I’ve had a great week at home so far since returning from my low carb road trip. 🙂
I have lots of meals to share with you from this week, but let’s start with yesterday – because it was such a FUN low carb day!
I haven’t weighed in lately by the way, but I’ll do that on Monday when we do our next group weigh-in. My weight is dropping again finally, which is nice. 🙂
Anyway, here’s a quick photo tour of my low carb meals yesterday, and my entire day – including some fun afternoon exercise and my MyFitnessPal food diary.
Thursday’s Low Carb Meals
My low carb breakfast may seem kinda weird, but it was delicious! And such a great combination of LCHF foods & flavors.;)
Just something quick & easy while I was working through the morning…
I had strawberries, cream cheese, peanut butter & pecans:
Lunch was take-out from Stacked Bistro, a little local deli.
I got the Turkey Spinach Wrap (minus the wrap) with a caesar side salad:
I only had a few bites of lunch, then mixed it all together to take with me to eat on the go, as I had to run into the city.
I stopped for dinner while I was in Murfreesboro too, before I headed back – at the Camino Real Mexican Restaurant.
I noticed something new on the Appetizer side of the menu: Guacamole Casero:
It was delicious! 🙂
For my entree I ordered the Acapulco Salad, but instead of onions and bell peppers, I asked for cucumber slices instead. It was sort of a mix of that plus the salad above it on the menu:
It’s very easy to swap things out when you glance over the menu and see what all they offer on various entrees. I knew I would enjoy the cucumbers a lot more, plus onions & peppers have a higher carb count.
The waiter didn’t bat an eye. I’ve never had any trouble with special requests.
The plate was shockingly huge, chock full of beautiful real / whole foods, and absolutely delicious!
Especially when I drizzled a little salsa and cheese sauce over it. 🙂 Yum!!
I dipped my crisp cucumber slices in the cheese dip too…
Who needs chips?! 😉
Of course more than half of that ended up in a to-go box, lol.
It was entirely too much food for one meal! For me at least. 😛 Even though I had worked up a great appetite before dinner…
I took a nice afternoon break at a nice park by the river in the city. I got in a good walk, a little playtime, and a nice break by the river before heading back. 🙂
Several people on both Facebook and Instagram asked about my shirt…
It’s the “Sunburst Tee” from Fabletics, which is the same style as the black Sunburst Dress I had on in my beach pictures. The back is really cute:
The skirt is new, from American Eagle. I got it to wear over my Fabletics swim shorts when I’m out hiking. 🙂
I absolutely love my “nature breaks.” Not just for the great exercise, but for the break from work and life and all the things that swirl through your mind.
Something about being outdoors makes me realize what’s most important, and makes what’s not all that important simply… fade away. For awhile at least. 🙂
My last top was at the huge Kroger there, because I can’t go all the way to the city and back (a 2 hour round trip for me!) without stocking up on the delicious Halo Top low carb ice cream. 😉
I had to have some last night of course, which put me over my “20 net carbs” for the day… but it was SO worth it! lol – YUM 🙂

I had 5 large coffees and 64 ounces of water.
I got in some decent exercise on my afternoon walk too. 🙂
I track my meals & macros with MyFitnessPal and that syncs with Fitbit, which tracks my sleep quality and activity/exercise.
Tracking really helps keep me on track, because it makes me more mindful of what I’m eating and how much I’m exercising. The Fitbit is the first thing that has ever TRULY motivated me to get up and MOVE. 🙂 I love that!
I had a fabulous low carb day yesterday, all the way around, from my delicious breakfast while I was working to my amazing meals on the go before I came home to finish up my work… and wind down with half a pint of Halo.;)
