Today is our Week One Weigh In, so it’s time to share your total number of pounds and/or inches lost since Monday April 3rd!;)
I started this challenge at 146.2 pounds last week, after struggling with some weight gain due to medications and being sick (bronchitis, respiratory infection, etc).
I haven’t had a chance to weigh in yet this week, but I woke up less bloated (finally!) on Saturday morning… and down almost 3 pounds, to 143.4. 🙂
Yay! It’s nice to see the scales moving in the right direction again 😛 lol.
I look forward to weighing in after this weekend’s exercise and (lack of) meals.:)

Saturday’s Low Carb Meals
I was up all night Friday night (literally until almost 7am Saturday morning) so I didn’t have breakfast until around noon. Thankfully McDonald’s has “all day breakfast” on the menu now, so I had sausage & eggs.
This made two meals for me. I ate half of it before I headed out the door, and the other half on the way, as I had plans out of town on Saturday.
I always order it a la carte: “3 sausage patties and 3 fried round eggs, please.”
I went out dancing that night in a little pub and ordered dinner there. Options were limited because most “pub food” is all fried, but I found something on the menu!
I ordered a cheeseburger with a fried egg on top (one of their options) and asked for “no bun please” and got a side salad with ranch instead of fries:
That was good. I ate almost all of it!
I also had one rum & diet coke (zero carbs), 4 Michelob Ultra beers (2.6 carbs per 12oz bottle), 32 ounces of water, and lots of exercise from dancing the night away! 🙂
I also had 3 coffees that day…

Sunday’s Low Carb Meals
There was a free breakfast buffet at the hotel I stayed at, but the only thing low carb on the entire buffet was scrambled eggs and sausage.
I’m wary of “buffet eggs” because they often use milk, and some places use pancake batter to make and keep them fluffy on the bar. Plus the idea of “sausage and eggs” turned me stomach too, after drinking the night before. 😛 Ugh!
I grabbed what I could find: I raided the condiment rack and got some cream cheese & peanut butter. LOL. I was desperate for a bite to eat, and had meds to take too. I’m on another round of antibiotics for a respiratory infection right now…
It’s actually a delicious combo, cream cheese and peanut butter. 🙂 It tastes like peanut butter pie! I only ate 2 of each, and took the rest with me – figuring I might need them on my hike later.;)
I needed some “real food” (something solid) on my stomach to go on the hike that was planned for the day, because it’s a BIG one.
Unfortunately the only thing between the hotel and the hike (besides Dunkin Donuts, Krispy Kreme and Baskin Robbins 🙄 lol) was a McDonald’s. 😐 UGH.
The idea of eating this AGAIN made me physically ill. 😛 Blah…
I forced myself to just suck it up and eat it, and not complain, and grabbed a bag of mixed nuts from a gas station too.
I took those plus a cream cheese & peanut butter with me on the hike:
I didn’t eat that. I didn’t feel well. I ended up eating about half that bag of nuts on the way home later – and went to bed without dinner. I was exhausted.
I also had 10 waters that day, and 4 coffees – each with a TBSP of Coffee-Mate sugar free powdered hazelnut creamer. The powdered creamer is really creamy, only 1 carb per TBSP (less carbs than the liquid AND creamier than the liquid!) – plus the powdered creamer is easy to take on-the-go with you. 😉

im struggling on getting into ketosis. ive stayed under my 20 carbs a day with no sugar and lots of water what else can I do ? – feeling discrouraged!
Hi Chelsea π Are you losing weight? I assume you’re testing is how you know – have you achieved ketosis yet? It takes longer for some people I’ve heard, but usually within the first week to 10 days…
I’m finally back on track after a miserable two weeks of fighting cravings and just the overall yuck feeling. Only lost a pound this weigh in but at least it’s a start AND I feel lean again! Just five pounds to goal but man are they tough going! Thanks for helping to keep us motivated Lynn!
Those last pounds are the MOST challenging. I feel you, Marti! π I usually average a pound a week loss at this point myself, but it’s not every week – it just averages out that way over the month.

When your order from McDonalds, you ask for 2 cracked eggs and 2 sausage patties. Can you share with me how much does that cost? Is it sides?
Another question. What is the difference between using Half n Half or heavy cream if they are the same amount of carbs? You look great by the way!

Hi Lonnie π At McDonald’s I just say “3 sausage patties and 3 fried round eggs please.” They tend to charge different every time and at every location – but they will serve you anything a la carte like that. π
Heavy Cream (HWC) is .4 carbs per tbsp, meaning 7 carbs per cup – even if the label says zero (they can say that because it’s less than 1 carb per serving). So you count 1 carb per 2 tbsp.
Half & Half is .6 carbs per tbsp, so 10 carbs per cup.

I’m down three this week, and my cravings have subsided! You don’t do dairy because of the carbs, or because your lactose intolerant? I love your cream cheese and peanut butter improvisation. It just goes to show that you can find low carb options even a a hotel breakfast buffet.
Also, I bought a pair of Keen hikers after I saw yours, and I love them!

I do eat dairy – cheese, Daisy brand cottage cheese, real butter, heavy cream, etc. π
Is Rum. 0 calories? With Diet Coke? Cool. Thats much better than any wine. Only Rum might get you drunk faster. Lol. π
I never liked scrambled eggs at the hotel buffet either. The eggs tastes yuk for some reason and usually greasy. Ugh. I always looked for the boiled eggs.
Your poor feet after all that dancing in heels. I do not know how you do it…..i can never get more than 2400 steps a day or 1 mile. I guess i will have to workup to that, little by little. No wonder you are down 3lbs. Good job!!!
I’m guessing Rum has calories, but it IS zero carb. Only if you don’t get flavored rums, just regular, of course.
I worked up to my current exercise level slowly, yes. I started out by walking my dog more, and we got up to doing a mile, two miles, then a fast paced 4 miles eventually – before I took up the more strenuous hikes. π
So glad to be back low carbing. My body loves it. Down 10lbs

Looking to loose another 4lbs this week. Will be traveling for work so need the motivation to stay on track.
