I had a really nice weekend myself. I stayed in and had a quiet day yesterday, but on Saturday I had another fun adventurous hike. 🙂
I ate pretty simple yesterday too. You’ll see a photo tour of my meals plus my MyFitnessPal diary for yesterday below.
I uploaded all of the photos from my other two hikes last week for you. One was from Fall Creek Falls last Sunday, and then my hike that was NOT Verble Hollow Falls (lol) on Wednesday. We’re still not sure exactly where we were. 😛

I love hiking – and pretty much anything outdoors! – as a way of getting in shape. I never have been good about going to the gym, lol. But a chance to go outside and have some FUN… that makes me feel like a kid again. 🙂 Plus it uses such a wide range of muscles!
I started out slow last year with 1-2 mile walks in town. I worked up to fast-paced 3-4 mile walks, then easy hikes and ultimately more technical hikes. I did some strength training at home too, things like Tricep Dips and modified chin-ups to strengthen my upper body & core.
Anyway, here’s what I ate yesterday…
Sunday’s Low Carb Meals
For breakfast I had sausage & fried eggs. It’s Jimmy Dean pork sausage and three eggs fried in the sausage grease, so a simple one skillet meal.
I wasn’t as hungry as I thought, so I ate half of that at breakfast – then had the other half later for lunch.
My low carb dinner was salmon & broccoli. Don’t be fooled – I didn’t get all fancy and cook this myself, lol. It’s take-out from Logan’s Roadhouse. 🙂
I also had coffee with creamer, and then had Halo Top Creamery low carb ice cream after dinner last night…

From hiking boots to high heels.. 😉 I just got these 5″ Nine West stiletto heels, and they’re AMAZING! Super comfortable, classy, cushioned on the inside with a rubber “grippy” sole, and I love the striped heel & platform!

My weight is still up a bit, and fluctuating, but I’m finally off all the prescriptions where I was sick for two straight months, so I expect things will level out and get back to normal now. 🙂
My weight always fluctuates after strenuous workouts too, and I did three BIG hikes last week. I’m not sweating my weight. I’m just glad to finally be WELL!
It’s the end of February though, which means Spring is right around the corner… along with shorts, tank tops, bathing suits (eek!). Lots of motivation to really get in high gear with my goals!!

Ok, here goes…my weight is going north this week, up 2.4 lbs. I have had some changes in my life and recognize that I am eating emotionally. I have also not been tracking, and that makes a huge difference. I am back on track this morning and hopefully I can stay here this week. I hate when I gain weight but I know it’s by my own actions. Here’s to a better week. Glad you are finally feeling better Lynn.

Just put it behind you and start fresh this week! That’s always the best thing to do. Tracking REALLY helps me, with accountability and mindful eating as much as keeping my macros right. π Here’s to a better week! *cheers*
Glad to see we can subtract the alcohol sugars!
Most people subtract sugar alcohol on a low carb diet (Atkins even says to), but some people don’t. You want to test to see if sugar free products / sugar alcohols stall your weight loss or upset your stomach, of course.
Fortunately most don’t bother me at all. π The Halo Top low carb ice cream doesn’t give me stomach pains like some of the sugar free candy (like sugar free peppermint patties, for example – lol, those are scary!). And it’s delicious. π
