I’ve eaten 18 eggs in the last 4 days. 😯 lol. That was NOT intentional.
I’ve been eating super simple, as I was on the go all week. I actually skipped a meal each of the last 4 days – but still managed to get plenty of calories each day, and still met my LCHF macros too.
Here is what I ate for the last four days, including every low carb meal & snack, plus my MyFitnessPal food diaries so you can see how I logged those foods…
My Low Carb Meals on Monday
I was out running errands and noticed Burger King has their croissants 2-for-$4 so I got two sausage egg & cheese – without the croissants. 🙂
The BK.com website has these listed as 1 carb each, for 2 carbs total:
For lunch I had my favorite “LCHF Cereal” of pecans, Daisy Brand cottage cheese & strawberries – a super easy low carb meal of real foods & healthy fat.
I didn’t feel like dinner, so that evening I just had 2 TBSP of peanut butter instead:

My Low Carb Meals on Tuesday
I got up super early on Tuesday, and made eggs to take with me on the go. It’s 4 eggs scrambled in real butter with colby jack cheese:
I was headed out to hike the new Window Cliffs State Natural Area near Cookeville, TN. 🙂
I packed low carb snacks for my hike, but didn’t end up eating while I was out. Then I came home and had a long nap (so I skipped lunch) then made this healthy dinner…
It’s leftover cauliflower rice & broccoli slaw sauteed in real butter with Spicy Chili Pili Nuts, over a bed of raw baby spinach – with more Coconut Oil & Himalayan Pili Nuts on top. 🙂

Later that night I had a little low carb ice cream & peanut butter. I thought I would have some chocolate too, but didn’t end up eating that…

My Low Carb Meals on Wednesday
Wednesday was another busy day full of errands, including a trip to the city & back (a two hour round trip).
I made my usual 4 eggs scrambled in real butter with colby jack cheese:
… but I ended up taking my low carb breakfast with me on the go:
The only other meal I ate that day was this simple plate of: kosher cream cheese, peanut butter & pecans.
I also had a small handful of Pili Nuts that evening before I went to bed.

My Low Carb Meals on Thursday
Thursday I got up and made eggs… AGAIN. 🙄 lol *sigh*
I had a full morning at work, so I ate half my eggs, then the other half around lunchtime.
Then for an early dinner I had four MORE eggs. 😛
I fried them over medium in real butter and enjoyed them over a big bed of fresh, tender baby spinach leaves:

My hike on Tuesday was fairly uneventful. I didn’t end up doing the whole hike, maybe 2 miles tops. But I did climb a 300 foot bluff on the way out, which was a great workout and a VERY good sweat. 🙂
I’m currently 143.4 pounds, wearing size 8 shorts (VERY comfortably) and a size medium in tops. I’m 44 years old, and 5′ 4.5″ tall.
I didn’t have much of an appetite this week. Definitely not my norm, at least. And I ate A LOT of eggs, lol. That was just me eating what I had on hand and keeping it simple…

My week was just the opposite. I felt like I couldn’t stop wanting to eat. I am up 4 lbs and this still remains the story of my life a weight rollercoaster and seem to always fall off the diet train. I haven’t been able to make it a way of life yet. Gatherings etc. knock me off.

Did you eat more than usual OFF plan, or all low carb foods? I have “hungry days” sometimes, usually followed by weight loss, which is a weird phenomenon – but that’s always when I’m still eating within my macros (20 net carbs max, 70% fat minimum).
Social get-togethers can be tough. I either eat before I go (like: lunch before a matinee, or dinner before a movie), then I can easily say “that looks amazing, but I’m still so full from lunch” or whatever – and actually mean it. π Otherwise, if I know I can find low carb options there (wherever it is), I do that. It’s usually easy enough to eat just the meat & salad in most cases.
It’s unfortunate that our culture has so many things revolving around food, instead of what they were intended for: socializing and fellowship. But that’s just the way it is. So getting THAT figured out sounds like the key for you! π

Really like eggs too, so good with butter & cheese, but only do cheese on weekends. Have to watch salt intake, but holding steady at 155 and I’m 5’5″ feeling much leaner. Goal next week is eat cleaner & keep exercising. Really don’t feel munchy & enjoy eating clean. You look great, thanks for your pictures!

Hi Lynn, I spend weekends at the beach staying at the in laws. Well, between BBQ’S, adult drinks (which I stick with rum and a zero everything flavored water yum ), but then it’s just everything else like chips etc….. I don’t understand why I can do so good then let all my hard work go out the door on weekends.
You are right, I could easily stick with meats and salad and pass on the junk. I have to just get more focused.

At some point for all of us it becomes a decision between indulging in certain foods, and indulging in our vision of being happier and leaner. And win the latter wins over in your mind, the former becomes so easy to say “no” to. π
I have this vision of myself being lean and strong and mostly… HAPPY and confident. I’ve made *huge* strides toward that over the last year or so, and it feels AMAZING already! So I’m super inspired for this last leg of the journey. THAT feels better than anything I might choose to eat. π
It’s not just about losing the weight, but truly a whole life makeover type of thing for me. The sense of achievement is driving me forward in other areas of my life, to do things I’ve always *wanted* to do!
Lynn have always wanted to thank you. I found you in a Facebook group 2 yrs ago. Have been following you through e-mail since. It is good to have a guideline. And someone to look to for fresh ideas. I have gone from a tight size 26 to an XL. Pretty important for someone who has had to buy in the plus sizes for years. Wish I could show you a picture of my change. I want plus size women to know this is more than a possible thing for them too! My cholesterol numbers and all my health problems have had dramatic change. It is possible. And I eat very well. There is no going hungry. I have a ways to go. But I am not where I was and you have been a part of that. Thank you! β€

I started on a crazy coincidence, it started bc I forgot my lunch!!! Then I said forget about it! Fast for a minimum 16 hrs with no carbs and no sugar then it became an 18 hr fast which I maintain every day!!
No carbs , no sugar….. eating clean!!!
