As usual here is my food & fitness diary, so you can see what I’m eating and how I’m logging it, for easy low carb food ideas. And in this case, easy meals on the go or out & about. 😉
My Low Carb Meals on Monday
I had my favorite healthy low carb breakfast: 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese, 4 small strawberries & 18 grams of blueberries.
It comes to 6 net carbs and 85% healthy fat – and delicious!
I was out running errands around lunchtime, so I grabbed a Low Carb Grilled Chicken Club from Hardee’s (also known as Carl’s Jr in some areas).
And yes, it’s on the menu! 🙂
^ That low carb lettuce wrapped sandwich is 7 net carbs because it’s BBQ chicken, so most of the carbs come from the sauce.;)
Since I was close to my “carb budget” for the day by dinner, I just made cheesy eggs.
It’s 4 eggs scrambled in real butter, with colby jack cheese cubed off the block. And a dash of pepper. 🙂
I also had a few bites of a leftover low carb brownie, and 6 mugs of coffee 😯 lol – each with a TBSP of Coffee-Mate sugar free powdered hazelnut creamer…
Here’s my MyFitnessPal Food Diary for Monday:
Net Carbs: 23
Total Carbs: 35
Calories: 1756
Protein: 88 grams
74% Fat / 20% Protein
Water: 56 ounces
My Low Carb Meals on Tuesday
Tuesday was a busy day of running non-stop, so I just grabbed a handful of pecans for breakfast. And by a handful, I mean 2 servings (60 ounces) measured out precisely on my little kitchen scale. 😉
I was out running errands late morning, fortunately before breakfast ended (!) so I stopped through Burger King and grabbed a low carb meal to go.
They had their croissants 2-for-$4 so I got two sausage egg & cheese croissants (“without the croissants, please”). 🙂
The BK.com (Burger King) website has these listed as 1 carb each.
TIP: Always look online and use the nutrition calculators and/or nutrition fact downloads to SEE exactly what you’re getting!;)
That evening I had a date with Aaron 🙂 and we decided to get a healthy low carb dinner at O’Charley’s restaurant. They have LOTS of great low carb menu options!
We both got the same thing, with a few minor variations. Starting with a caesar side salad for me, and a garden side salad for him – both with “no croutons, please.”
Tip: If you’re eating alone, or eating with other people who are low carb or gluten free, let your server known when they come to greet you and take your drink order.
I simply say, “We don’t eat bread, so don’t worry with bringing the rolls – I hate for them to go to waste.”
And always say that with a smile. Be nice to your servers! 😉
Dinner was Cedar Plank Salmon with Steamed Broccoli.
I ask for my broccoli “loaded” like a baked potato – and that’s exactly what I tell my server: “Can I get that loaded please, like a baked potato: top my broccoli with butter, sour cream, cheese & bacon” (or whatever you want on it).
The salmon was charred SO beautifully, which is my preference. It was delicious!!
Note: The cedar plank salmon at O’Charley’s is always flown in fresh and NEVER frozen, which is WHY it’s so delicious… and why I love to go there for salmon.
I couldn’t eat it all, so I logged what I did eat – and brought the rest home as leftovers to enjoy for lunch today. 🙂

After dinner Aaron was teaching me how to use Resistance Bands, and showed me a few cool EASY exercises I could do at home with them. He had extra – you know, the “lightweight” bands he wouldn’t use anyway 🙂 lol – so he sent those home with me.
This was NOT easy to try out… in a dress. 🙄 haha – especially a “fluffy” comfortable knee length summer dress. But you know me: do it anyway!:)
I’m not even going to ask, “does that dress make me look fat?” 😛 because I was obviously going for “hot summer night comfortable” lol. It may not be flattering (at all), and definitely oversized on me, but it’s basically like getting to wear pajamas in public.:)
The resistance bands he gave me are 4″, but these are the #1 Best Seller on Amazon – and a GREAT price too, especially with the workouts & videos that come with them:
So now in addition to working on my arms with my Tricep Dips and Modified Chin-Ups… I’m using the bands for “butt sculpting” (_|_) and inner thigh workouts.
All easy things you can do at home in a few short minutes! 🙂

You are so creative – loaded broccoli like a baked potato – I never thought of that – clever!
It’s delicious, Gaynel. 🙂 I got bored with plain broccoli eating out so much. I tried that my very first few months of being low carb (over 6 years ago) and got hooked! It’s more like broccoli casserole that way. 😉
Still in cape cod staying on diet, went paddle boarding for the first time, was fun and a great work out, hiking on nature trails and enjoying the ocean and seafood!!!

Black never can never look anything but good IMO, Lynn. That LBD has certainly paid its dues and should command a premium spot in the wardrobe now! 🙂 I have that EXACT set of bands. They are high quality, perfect resistances, and space savers to boot! I use them often with Classical Stretch.
That salmon looks so GOOD! I have a Salmon Loaf planned later this week, but fresh is always better.

Love your blog and to see what you eat! It helps to give me ideas. I have a question about the Coffee-Mate creamer….I’m trying to get away from Heavy Whipping Cream now that I am in full ketosis. I want to cut back slightly on my fat grams. Would it be better to go with Half & Half or go with the Coffee-Mate SF creamer? Why do you prefer the Coffee-Mate over other alternatives? And have you ever tested your blood sugar after it just to make sure it didn’t raise you blood sugar? I suppose I’ll have to test myself to see how it effects me. Thanks!
I switched to it for lower carb count. The HWC (heavy whipping cream) is 1 carb for 2 TBSP (no matter what the label says, most say zero). It is actually .4 carbs per TBSP or 7 carbs per cup.
I found that plus artificial sweetener (to be counted as 1 per packet, even though it also says zero) really added up on me – given how much coffee I drink. Which is the real problem 😉 lol.
The coffee-mate powdered hazelnut (not every flavor! and NOT the liquid!) is only 1 carb per TBSP and super creamy and a great flavor – so it’s all I need. That cut my carb count down on coffee and gave me more room for veggies & berries.
I am aiming to “go black” and am currently trying to cut back on how much I use and how much coffee I drink in general. So that’s the next goal, because otherwise I mostly eat “real food” other than the occasional convenience.
I have tried pretty much every coffee combination under the sun over the last 6+ years, including BPC, heavy cream, half & half, flavored syrups, you name it. Nothing beats the creamy flavor of Coffee-Mate sf powdered hazelnut!!
Why would you want to cut back on your fat grams? You should go by percentages or ratios btw, instead of grams. But I’m curious why you want to change what’s obviously working? 😉
I will have to try the Coffee-Mate Creamer powder because it does sound good! It sounds like 1 TBS is enough to make a 10 oz coffee creamy & tasty which is what I am looking for.
I’m only trying to cut back on my HWC fat grams. Sometimes I order a “Misto” at Starbucks where half the cup is HWC and I’m over 1,000 calories and used up all my fat grams for the day at 120 grams in that cup of coffee! I’d rather save those fat grams for food. I tend to over-do the HWC. So I’m looking for a compromise and it sounds like the powder creamer just might be it.
I use MyFitnessPal …….. but how did you get the % to show up on your screen? I paid for the full version, last year, to be able to see the percentages but I didn’t renew it. I can only see the grams on my screen at the moment.

I would cut down on HWC just for the carb count alone (7 carbs per cup). You can’t really go by grams for your macronutrients, because some proteins are also fats – so you really need to go by ratios or percentages instead.
