I just got home from a fun low carb road trip from Tennessee to Orlando, then Daytona beach and back – and stayed on track through the entire trip.
You probably saw many of my low carb meals along the way on Facebook or Instagram. I’ll share a detailed “food photo tour” here with you. 🙂
Why? Because it makes trips, a vacation or occasions much more FUN and pleasant if you FEEL good.
There’s nothing worse than being bloated and lethargic… when you’re meant to be having a good time! 😛 And of course when you MOST want to look your best. 😉
I decided to drive down for this trip, because I really LOVE a good road trip. Plus it meant I could stop at the beach on the way there or on the way back.;)
My destination: the Caribe Royale Resort in Orlando where I attended a 2-day business conference.
I took some fun low carb foods to enjoy on my trip! 😉
Since I was driving I was able to take a cooler, and also bring a bag of fun low carb foods to enjoy along the way. I brought water of course, and also put some cream cheese & strawberries in the cooler, plus sliced salami – things I had on hand.
I brought some of the new low carb foods I mentioned in my last post too, because I knew they would be convenient both on the road and in a hotel room.
Eating Low Carb On The Road…
I ate before I left home, if I remember right I had my usual: 3 eggs scrambled in real butter with colby jack cheese. I left home around 3:30am, but I don’t remember what time that was. Anyway, I had a snack on the road sometime just before sunrise:
Mid-morning somewhere in Georgia I made a quick meal in the car when I stopped to fuel up. I brought peanut butter with me, and pecans too, because they are both high calorie / high fat foods that would travel well & keep me going.
So I made a meal out of the Double Chocolate Keto Kookies I brought with me:

Then somewhere near Macon Georgia I enjoyed this warm little sun-baked cinnamon beauty. It was HOT in Georgia, so the dashboard was the perfect place to warm up a treat. 🙂 It’s a gluten free, low carb (zero net carbs!) smartcake:
The coconut cake is my FAVORITE, but cinnamon pulls a close second.;) They’re cheapest on Netrition where you can buy them individually and mix & match flavors.
I brought two large coffees with me from home in my Contigo Travel Mugs, but I did finally have to stop for another coffee somewhere between Macon and Valdosta.
I carry the sugar free hazelnut Coffee-Mate powdered creamer with me on road trips, to avoid any coffee hassles on the go. 😉 The hazelnut is their best SF flavor, and the powder is creamier (and takes less) than the liquid to make the perfect low carb coffee! It’s only 1 carb per TBSP. Plus it keeps well on the road on 90° days.;)
I don’t like any of their other SF flavors + the hazelnut is lowest in carbs.
I had crossed over the Florida state line before I got hungry for dinner, but I was making good time and didn’t feel like stopping for food…
I reached into my “goody bag” and found the Cracked Pepper Beef/Pork Stick and the Smokey Barbecue Pepitas that came in my May Keto Krate.
Yes, I brought a change of clothes too. It went from cool… to HOT! 😛
I really liked the Vermont Cracked Pepper Beef/Pork Stick! It had a GREAT flavor.
I like the BBQ Sprouted Seeds too, but it was a little too much flavor eating them together – so I just had a few of those and then the stick & string cheese.
I’ll definitely be ordering more of the sticks. I found these on Amazon (below), and love the idea of “minis” I can keep in my bag on the go, and in my hiking pack. 🙂
I made it to my destination just in time to clean up for the evening social, which was a poolside gathering. I wore my swim sorts and bikini top underneath the new little black “Sunburst Dress” by Fabletics that I just got:
There was plenty of food at the evening social, but I was feeling a little too road weary to eat. Nothing really appealed, even though they did have raw veggies and cheeses – it was a beautiful spread!
I thought I might eat something later once I wound down, but a bedtime coffee and a good sleep won over. 🙂
THIS is what motivated me to stay on track on my trip down, and through my entire trip. I wanted to fit (comfortably!) in the pretty clothes I brought to wear. 🙂
That low carb breakfast in my lap was delicious, by the way. 🙂 I made it in my hotel room from the foods I brought with me – which saved both time AND money.;)
It’s Nush Foods Banana Nut Cakes (they’re organic, gluten free & low carb) with cream cheese… and fresh strawberries.
The banana nut is my favorite flavor, with carrot spice pulling a nice second!
If you got the April Keto Krate, you probably tried the carrot spice cake?
The cream cheese looks lumpy because it froze in my hotel fridge, btw.;) You can fix that with a quick warm-up in the microwave!
They had a beautiful catered lunch at the event I was attending, with plenty of carbs of course – but I found tons of low carb foods to enjoy too. 🙂
Here’s what MY plate(s) looked like:
There were four different hot entrees on the buffet. I chose the vegetarian hot plate: sauteed zucchini & squash, plus a caesar salad with cold cuts and mozzarella balls – and berries & butter for dessert. Yum!
People have asked me how I turn down all the beautiful carbs at these catered buffets & luncheons. My answer: “Easy! I choose to eat healthy because I choose NOT to be overweight and miserable anymore.” 😉 That is NOT a hard choice.

I was full from my lunch, so I saved the berries & butter to enjoy later for a later afternoon snack – when that “long day slump” hit me!
Oh – and you may have noticed my Fitbit is “dressed up” too. 🙂
That’s a pretty replacement band I got cheap on Amazon for my Fitbit Charge 2… so I could track my steps in style.;)
Back to my afternoon snack… because it was delicious!
I brought the Peanut Butter FatSnax cookies from home, and decided they would be delicious with berries and butter. 🙂
It made for a beautiful (and yummy!) LCHF stack:

This blue dress is the same style as the red dress I’ll show you below. I liked it so much I got it in two colors/patterns.:) I got them both at AE.com (American Eagle).
My low carb meal is a a simple bunless bacon cheeseburger with avocado mayo & “green fries” … aka: steamed asparagus. 😉 Yum! That was a delicious meal.
The cheese is “fried cheddar.” It looked a little sketchy, but it tasted great!
I made a delicious low carb breakfast in my hotel room again the next morning. This time it was a zero carb cinnamon smartcake with cream cheese, pecans & strawberries:
We had a beautiful catered lunch at the conference again the next day… this time: a taco bar! I still managed to make a fabulous low carb plate though. 🙂
I filled it up with a mixed greens salad, chicken, cheese, cucumbers, avocado sour cream, and even the big fat strawberry that garnished the dessert plate:

I don’t eat bars often, but this was great to have on hand while running nonstop that day, because I didn’t end up sitting down to dinner until 9pm. It kept me going! 😉
I did finally have a simple but delicious low carb dinner at the Vista Bistro, which was at the Buena Vista Resort next door.
I was tired and craving something simple but solid. I ordered grilled salmon with steamed broccolini. Perfect!
I skipped breakfast the next morning and just had coffee while I was packing up to head home. We got on the road fairly early though, so I just found something at the Shell station when we stopped to fuel up.
I got a turkey & cheese sandwich (and just ditched the bread) and these delicious “Oh Snap Pickles” Dilly Bites:
I also had my Pili Nuts, and had some of those too. I take them pretty much everywhere I go. 😉 These big soft, buttery nuts are totally addictive!

I decided to have lunch on the beach, with what I still had in my cooler: strawberries, cream cheese, salami & pili nuts. That was a delicious beach picnic!
I also had Halo Top low carb ice cream in the bottom of the cooler, well-iced – and enjoyed that on the beach. 🙂 This was the PERFECT break on my road trip home!
I had company on the trip home, and on the beach. 🙂

For dinner, there was an Arby’s attached to the gas station / truck stop in Jasper, Florida where I fueled up… so I got the Farmhouse Salad with roast turkey & bacon:
That made for a delicious fast food meal on the go!
Later that night, VERY late actually, somewhere just south of Georgia, I made a quick stop at a Kroger store (because it was the ONLY thing open on that exit, lol) and discovered these new Atkins “made with superfood” bars.
Have you tried them yet?? The mocha almond bar was horrible 😛 but the almond coconut bar was delicious!! Not overly sweet, great texture, very nice flavor…

Oh btw i had a real donut earlier this month…it did not taste good to me anymore. It was too gummy in texture….i rather stay with the guilt free lc cakes. π π

And sorry to vent but have to say, all of your great snacks, i.e., Nush, FatSnax, Pili nuts…..are all SO expensive, not everyone can buy and take advantage of them. Can you try to keep that in mind and maybe find affordable LCHF snacks as well.

I was in for work, so I was stuck in a conference the whole time, but it would have been great to try to sneak in a coffee at least. π I’m in Orlando for work a few times a year so maybe I can come in early or stay over and host a get together – because there are a few other cool people in your area too!

I read and swear by your posts, and try some of you suggestions. But I am not having any luck with this woe. Went from the 15th of this month to today and eating lo carb, hi fat some exercise…….0.6 lbs. very frustrating. Don’t know what else to do.

Hi Kathy π That was 10 days, right? Did you just lose the .6 pounds, or did you lose more then it fluctuated on you? I ask because that’s typical. I lose weight VERY slowly so I often lose 2-4 pounds a month max, and that’s not 1/2 pound a week consistently either – because weight loss trends are weird, not linear lol.
Anyway, how are/were you tracking? I ask to get an idea of your usual daily macros during that period.
