I had a simple low carb day yesterday with 21 net carbs and 77% fat.
My goals are 20 net carbs max and 70% fat minimum, and I tend to stick pretty close to that most days.
I don’t sweat it if I go under or over either of those by a little, but usually my macros are spot on.
I was on the road again yesterday, but I DID cook a little something for dinner. 🙂
Unusual for me, I know – lol. It was delicious too!!

Friday’s Low Carb Meals
I had 3 eggs for breakfast, scrambled in butter. No cheese this time, just plain.
I had to be on the road again, so I grabbed some almonds I had on the counter to take with me, plus a bottled water. I wasn’t sure how many almonds were left in the package, so I weighed them first…
That’s my handy Ozeri Kitchen Scale! 🙂
I put the almonds in a ziploc bag so they wouldn’t spill all in my purse (lol) and made a coffee to go and hit the road…
I had a rest when I got home, then got up and made a super fast but delicious dinner. It’s broccoli slaw sauteed in butter, then I tossed in Pili Nuts and also added crushed Cello Whisps and sauteed that all together just a few more minutes.
That came out buttery, nutty, crunchy & delicious! 🙂

Later last night I found a couple of leftover pork ribs (dry, no sauce) and also ate some Halo Top low carb ice cream. I also had SEVEN coffees yesterday, each with a TBSP of powdered sugar-free hazelnut creamer…

I’m trying to stay as active as I can, even though I’m still VERY sick with this respiratory infection. Which sucks. 😛 lol.

Not that I know of. I believe you can only get them online right now. Once they start farming them and they go mainstream, the nutrition facts will change. Right now they are VERY nutrient dense, as they’re still being wild harvested from volcanic soil in the Philippines – so I’ve been stocking up and enjoying them. π
The spicy ones are great too, and would have been PERFECT in this dish! I like the two mixed together actually – especially for my hikes. π Enjoy!!

Welcome Amy π Sure! I just threw together what I had on hand. Broccoli Slaw is great sauteed and toppped with just about anything – and great raw in cold salads as well.
You could top it with grilled or baked chicken chunks, avocado fried/browned in butter even – all sorts of ideas!
Are there any type 1 diabetics with an insulin pump out there? I’ve been eating low carb for nearly 3 weeks now but haven’t lost any weight. Need to know what I’m doing wrong. Hoping someone can help.

I use have in my coffee each morning, about a tablespoon. There are different opinions about hwc either being high in carbs or low in carbs. I am totally confused! Which one is it? Thank you so much for your help.
Sorry that may not have made sense! I use hwc in my coffee each morning about 1 tablespoon.
Hi Cwoodall π HWC is .4 carbs per tablespoon, meaning it’s 7 carbs per cup – which can be really important if you’re using higher amounts in recipes for example.
You should count every 2 TBSP of HWC (heavy whipping cream) as 1 carb, no matter what it says on your label (most labels say zero, since it’s less than 1 per serving).
