Below is a quick photo tour that includes three full days of low carb meals, plus MyFitnessPal food diaries so you can see how I logged those meals, and how the macros worked out.
My goal is 20 net carbs max and 70% fat minimum, which is a standard ketogenic low carb diet.
I did NOT cook either except to make scrambled eggs. 🙂 So if you like EASY low carb food ideas, here you go!
In addition to eating healthy, my big goal this year is to get in amazing shape.
Unfortunately I got sick and hardly MOVED for 8 weeks, so I feel like I’m starting all over lol. I’m finally feeling better after a long phase of flu & bronchitis / pneumonia hitting me in waves.
I’ve been on THREE hikes this week! 🙂 I’m still working on getting my strength & stamina back so I’m taking it easy. But it’s so nice to be back out & about, and on my feet again after being so sick for two straight months.
All 3 of my hikes were AMAZING, and included waterfalls – my favorite. 🙂

Here are three days worth of EASY low carb meals & macros…
Monday’s Low Carb Meals
I had my favorite healthy low carb breakfast: 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese & 4 small strawberries. (5 net carbs & 85% healthy fat)
I had a busy work day, so lunch was a something quick at my desk: 60 grams of pecans (half cup) and a little over an ounce of colby jack cheese. Plus I had a string cheese too. Simple! It came to over 600 calories, so it was filling enough for a “meal.”
For dinner I had leftover ribeye steak from the night before with cheesy scrambled eggs. Then some Halo Top Creamery low carb ice cream later that night. 🙂 Yum!
My macros came to: 21 net carbs, 77% fat / 19% protein.
Tuesday’s Low Carb Meals
My low carb breakfast was a beautiful combination of LCHF foods: cream cheese & raspberries, with Pili Nuts.
Pili Nuts are amazing & super nutrient dense! They’re buttery soft, HUGE, only 1 carb per ounce, and something like the lovechild of macadamia nuts and almonds. I call them “butter nuts” 🙂 They’re the most unique & addictive nut I’ve ever tasted!!

For lunch I scrambled three eggs in real butter with colby jack cheese.
Then for dinner I had a Low Carb Grilled Chicken Club from Hardee’s. Those are 7 net carbs because it’s BBQ chicken.
My macros came to: 22 net carbs, 77% fat / 18% protein.
My friend Caroline came over Tuesday night with her great dane Blue. She LOVES to raid my Keto Krate boxes when she visits. 🙂
She’s an executive chef (so she “knows food”) and loves my Low Carb Pasta plus my Low Carb Pancake/Waffle Mix, the Pili Nuts (above) and the Roam Sticks too! Oh – and the Bello Organic Marinara Sauce.
This time she tried the SuperSeedz “Somewhat Spicy” Pumpkin Seeds that came in my February Keto Krate… and LOVED them! She said they’re the best pepitas (pumpkin seeds) she’s ever eaten, with the PERFECT flavor.
They were so good she ate the whole bag while she was here, so I didn’t get to try them -lol.
Wednesday’s Low Carb Meals
The next morning we got up early to head out on a big hiking adventure. We left around mid morning and we were busy getting out hiking bag together, so we just had coffee in the morning then stopped for a late breakfast / early lunch on the way out of town.
We stopped by McDonald’s since that was convenient for the direction we were headed, and I got “3 sausage patties and 3 fried round eggs, please.” (That’s how I ordered it.)
That usually makes two meals for me. It’s A LOT of food. I was between breakfast and lunch though, and knew we’d have a BIG hiking adventure, so I ate it all… then didn’t eat again until dinner much later. Except for a slice of colby jack cheese while we were out in the woods that day – and a lot of water. 🙂
After our crazy fun hike we were both famished – and filthy, lol. We decided to go out to eat anyway, and stopped at Cheddar’s Restaurant on the way back.
I got a tender, juicy rack of ribs (no sauce, please) with “loaded broccoli” and a caesar side salad. Delicious! I only ate about half the ribs, and brought the rest home to enjoy the next day.
Cheddar’s has the BEST ribs ever! They are meaty and tender and the meat just falls right off a totally clean bone. YUM.
My macros came to: 13 net carbs, 78% fat / 19% protein.

I wore my new Keen Hiking Boots on two of my three hikes this week.
I really love them. 🙂 I just got them in early January, and they were perfect straight out of the box – no breaking in required!
Wednesday’s mid-week hike was a GREAT workout!
Not only did I meet my 10,000 Fitbit step goal that day, but it was a full body workout (lol). It was a CRAZY hike with a lot of off-trail navigating, climbing, etc. 🙂

I’ll upload the other two sets of hiking photos for you too, because they were crazy fun adventures & great workouts!
I had a nice low carb dinner at Logan’s restaurant yesterday after another “waterfall adventure” and discovered they’re having a nice special right now, so I’ll post details on that here for you next too.
I’m off to have some sausage & eggs for breakfast, then I plan to have grilled salmon & steamed broccoli for lunch today… and maybe get out in the warm Tennessee sunshine again this afternoon. 🙂
