My Low Carb Diary for Day 9 of the Summer Low Carb Mini-Challenge. Join in anytime! I’ll share my meals here every day to give you easy low carb food ideas.
My meals yesterday were boring.
Not to me because I really don’t mind just eating my favorite low carb foods, but I imagine you get tired of seeing the same things over and over! 😛
I had a great day though…
I kept my carb count lower (15 net carbs), did some shopping for smaller clothes 🙂 and I found some NEW low carb ice creams & flavors to test out!
Stay tuned for that, I’ll be sure to do the taste test on video – like I did with the Quest Protein Chips video. (Even my great dane was skeptical of those! lol…)
Day 9: Wednesday’s Low Carb Meals
I made sausage & fried eggs for breakfast. It’s Tennessee Pride sausage, but sometimes I get Jimmy Dean – both are brands I really like – plus 3 fried eggs. Eggs are .4 carbs each so I count this meal as 1.2 carbs.
For lunch I had my favorite “Low Carb Cereal” – because it’s easy 🙂 and because it’s such a healthy combo of delicious foods!
I had leftover sausage from breakfast, so I made three more eggs and just ate the same thing again for dinner.
That made for a very easy day of low carb meals. 🙂
Here’s My MyFitnessPal Diary for Wednesday:
How To Get A Net Carbs Column in MyFitnessPal
Calories: 1805
Net Carbs: 15
Total Carbs: 23
Protein: 101 Grams
81% Fat, 17% Protein
Exercise: Ab Carver Pro (100 Reps)
PLUS: 20 Tricep Dips
FitBit Steps: 790
Water: 56 ounces
You’ll notice in my MyFitnessPal Food Diary above that even though I eat LCHF (Low Carb High Fat), I still get more than enough protein. I had just over 100 grams of protein, but 81% fat / 17% protein.
That’s the reason you can’t go by grams and have to go by ratios instead – because some proteins are also fats. See: Macronutrients Explained.
I got in a nice “abs & arms” workout too. 🙂
I mentioned yesterday that I was shopping online for shorts that actually FIT since I’ve lost so much weight in the last few months. American Eagle is having a “Buy One Get One 50% Off” sale plus their Summer Clearance deals. You can see what I got below.
I bought a couple more pair of shorts too. And a summer romper, which is a BIG deal given I’m short-waisted, lol. It feels so good to HAVE a waist again!!
I’m headed back to Lost Creek today, which will be my 4th trip there! This time to explore the big Lost Creek Cave, which reportedly has a waterfall deep in the dark depths of the cave! It should be a GREAT workout and a FUN adventure. 🙂
That will be nice. I feel like I get a MUCH better workout when I’m out having fun than I do at home. Still, home workouts are great in between outdoor adventures, because I am on a SERIOUS mission to get in amazing shape this year!
How are things going for you?
It’s day 10 today – did you exercise this week? What kind of low carb meals are YOU eating? Are you experiencing any challenges or struggles with your goals?
I always look forward to hearing from you! 🙂
Best,
Lynn Terry,

Hi Lynn, is heavy whipping cream bad to use for iced coffee? Thanks in advanced!
No, it’s great actually. π You count it as 1 carb for 2 TBSP, or 7 carbs per cup. Every label says “zero carbs” but that’s only because it’s less than 1 carb “per serving” so just make sure you count it and you’re good to go!
sighhhhhh I’m disappointed and discouraged :(. I was down 6 lbs on Tues, I gained a lb on Wed and gained another lb this morning. I don’t get it, I’m being really good with eating lchf or I thought I was (shrug). And I’ve been walking 30 mins at lunch time in 90 degree temps!
Yesterday I had our “cereal” for breakfast, a caprese salad for lunch, (3 slices of mozzarella, 3 slices of tomato, handful of basil, olive oil & vinegar), and for supper I had two hot dogs (stuffed w/cheese and wrapped in bacon) and 1/2 cup sauerkraut. I had a couple of snacks of a fat bomb and half of a peanut butter bar. A diet coke for supper and water all the rest of the day & night.
Tennessee Pride is my all time favorite too Lynn and congrats on the new clothes and new size! Awesome!
My weight fluctuates a lot too, Roye. Try just weighing yourself once a week. It may have been a combination of things like the hot dogs, kraut and diet coke. I’d guess it’s just water retention.
During the last challenge when my weight would hold for two weeks straight, or go up a pound or two for awhile, I just stayed consistent. That’s how I saw such great results! It was the “long game” – because ultimately I lost weight. It just isn’t as consistent as we would all like. π
Thanks Lynn, I love weighing every morning, it gives me something to look forward to LOL! Yep that’s right, I have no life! You’re probably right, water retention, those hot dogs were salty and so is sauerkraut, I didn’t think about that because I’m a salt-a-holic and salt everything.
I’m not giving up, I’m staying with it!
Thank you for your good thoughts and advice.
Whenever i eat hot dogs or smoked sausages or anythin g salty the scale show a gain. I am so sensitive to salt-sodium. I retain fluids when my diet is high in sodium. Any diet sodas bloat me as well…..:(

Hi Lynn, for some reason I dont have access to the facebook 90 day challenge any longer. I know I went in to edit my account as I was receiving duplicate emails, but I love the facebook page and would like to remain a member. Can you update my account?
Hi Lonnie! It may be because you posted a link in the group, or perhaps your account was hacked and posted something without you knowing it. That happens. Message me through my Facebook Page at http://www.facebook.com/lowcarbtraveler so I have your profile/username and I can look into it from there. π
I’m back to my Zumba, albeit Zumba Gold until the pain passes. Then I will hit the real thing again. I noticed one basic great bene of regular exercise other than getting in better shape. I don’t fall asleep in the afternoons when I exercise. I stopped for almost two weeks due to the fall and I was snoring on my keyboard in the afternoons!
You are braver than I, Lynn. I can’t/won’t hike and get me in a cave? HAH! You better have a block and tackle with you. I am the world’s most claustrophobic person. Just not gonna happen. But I applaud you for bravery and perseverance, not to mention size 8 shorts!!!
haha I totally agree Carla, no way, no how would I ever even think about exploring a cave?! I’m a scaredy cat LOL.
Question, do you go to Zumba classes or is it a video class? I wouldn’t mind doing this at home but no classes are around where I live.
Thanks!
Roye: I do Zumba at home. Before my health went way downhill, I used to do it in a gym and am working my way back to taking maybe one class a week in public. I have both sets of Zumba discs, the industrial-strength and Zumba Gold, which I lovingly call Old Lady Zumba. Right now, I’m doing the 45-minute gold routine. I can do 20 minutes of regular, sometimes more, but I fell a few weeks ago and the pain is still taking over. My basset hounds watch me and look at me like, “Mom’s nuts!” π
Thanks Carla, I’m an Old Lady π so the Gold might be better for me? I’ll try it out.
It’s the same moves, Roye, but the pace is not as frantic and they concentrate on some other things like balance and stability. When I’m in decent shape, I think it’s kind of slow. Right now, I’m doing okay with it. If you’re not used to regular, fast-paced exercise, I would try the Zumba Gold. There are classes all over the country. Just make sure it says GOLD or you’ll be killing yourself. LOL (Ask me how I know. . . . ) Seriously, I want to do the full-strength again very soon, but I have to work up to it again.
It’s the same moves, Roye, but the pace is not as frantic and they concentrate on some other things like balance and stability. When I’m in decent shape, I think it’s kind of slow. It’s just fine, though, for right now.
LOL I’ve always been conservative, “safe” and claustrophobic too! Until lately, that is. π And I sometimes still freeze up in really crazy situations, haha. It’s FUN though! I’m loving the whole “facing my fears” and this more adventurous side of myself… as part of my whole life changing. π
This is the Zumba set I have at home: http://amzn.to/2a34IK8 I really enjoy it. For a home workout it’s actually FUN to do.
I have that one, too, Lynn, as well as the Old Lady Zumba set (Zumba Gold). On days when I feel extra sassy, I go with the regular for as long as I can. If I wake up feeling down, tired or weaker, I do the Gold. I make myself do SOMETHING by holding my breakfast hostage until after I exercise. π
Thanks so much Lynn, I appreciate the link. As I mentioned to Carla, I’m an Old Lady π so the Gold may be good, I’ll look into both.
I had a sucky day yesterday….I did horrible! I did get my walking in and I did drink a lot of water, but overall my mood sucked! I’m not in a much better mood today….but I started strong this morning with the BPC (still trying to love it) and a piece of string cheese….I’ve got to meal prep this weekend….breakfast is so hard for me in the rush to get to work! but lunch is normally leftovers and dinners have been easy…grilling most nights with veggies! my weight has stayed to stay since Tuesday…but I’m trying….
I can’t get the net carbs in my fitness pal….is that not included in the “free” version?
I’d love the go cave exploring but we don’t have those in my part of Texas! there are some down south but none up here with me. Have a great fun time!! can’t wait to see picture on IG and hear all about it tomorrow! thanks for helping me stay motivated Lynn!!
My mood hasn’t been that great this week either. π π lol…
I use the free version of MyFitnessPal with this free hack: http://www.travelinglowcarb.com/4448/myfitnesspal-hack/ It’s easy to set up. But it only works online – not on the mobile app. I still use the app to put in foods on the go though!
For a fast breakfast, when I’m in a rush I grab half a cup of pecan halves and an ounce of colby jack cheese off the block. Easy to eat anywhere, even while driving, and very high fat – so it’s filling. π
I was so excited to get my order from Netrition today. I opted for regular delivery but got it Super fast. I ordered it Monday and got it Thursday morning
i can’t wait to try everything. I got my wonderful Irish cream SF syrup. I gm Carb per 2 T.
So i tried another coffee experiment
i used 2T of Irish Cream syrup to 16 oz coffee with 1/4 c Almond -coconut milk (unsweetened) at only 1gm Carbs per 8 oz.
it was good but not creamy enough . The almond coconut milk is too watery to make my coffee creamy like i like it
so i tried again with 1T of sf Irish cream syrup at 1/2 carb with my hazelnut creamer at 1 carb then a splash of the almond milk combo…..perfect. i only added the almond milk for its nutrient value as it has very minute carbs per spash….lol. 8 oz is only 1 carb
so i decided to use my almond milk combo for cooking mostly or add a splash to my coffee
i might try the coconut cream along with my SF syrup nex . I have to find it first
otherwise i see no other solution to the coffee creamer delimma for us that love creamy sf coffee without using hwc which curdles in our coffee sometimes
i figured out that the sf powdered creamer not only makes the coffee creamy but takes the bitteress from the coffee so we can enjoy a smooth creamy cup of coffee
Am i obsessed with coffee……maybe. lo . π
Besides this i got
1 pck moon cheese snacks……yummy
Lily’s dark chocolate premium baking chips
sweetened with stevia. (2gm carbs per60 chips) (14gms)
There is a great low carb recipe on the back of the package that i want to try
Lily’s delicious peanut butter cups
i bet Lyn….you might like this
i got the mountain berry sf jam
great low carb co. Cinnamon bread (1gm carbs per slice)
2 bottles of Guys SF BbQ sauce
(I plan on using this a lot) π
I am thawing out my skinless chicken thighs to throw on the barbi later using guys sf BBQ sauce. There is a gas grill in the hotel patio for anybody to use. π
oh how i have missed my BBQ. π
I cant wait to try a slice of low carb bread with cream cheese and mountain berry jam.
i feel like it’s my birthday today haha
i decided to add some variety to my low carb eating
i plan on buying more stuff from netrition later. They have great service
i was a little dissapointed with the moon cheese snacks. The bag was rather small for the price but it was my fault for not checking the weight of the package before buying it and also i was looking for more of a flat cheese snack like a round tortilla chips
these chips are small, round and too crunchy….hard to bite into. I have teeth issues i guess.
otherwise everything was great
THANKS to Lyn for the referral to Netrition
i told my friend at the health food store about the BBQ sauce……he does low carb too. In fact he was the one who gave me the link to Lyn’s fb 90 day carb challenge (bless him)
He was so happy about it, he hurried and wrote down the name of the BBQ sauce
i told him to buy it at Netrition. I also told him that you ..Lyn said Thank You for referring me…..he just smiled. π
I got my coconut flour
Kerrigold irish butter
sf coconut flakes. ( you cannot ever find sf coconut flakes in the grocery stores)
I got natural baking soda and baking powder
natural vanilla extract
i bought this from the health food store
i am ready to bake something soon
this will be a first in a long long time
wish me luck. Haha
i am so lazy about cooking
we will see.
is it a gemini thing. Hehe……
i did sooooooo much cooking for years so now that my kids are all grown and gone i dont feel like i have to cook anymore
but i get jealous of all the yummy things the low carbers make so that is the only way
i have to go in that big hot room (private joke me and my friend call it that) we laugh.
Ok sorry for being so chatty
me thinks i had too much coffee. Haha
I love your updates! π I’m headed off to go hike that cave so I’ll reply more later, but here’s a list of popular products people here love from Netrition: http://www.travelinglowcarb.com/5620/low-carb-foods-at-netrition/ in case anyone else would like to explore. π Be back soon – assuming all goes well with the caving, haha. *cheers*
Thanks for the reccomendations. I am definitely ordering more products from them. π
Looks like you had a day like me….all day breakfast lol. I love it.
My day was good yesterday. I didn’t get any exercise but I did eat pretty well.
B: bpc, 2 fried eggs, bacon
L: cesar salad w cucumber
D: grilled chicken breast w/great beans
My net carbs were 9. Fat was 81%, protein 15%, carbs 4%
Awesome, Justine! π I just realized it’s Friday, so I’m going to wish you a STRONG weekend with tons of resolve and lots of great family exercise. π π *cheers*
Lol oh yes. The dreaded weekend oopsies. Lol. I did great today and plan to continue to do great because in reality the little “cheats” on the weekend just aren’t satisfying enough to put me back at square one. To be honest I’m really kinda over cheating.
Me too. It seems the less frequently I eat off plan, the less appealing it gets. I used to enjoy my “cheats” A LOT. Now it’s usually a big fat disappointment – and the uphill work of undoing the damage. π
I also made some LC bread per your recipe and took a bite of one (I couldn’t help myself). They were delicious!!!!
Oh – yum! I may make some up this weekend. I patty them out and store them in parchment paper layers in the fridge, then cook them as I want them – because they are definitely best fresh. π
I probably should’ve done that with them because of course it’s only me eating them. But, they’re really just as tasty heated in the microwave for a few seconds. I’ll definitely do that next time though.
I’m losing pretty good — 27 pounds since March. Right now it’s averaging about a pound a week but since I’m getting closer to my goal (now about 11 lbs.) I expect it to be slowing down even more. But I’m satisfied with it. I’ve gone down 2 clothing sizes which is always a bonus. I want to lose 2 more pounds before August 3rd when the vegan step-daughter arrives, but I think that’s totally doable.
I think so too, Betsy! π You ARE losing great. Wow!! I’m also averaging a pound a week, which obviously means not *every* week, just that it averages out that way. I’m happy with that as well, and with the obvious differences in my body and in my life! π
So i decided to grill the chicken thighs and turkey sausage yesterday since i got the guys SF BBQ sauce using the hotel’s gas grill. IT was the hottest day of summer yet. It was 97 and heat index of over 100. OMG. What was i thinking!!!
I thought I can do this. It won’t take long to grill four chicken thighs and turkey sausage.
Well of course i could not get the gas grill to ignite so i had to elicit help from the staff. None of them knew anything about the gas grill. So finally the manager cane out and found out the tank was turned off
i was already dying from the heat outside
then halfway through cooking it stopped again. The other guy sharing the grill with me( he only had a couple brats on the grill)
Discivered that the tank was now empty…..another delay
finally i got my food grilled but i was dying from the heat.
I did enjoy my chicken after a cold shower
imy clothes were soaked in sweat. Ugh. It was like i sauna outside
Was rhe BBQ worth it all…..Yes only because i have lots of leftovers to enjoy for a few days. I wont be doing this agaun soon at least not in the heat
Guys Bbq sauce is really good for SF sayce
i was in BBQ heaven.
I tried the Great low carb bread co. Bread toasted this morning with cream cheese and mountain berry jam…….yum
somehow i feel like i am cheating but i am not. Lol
we shall see what the scales say next week. π
Good luck everyone.
What a crazy experience, Gina! No fun. π It was the hottest day of the year so far here too – totally miserable and humid too. That’s why we went caving. It’s freezing in there, lol.
Glad you at least got your BBQ made! I feel the same way. I’ve really MISSED barbecue!
