least have options for things to pack that keep you on track. π

I’ve been doing my net 20 carbs (about 90% perfection) since March but only lost 5 lbs total which was during the first week. I’ve been lingering at 140.-142 since then and am 5.2, age 54 (probably menorpause too). So wishing I could drop under the 140s UGH! The past 2 days I’ve been uping my walking steps to 7000-10,000 a day and hoping this helps kick this crappy stall.

Are you tracking closely, and getting at least 70% fat consistently every day? When you say “about 90% perfection” do you mean there were a few off plan meals here and there? If so, that might be the real culprit – because your body will get confused going in and out of ketosis.
I say “confused” because I don’t know the proper term π I just know that has happened to me before too – once when I wasn’t tracking and didn’t realize I was eating too lean, and again during a period where I was not consistent with the 20 net carbs. (consistent enough, long enough)
I’d say the biggest hurdle for you is that even if you stay super consistent with your macros and whole foods – is that you’re within 20 pounds of goal weight. Those are the most challenging pounds to lose! π
