I enjoyed a mostly quiet, simple weekend myself. Then yesterday I went out for an easy hike in the unseasonably warm and sunny weather here in Tennessee.
I still don’t have my strength and stamina back, after being sick for more than 7 weeks now, but it was SO nice to get outdoors and back on the trails!
Here are all of my low carb meals over the weekend, plus my MyFitnessPal food diaries so you can see how I logged those meals. I hope this gives you some easy low carb food ideas to help mix things up. 🙂
Saturday’s Low Carb Meals
I ate very simple on Saturday. My low carb meals were: my usual “cereal” for breakfast, turkey almonds & string cheese for lunch, and cheesy scrambled eggs for dinner.
I also had a serving of Halo Top low carb ice cream (4 net carbs), and 6 mugs of coffee (1 carb each, using Coffee-Mate Sugar Free Hazelnut Powdered Creamer).
It came to 1651 calories, 22 net carbs, 39 total carbs, 83 grams of protein, 74% fat / 20% protein. You can view my MyFitnessPal food diary for Saturday here.
Sunday’s Low Carb Meals
I slept in and headed out early, so I just had coffee for breakfast – then grabbed a (very messy) burger from Hardee’s on the way out to my hike. It’s a low carb style Frisco Burger in a lettuce wrap. 🙂 #nobunintended 🙂
I didn’t expect I would be out long and had lunch on the way, so I didn’t pack snacks for the hike – except some string cheese. I did end up eating one of them, and otherwise just drank plenty of water.
I spent four full hours in the woods, which surprised me given how wimpy I’m feeling lately, but it felt SO great to be outdoors again!!
And I worked up a serious appetite, too. 🙂
I called in dinner on the way back, and picked up take-out from Gondola Pizza & Steak House. I got a big juicy 12 ounce Delmonico ribeye steak with roasted broccoli & cauliflower. 🙂 Delicious! I got a side salad too, and ate almost all of it. I have about 4 ounces of that ribeye leftover to enjoy with some eggs today though… yum!

I was short on my goal of 70% fat, but that’s rare for me so I didn’t sweat it.
On days like that I never force myself to “eat for the numbers.” I was too tired to care last night anyway lol, but otherwise I might have added some avocado slices to my dinner.
I’m SO proud of myself for getting out and getting some exercise in the sunshine yesterday. 🙂 I went with a friend because I wasn’t sure if my energy would tank (like it does most days lately), but I made it just fine! I’m lining up a hike with another friend for Wednesday so I can work on getting my strength back…
We’ve been talking about this Low Carb Bread a lot this week on Facebook. It’s only 1 carb per slice and the best low carb bread I’ve ever tasted. Most of them taste like dirt, lol. This is the ONLY low carb bread I’ll buy. I get the Everything Bread flavor.
Delicious – and it makes a GREAT low carb grilled cheese! 🙂
Note: I don’t pay extra for thermal packaging or expedited shipping. Just the low flat rate shipping. I’ve tried it all 3 ways and it comes just fine without spending more.
I’m weighing in at 143 pounds today. Still slightly up from my all time low of just under 135 last month, but working on that! In addition to my hikes, I’m going to start some basic strength training at home again. Things like modified chin-ups, and tricep dips, and something for my thighs – to work myself back up to the strength I had before being so sick and sedentary the last 7 weeks. 😛
I’ll upload some of the photos from my hike for you too. It was a GORGEOUS day, with three waterfalls and a beautiful rainbow, and an amazing hike!

No weigh in for me this week. I’m finally feeling better after being sick for two weeks but just want to sleep all of the time. The stress of my father-in-law’s funeral AND being sick has been tough. I’m ready to get this medicine out of my system and get back to normal!
I totally get that, Marti. I’m the same way. I’m sleeping SO much lately, but obviously my body needs it from the stress and meds and just recovering. I look forward to getting past this too. *hugs*
I’m not worried about the scales right now, but eating healthy to feel better and get well. I find the scales tend to “hold” when I’m stressed, sick, etc – which is fine. That’s totally normal.
Anyway, here’s to getting back to normal – or our version of it at least. π *cheers*
I told myself not to weigh myself today. I thought as I was going to sleep last night that I should put the scale away for awhile. But I hopped on it anyway this morning and started my Monday off quite depressed. 156.4 and I had been hanging around the 152.5/153 last week and was SO excited to finally see 151. I ate really well all weekend…or so I thought at least. We went out for pizza with friends on Saturday night. One of my friends said…”What’s your secret, you look amazing!” and before I could reply she answered herself….”Oh yeah, no crust for you!”. But then we had drinks and I came home and binged a bit since I only had the toppings for dinner. Fail…. I went out to eat 3 times this weekend. At the Mexican restaurant I only had the seafood fajitas insides with sour cream and guac and lettuce….My mom ate the chips, tortillas and a big margarita and I was proud of myself for being just fine w/ out it. She’s off and on Keto and is 115 lbs…obviously she doesn’t have to try as hard like me. Yesterday I went to a quaint cafe w/ a friend and got the Mediterranean salad…immediately took off the croutons and bread..Dinner last night was loaded (with LOTS of cheese, pepperoni, olives, lol) cauliflower and crab legs. It must be the alcohol ruining me like I always say. When will I ever just knock that off so I can succeed! Oh well…I can’t be so hard on myself. I’m trying everyday. Sorry for such a long rant I am just so frustrated when I feel like I’m so committed and doing everything right but the scale says….nope! Happy Monday….I think this week needs to be booze free…scale free…and sadness free.
That sounds like a great goal for the week, Amy. π It DOES sound like you ate great and made awesome choices! You did say you “came home and binged out” – was that off plan foods or on something low carb? If off plan, that’s where the weight came from (obviously) – and just means you need to get right back in ketosis.
If not off plan, then how are you tracking, and what are your usual macros? The alcohol is low carb / zero carb and tracked also, right?
Fortunately, every time I do that (I did it AGAIN last night after another beautiful dinner!!!!) it is all low carb food. Just way too much of it and I don’t get it tracked because I’m … out of it at that point. I hid my booze from myself again and will ask my boyfriend to rehide it. At least for the damn week, Amy. I know I know, AA should be in my life but I’m not ready for that. It’s binging….it’s like the food used to be for me before low carb but once I binge on alcohol I do it w/ food too. Agh….sickening. The alcohol I drink is low/zero carb yes. But I hate all the calories I consume in it. I believe in myself Lynn…that somehow I’m going to conquer this demon once and for all.
And my macros are usually on point unless these situations happen. 20 g net carbs, right around 70% fat and around 80-90 g protein.
I’ve battled some of those same demons Amy, as you know. It’s tough stuff. I think the guilt afterward, and beating yourself up, is worse than the actual issue – it’s all such a vicious cycle that’s hard to break… but SO worth it.
I have some BIG things I want to change in my life this year too. I find it helps to first address the WHY. Why do I do this – what triggers it – and work from the source…
I’m so glad to hear you are feeling better. I really appreciate your posting of your meals on Instagram. It gives me more ideas for my meals.

So happy to hear you are getting out there and doing what you love again, and also that you’re on the mend!! I’m recovering from mono myself, and yesterday I ventured out for an urban hike in NYC. I took it slow, but it was so nice to be out and about and in the glorious sunshine and mild weather. Take care Lynn, and keep up the great work! <3
Thank you so much, Jill. Mono sounds TERRIBLE, so I’m glad to hear you got out to enjoy some sunshine and scenery too! It did me a world of good – even though I was in bed by 7pm and felt like I slept 40 hours lol. At least it helped me rest well too. π
I’m going to venture out again on Wednesday with a girl friend. The weather is too beautiful here in Tennessee this week for February not to ENJOY it! *cheers*
Spent the weekend back walking 5K Saturday, 10K Sunday, 5K Monday…… I have been stalling out at 148 for weeks now, discouraging yes, but not giving up. Going to really try to get into writing down what I am eating. I am being so careful and eating very few carbs, eggs, bacon, spinach, meat and cheese have been my diet. Just really wanting to get another 10 pounds off. Pushing forward….

Tracking will make a BIG difference. If you use MyFitnessPal for a full week, you will also be able to see your fat/protein ratios – which is really important. I figured out that’s where I stalled out!

Kudos for your active lifestyle!! I do find exercise will cause my weight to “hold” on the scales too (for muscle recovery) so consider that as well. But it’s so worth it for the toning & body sculpting. π
Lynn, I appreciate and enjoy your site so much. I have been doing Keto for about 3 weeks and have lost 8.9 lbs. (out of thw 15 I need to loser)! I love everything and feel better but I am having MAJOR LEG CRAMPS.
I take extra chealted mag, potassian, and salt. Any suggestions?

Hi Shelia π The best thing to do is drink chicken broth, for the same reason our grandparents served it when we were sick. It replaces the sodium & electrolytes lost on the diuretic process of getting into ketosis. π
I like Campbell’s condensed chicken broth like you cook with, mixed with about 3/4 or 2/3 can of water instead of 1:1 – and you can add a pat of butter to make it even richer. It tastes great hot out of a mug!

Hi Lynn – just found this site – fantastic! Quick question – I hope you can help – – I work on the weekend – Saturdays – retail on my feet 9 hours, constantly walking, I lose weight. Then Sunday, same meals, on my feet 4 hours, still walking, but I wind up GAINING as much as 5 pounds back! Is there something I’m doing wrong?

My question would be: what time of day are you weighing yourself both days? I ask because the only TRUE weight is first thing in the morning right after you pee. Any other time, even an hour later, won’t be accurate. Your weight fluctuates naturally 5 pounds or more throughout a single day…

Hi Chantal π I only put my extra loaves in the freezer. Otherwise I keep it in the refrigerator during summer months, and just out on the counter in winter months. I like it both ways – toasted, grilled, or just room temperature. π
