I’m over my weird 2-day irritable/tired phase, and down another pound.
Did I knock myself out of ketosis last week somehow?? That made me wonder… although I can’t think of anything I might have eaten that would have done that. Maybe it was just a fluke. Who knows.
Anyway, I’m a pound lighter today: 140.8 pounds. That always happens the day AFTER weigh-in day 🙂 lol.
That means I’m less than a pound away from the 130’s! I was going to freak out about that, but then I decided I should just go shopping instead. Because there’s a HUGE sale on summer clothes today!! 🙂 I’ll share the details with you below.
First, here’s what I ate yesterday – because it was all DELICIOUS…
Day 8: Tuesday’s Low Carb Meals
I started my day with the usual combo: coffee, water, and my “Low Carb Cereal” with pecans, strawberries, blueberries and Daisy brand cottage cheese.
For lunch I had the leftover BBQ chicken thighs and cucumber slices.
I used Guy’s Sugar Free BBQ Sauce on the baked chicken. The cucumber slices were leftover from our big Keto Party last week, so I wanted to finish those off.
I got the sugar free BBQ sauce in my July Keto Krate. I can’t wait to get the next box of low carb goodies! If you sign up now, you’ll get the same August box I get. 🙂
For dinner I had take-out from Applebee’s – yay! (lol)
I got the Caesar Salad, no croutons, with grilled salmon instead of chicken. There’s an upcharge for that, but it’s SO worth it!
I only ate half of that salmon and salad for dinner. It’s HUGE.
Late last night I had a delicious treat of fresh blackberries and cream cheese. I used an ounce of cream cheese and 1/2 a TBSP of salted butter, melted them together in the microwave and stirred in a teaspoon of Torani Sugar Free Vanilla Syrup, then stirred in the berries. It was HEAVEN. It tasted like fresh berry cheesecake. 🙂
To get an accurate carb count for the fresh blackberries, I looked them up here. The National Nutrient Database is my go-to resource for nutrition facts on any foods without labels, like fresh produce or berries you pick yourself. 🙂

It is possible that your experiments with your coffee threw you out of Ketosis. Maybe you confused your body and it was rebelling against you! congrats on the 140.8!

I wondered about that, Jackie. I know it wasn’t the BBQ Sauce because I’ve been eating that the last day or two (a big meal of it yesterday). It could have just been my hormone cycle even – it’s hard to say post hysterectomy, lol. I do still have ovaries & cycles though. Either way, I’m happy with the loss after weird fluctuations (and weird coffees! lol)…

Ooh, I love raspberries and cream cheese. π I was testing this “quickie” as part of a pie I want to put together with an almond meal crust. I think it’s going to be a winner!

I’m sitting here eating a plateful of eggs & sausage links, eggs cooked in the same pan as the sausages, in their fat. As I was cooking them, I had the thought that I had come “full circle”-I remember my Mom cooking eggs in sausage or bacon fat, flipping the fat up on the eggs to cook them, more than 50 years ago. After many, many years of low fat dieting (which only worked a short time!), I’m happy that I’ve found this woe that I can stick with! Thanks for all your encouraging posts!

lol Debbie, I’ve thought that same thing so many times, except it was my grandmothers kitchen. π Bacon drippings to season the green beans, eggs fried in sausage grease, lol – it IS funny!

My southern Grandma’s favorite was wilted lettuce, plenty of bacon along with the bacon grease, I can still taste it now!

I think getting into a smaller size tells a more accurate marker for our weight loss than the scales
i can now fit into size 12-14 pants. This may still sound big to most people but for me this is huge. I even put on a pair of medium denim capris and they fit. I was shocked. It also depends on the manufacturer. Some sizes run differently

I HOPE i could even get down to a 10. π

I was so stoked to get into a 10, then within a month of buying them (at full price) they were all too big. π I was excited to find the sale today! I have no idea if a size 8 will fit yet, I am guessing so in the one pair of shorts I wear a 10 in now, but I figured I’m still losing so it was a good size & deal. We’ll see when they get here!
I think a size 12 is a nice healthy size for a woman over 40. That’s what I’ve been wearing for awhile – or was. And I felt GOOD in that size! I read this morning that the ideal weight for my height (short, lol) is 125 pounds. That was shocking – and scary, lol.

LOL. I am WAY over 40……i am not in a firm size 12 yet. I am only in some size twelve but 14 in others. I would be happy if i could wear a 12 in everything
i need to lose another 20 lbs and mostly i need to firm up. I am not trying to get super skinny at my age. I want to be a healthy weight and size. My doctors scale weighed me a pound more today but i was fully dressed. π But he was very pleased about my weight loss.
My blood pressure was on the low side. I must be doing something right
i used to have high blood pressure before going low carb. π

That’s so awesome! The health factor is just as exciting as the weight loss to me. π I saw my doctor last week, and my blood pressure and all my stats were *perfect* which is such a cool thing!

Congratulations on your weight loss. I found a recipe over the weekend and it was great. I’m not sure on the exact measurements but…. You take sour cream, apple cider vinegar, sugar ( I used splenda) and dill weed if you like. Mix all of that up and then put sliced cucumbers in it and let it set for an hour or so in the refrigerator before serving. It was delicious. I’m not real fond of plain cucumbers but this was really good. Does it sound as though it would be kind of LC? It did to me so I made it but I could be totally wrong, something could be making it not LC that I’m not thinking about.

Yes, it sounds fabulous! I don’t think I would want the sweetener though… I often mix cucumber cubes with mayo & crumbled feta cheese and a dash of salt – sometimes with diced tomatoes. It’s a beautiful, refreshing side dish that everyone loves, even carb eaters!

Hi Lynn. I had bariatric surgery 3 yrs ago and have gained some lbs back. I would like to get rid ofthe weight I have regained plus more.
I was wondering if and how going high fat would affect me now since i need to eat high protein. I have been reading your blog as well as other info on high fat low carb diets and it sounds like eating this way is the way to go. Have also tried your breakfast cereal and it is very good.

We have A LOT of weight loss surgery members in our challenge group! They all eat LCHF (ketogenic) to lose extra weight and to keep it off.
On the “high protein” – you’ll notice I get more than the recommended amount of protein most days, and honestly… I don’t even try. It’s very easy to get the required number of grams and still eat high fat, which you’ll notice in my own food diaries I share here daily.
See: http://www.travelinglowcarb.com/7006/macronutrients/ for a simple explanation. Even though you only eat 20-25% of your calories in protein (even recommended on regular diets) and 70% or more in healthy fats… the grams work out, because some proteins are also fats. π

Congrats on the weight loss and new size clothes. I haven’t been a size 8 since I was 8 lol. Hopefully I can get close to that one day βΊ
My meals yesterday were:
B: bpc (yes I said I was switching to coffeemate instead but it actually had my stomach upset so I switched back…for now)
L: 2 fried eggs, steak and bacon topped with cheese
D: chicken breast topped with mozzarella (this is all I ate for dinner because this piece of chicken was Huge!!! It looked like a chicken breast on steroids lol. But very filling for sure.
My net carbs were 6!! I did drank about 80oz of water and got in some walking. βΊyay me!!

I wonder why the coffee-mate upset your stomach. It may be the artificial sweetener they use in it…
I’m still considering coffee solutions. I was at the store today and looked at some flavored teas and coffees. π

Thanks Lynn! I think it is the sweetner they use because when I first started using splenda it would do the same. I’m also going back and forth about coffee solutions lol. Oh the options give me a headache.

LOL, yes – there are tons of options! I’m totally hooked on the Coffee-Mate sugar free hazelnut. I think I’m just going to cut down on coffee (which will cut down on that) given that seems to be the REAL problem. π

Question, you had mentioned that you were drinking your coffee with butter. Are you not doing that anymore? I just began 2 days ago putting butter in my coffee to help increase my fat intake. Is this a good idea?

Hi Becky! I think it’s a great idea, and it tastes rich and delicious. π As you can see from my food diaries here, I get 70-80% fat easily – even without butter in my coffee. My problem was that I drink TOO MUCH coffee, and that much butter had me feeling woozy by lunchtime. π
Other good sources of healthy fats (that actually have nutritional value TOO) include: pecans, walnuts, avocado, salmon, tuna salad, eggs & sausage, egg salad, deviled eggs, chicken thighs instead of breasts, etc.
