I originally planned to kick off our next Low Carb Challenge on September 1st, not realizing that was 1) a Friday, and 2) Labor Day Weekend.
I know better than to kick off right before a holiday weekend 🙄 and Friday would make a terrible weekly weigh-in day! (lol) Because most people would blow the weekend knowing they had all week to make it up. 😛

Speaking of the weekend, here’s what I ate…
My Low Carb Meals on Saturday
I had an extra big serving of my usual “low carb cereal” with THREE servings of pecan pieces, 1/4 cup Daisy cottage cheese, 4 strawberries and 18 grams of blueberries. It came to 7 net carbs and 87% healthy fat – and delicious. 🙂
For lunch I made a big plate of eggs: 4 eggs scrambled in a full TBSP of real butter with colby jack cheese (cubed off the block).
I ate *almost* all of that. Obviously I got my appetite back. 🙂 lol
For dinner I just had a Keto Brownie Nutrition Bar with mozzarella string cheese.
I think what happened is my breakfast was closer to lunch, and lunch was closer to dinnertime.;)
I also had 6 mugs of coffee and 72 ounces of water…

My Low Carb Meals on Sunday
I started the day off by finishing up all the leftovers I had on hand. First, the rest of the scrambled eggs I didn’t finish the day before…
Then the rest of my O’Charley’s leftovers: grilled salmon, broccoli & asparagus.
That was delicious – again. 🙂
I didn’t feel like getting out OR shopping, so I got creative…
I got the brand new Peanut Butter Keto Kookie in one of my keto boxes recently, even though they don’t come out until next month. 🙂
They’re VERY good, btw!
As usual, I decided to make a meal out of it 🙂 and stacked it with kosher cream cheese plus frozen raspberries & blueberries:
I may have licked my plate clean 😳 lol
It was THAT good!
For dinner I decided to make tuna salad.
And then discovered I was out of mayo. 😯 Rah!
But I *did* have some Tostitos brand Creamy Spinach Dip, and plenty of fun low carb things to DIP with, so…
I mixed 4 TBSP of the Creamy Spinach Dip with a can of tuna. 🙂
Then I portioned out one serving each of the Rawxies and Pecans:
The Habanero BBQ Pecans and the Rawxies Crunch are both VERY good VERY low carb snacks. It’s nice to have something CRUNCHY to snack on!! 🙂
That had to be the BEST tuna salad I’ve ever had. 🙂
Or I guess you could just call it spinach dip with tuna.
Whatever you call it… it was seriously delicious and made for a great low carb dip. It would be great on a low carb bagel as well!

Remember in my last food diary that I said I would get back to my daily walks with Slim? He’s my great dane. 🙂 Anyway… he made it all of ONE mile, lol – and spent the rest of the day like this:
Poor guy! haha – We’ll have to work back up to those brisk 2-3 mile walks. 😉

Hey Lynn, Glad to see you’re back to yourself. A few questions: I know you’ve said many times calories doesn’t really concern you when doing LC, I read another Keto site/blog and she has a calculator on the site and I had to punch in my numbers just to see. So for rapid weight loss while following a keto diet it recommended 807 calories per day. For normal weigh loss while following a keto diet it said 1200. Your thoughts?
Secondly I’m going through menopause or perimenopause or whatever you want to call it. Do you recommend LC for weight loss during menopause? Do you know of ladies that are able to lose while doing LC during menopause? Oh and of course I have hypothyroidism.
I’m exhausted most of the time during the day but I think that has more to do with menopause than my thyroid issues. Per the doctor my thyroid meds are finally where they need to be and honestly I was feeling pretty good until the past month or two.

Keto is great yes, and will even help increase your energy – so long as you’re getting enough nutrients and calories of course. The “Keto vs Calories” topic is a HOT debate across low carb communities…
I couldn’t live on 800’ish calories a day – and have ANY energy at all. And even last week when I had no appetite and was under 1,000 calories and barely over that another day – I didn’t lose any weight. I also don’t gain eating 2,000 calories a day consistently. I tend to lose weight in spurts, regardless of my calorie count, which is pretty typical.
My advice: keep it VERY simple for now: 20 net carbs max, 70% fat minimum. That healthy fat is the KEY, so 70-80% consistently for more energy AND faster weight loss. Don’t worry about calories for now.
There are LOTS of women going through menopause and dealing with thyroid issues in my challenge group, so that’s a big topic there. Are you in the group? It’s a great place to talk to others going through the same thing…

I bought a box of keto brownies chocolate almond crunch and I hate them…..I have to lose 7 pounds to get to my goal of 122 and nothing seems to be working…I stay on the plan but I’m not losing and I’m getting discouraged…HELP

That last 10 pounds is the MOST challenging. How are you tracking, and are you getting at least 70% fat consistently?
What was it you didn’t like about the KetoBrownie nutrition bars? Was it taste, texture, or what? I’m finding all the feedback very interesting! π Are there keto or low carb nutrition bars you do like?

I often add blueberries – because they have great nutrients and add a lot of flavor. And I added the extra serving of pecans because I was feeling HUNGRY. π

We’re going camping this weekend and and i was totally stressed out trying to figure out how on earth i was going to eat low carb and keep track without WIFI. Ugh!! Anyway, thank you! Just wanted to pass along some info. Not sure if anyone else has experienced this but I went to order some of Pizootz peanuts that came in the July Keto Krate. I am looking forward to starting the Challenge, and the change of date works well for me too. I am slacking a bit with my low carb nutrition, so it would be a good way to stay on track and stretch my comfort zone a bit.
I have a few friends who might be interested in it, and perhaps some of my page followers would want to join too. Taking part in a challenge would be a great start for them I think.
This has also given me an idea for my next blog post, so I might just write it today! π
