I’ve had a delicious low carb week. 🙂
Here are 9 super easy low carb meal ideas, with some LCHF snack & dessert ideas too…
This should give you creative ideas for easy meals at home, take-out on your lunch break, what to order at restaurants, quick low carb food ideas, etc.
I tend to eat VERY simple, and it’s rare that I cook, but Aaron was over this week and we LOVE to cook together – so you’ll also find two deliciously EASY low carb home-cooked meals in this food diary too. 🙂
On Monday I had my favorite “low carb cereal” for breakfast…
It’s 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 diced strawberries. It comes to 5 net carbs and 85% healthy fat:
I had a very late breakfast (above), then a very late lunch/dinner, so only two meals for the day – but it came to almost 1400 calories and only 15 net carbs, so it was plenty.
I got a great meal from Applebee’s carside-to-go while I was out running errands: the Triple Bacon Burger with lettuce & tomato instead of a bun, and steamed broccoli instead of fries:
There’s bacon under the cheese, on top, and cooked into the burger too! 🙂
The carside-to-go option is so great if you need a healthy but quick meal on your lunch break, or on your way home from work. And you can even order online, which just makes it EASY.
On Tuesday I kicked off the day with cheesy eggs, which I make with real butter and real cheese I cube off the block myself:
I melt the TBSP of butter in a skillet over medium heat (“5” on my stove), crack the eggs in and scramble them right in the melted butter, then add the cubed cheese.
I use about 1/2 ounce of cheese per egg. It comes out perfect! 🙂
I had my “cereal” for lunch (pecans, cottage cheese & strawberries), and then a simple “snack dinner” – mozzarella string cheese, Pili Nuts and a Keto Brownie Nutrition Bar:

On Wednesday I had cheesy eggs for breakfast again.
I made a quick, easy lunch out of these Habanero BBQ Pecans and creamy spinach dip – which was a delicious combo!
Last weekend I mixed that spinach dip with a can of tuna for a filling & delicious “low carb tuna spinach dip” – and loved it so much I bought some more tuna this week to make it again. 🙂
Dinner was Low Carb Date Night ♥
Aaron I went out to Applebee’s, which is quickly becoming a favorite because of their new menu options – and the new options on their 2-for-$20 and 2-for-$25 menus, making it a GREAT deal for a delicious dinner!
When you order the “two meal deal” you also get an appetizer as part of the deal, and one of the options is two side salads. I got a caesar side salad with no croutons:
We both ordered the Bourbon Street Chicken & Shrimp, which came on a sizzling platter with sauteed onions and mushrooms, and topped with a lemon garlic butter.
We also subbed the potatoes for steamed broccoli as the side:
That was an AMAZING meal!
I love that we’re so food compatible.;)
I couldn’t even finish all of it. It was a lot of food, lol. So I ate most of it but brought home what was left of my chicken & salad to enjoy later.
Thursday’s breakfast was cheesy eggs again, this time with chunky salsa on top. 🙂
Aaron came over and worked at my home office, and whipped us up a super quick low carb lunch – a simple one skillet meal!
It’s Tyson Grill & Ready Chicken Strips and flash frozen sliced Yellow Squash thrown in a skillet with a couple TBSP of real butter – and Pili Nuts to add a nice crunch to it. 🙂
We’re both addicted to the Pili Nuts! They’re SO great to cook with…
Since Aaron made lunch, I took my turn in the kitchen for dinner. 🙂
I had a bag of frozen shrimp and two bags of frozen broccoli florets in the freezer – and some Bertolli Alfredo Sauce (super low carb, rich, and super delicious!).
I dumped all the shrimp in a big bowl and covered them with water, and let them thaw at room temperature – then pulled the tails off.
I browned it hot & fast in 2 TBSP of real butter with Oh My Spice! Sweet & Savory. This stuff is amazing, kind of like cajun spice without the heat? I’m not sure how to describe it!
If you can’t see it below, click here to watch the quick video of how I cooked the shrimp. After that I added 1 cup of the Alfredo sauce & simmered it a bit.
I served the “Sweet & Savory Alfredo Shrimp” over the steamed broccoli:
So easy, but seriously delicious! 🙂
Aaron loves to bake (I love that he loves to bake, lol), and he LOVES Good Dee’s Blondies, so he baked a big pan of those after dinner using my special Low Carb Blondies Recipe with cream cheese & pecans:
We let those cool and put them in the refrigerator overnight, which makes them MUCH easier to cut – and had them for breakfast on Friday morning with fresh strawberries. 🙂
I cannot even describe how AMAZING these blondies are. ♥
Here’s my blondies recipe again.
I used kosher cream cheese and raw pecan pieces. YUM! 🙂
I also ate my leftover grilled chicken & caesar salad for a quick lunch, then had my favorite “low carb cereal” for dinner.
I do 20 net carbs max and 70% fat minimum, the Ideal LCHF Macros, and managed to meet that every single day this week – with carbs to spare! 😉
What I did NOT do well at this week was my exercise goal…
I totally tanked at getting in my walks & workouts. 🙄 😛 I would love to give you a good reason for that, but all I could come up with was lame excuses. 😀

I’m on day 13 of being low carb, I don’t know if I’ve lost weight because I’m staying off the scale. It sabotages me every time. I’m just going by the feel of my clothes which is more important than a number!
Yesterday I made some low carb blueberry muffins and they were awesome! I also had ordered a loaf of plain bread from the great LC bread co and it is super good also! I have a package of the chocolate brownies and will try your way of making them. Mine aren’t the blondies though.
It’s such a relief to be rid of the sugar cravings that make me feel like a crazy person! I’m hoping next week to add in some weight lifting. I like the stronglifts 5×5 program as it’s simple to start with.
