Here’s my Low Carb Diary for Day 7 of the Summer Low Carb Mini-Challenge. Join in anytime! I’ll share my meals here every day to give you easy low carb food ideas.
It’s time to weigh-in! If you’re participating in our Challenge Facebook Group, here’s the group weigh-in thread. 🙂 Otherwise feel free to comment here on this post, on instagram, or just update your weight in MyFitnessPal if you prefer to keep it private.
I was in a crap mood ALL day yesterday. I guess you could tell that from my last post. 🙄 lol…
I did get my workout in though, not because I wanted to but because I forced myself to get up and do it.
Blah 😛
I’m glad I did, though. I’m loving the results of all the exercise I’ve been doing the last few months! 🙂
It was just one of those days where I wanted to crawl in bed and pull the covers over my head. So I did, lol. Then I ended up sleeping most of the afternoon, and sleeping good last night too. I must have really needed it!
My own weigh-in is nothing exciting. I’m back to my starting weight from a week ago and holding there for the last three days. 🙂 I’m happy with that though. I’m 141.8 pounds – and almost nervous about dipping into the 130’s!
Day 7: Monday’s Low Carb Meals
I had a healthy low carb breakfast – my favorite “Low Carb Cereal” with 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 1/8 cup (17.5 grams) of blueberries. It’s 6 net carbs and 85% healthy fats.
For lunch I made sausage & fried eggs, using two pieces of sausage I had leftover from the other day. I just threw them in the skillet while I fried the eggs. 🙂
I love sausage and eggs… so simple, and so easy!
After that meal is when I went back to bed and slept most of the afternoon. 😛
I had a consulting session to do for an hour, so I finally got up and grabbed a quick snack of pecans and mozzarella sticks.
I kept meaning to make some kind of “healthy dinner” (you know, with something green on my plate) but I just could not be bothered with cooking – or food even, really. I was hungry, just not in the mood.
I ended up eating 3 of my cookies which I heated up and ate hot out of the oven 🙂 YUM! That plus 24 more ounces of water, and I was plenty satisfied.
It was late when I finally did my workout (after 11pm!). My legs were aching so instead of the Focus T25 workout I wanted to do yesterday, I just did tricep dips & my ab carver. That felt GOOD though. 🙂
Here’s My MyFitnessPal Diary for Monday:
Tracking Macronutrients (Simple Explanation of Macros)
How To Get Net Carbs in MyFitnessPal
Calories: 1838
Net Carbs: 22
Total Carbs: 36

81% Fat, 15% Protein
Exercise: Ab Carver Pro (70 Reps)
PLUS: 15 Tricep Dips
FitBit Steps: 790
Water: 72 ounces
My Fitbit Steps above, 790 haha. My Fitbit was on charge most of the day. 🙂 I totally forgot about it. Oops! There’s no telling how many steps I really got. I doubt it was that many though, lol.
How about you – Did you weigh in today?
I would love to hear how the challenge is going for you, what workouts you’re doing and what you’re eating – and anything you’re struggling with.
I’ll tell you what I’m struggling with… boredom! And annoyance with the kitchen in general, lol. I’m thinking some good low carb take-out will be on my menu this week!
That reminds me, Applebee’s has some new “Wood Fire Grill Salads” I want to try. You can order online now too, and pick it up at Carside-To-Go. And I just noticed they have a $5 off coupon code for your first online order. Bingo! 🙂

I love how “Real” you are Lynn and thank you! I had a crappy day at work yesterday and by the time I got home I wasn’t in the mood to do anything….but I made myself get up off the couch about 8 and the whole family went to the track and walked!! it only helped my mood a little tho……….but I got 1 1/2 miles in.
I’m down 4 pounds, it came off slow last week….I didn’t start loosing till Friday….but I’m happy with it, just wish it was faster…..
and I’ happy to say I haven’t had a Dr Pepper since last Monday!! water only besides my morning cup off BPC I’m still getting used too!!
start weight was 270 and I’m now at 266
Lynn Terry says
Thank you Susan 🙂 My workout didn’t improve my mood either lol, but at least it was one less thing to feel annoyed about! 🙂 Glad to hear you got a nice walk in too!
4 pounds in one week is actually GREAT. I lose maybe a pound a week on average, and that’s not every week – just how it averages out. It sounds like you spent the first few days getting into ketosis. After that is when the weight loss begins.
Kudos on ditching the diet soda too! That’s a tough one. Way to go. 🙂
Gina says
I only lost 1/2 lb. I have not had a good nights sleep for days now so that may be one reason for small weight loss. I am still happy because i lost 4.5 lbs since the end of June. Now it is 5 lbs. I cannot complain. 🙂
Lynn Terry says
That’s great, Gina! 5 pounds is a lot in 3 weeks – or it is for me. And yes, lack of sleep or even sleep quality always affects my weight loss like we talked about in the other post… but you’re doing great and seeing great results!!
Mae Willoughby says
I lost 3 pounds. I am happy with that.
Lynn Terry says
Awesome, Mae – those are great results for a single week! I have a feeling I would have seen a loss as well if I hadn’t been experimenting with coffee creamers, lol. Keep up whatever you’re doing that’s working so well! 🙂
Justine says
I definitely have days like that for sure. Today seems like one of those days here. It’s warmer than hell and overcast outside but super cold and dark inside. Ahhhh sleep! That’s definitely not happening for me though lol. My kids would destroy everything I own…and everything I don’t own. Lol.
Anyways, I did not get any exercise in yesterday even though I spent alot of my day outside. I would like to get some sort of workout in today so I think I’m going to go with your suggestion and work out at night when I would usually want to snack. That would be perfect time to get some strength training in.
My meals yesterday were pretty simple:
B: coffee
L: ham and cheese rollups
S: pecan halves, 2 mozzarella string cheese
D: grilled chicken w/ green beans
S: coffee
Net carbs were 10, drank 60oz water.
Lynn Terry says
Oh no, lol – I hope your day smooths out and turns GREAT, Justine. 🙂 Crap days are no fun at all. 😛 I’m extremely irritable the last couple of days myself. And hoping it passes – I have entirely too much to do to be crabby, lol.
What kind of strength training are you going to do? I want to do light weights with my arms, and something to target inner thighs this week…
Justine says
Lol crap days can be great if you don’t have anything to do. Lol I have a few at home strength training dvds I’d like to do. Actually I have a “fitness routine” in my mind that I know would be perfect for me because I’ve don’t it before. But I’ve had zero motivation to do so. It would be walking 4 miles 3 days a week (at home with an awesome but cheesy video) and would do the strength training 2 days a week (at home with a not so cheesy but super intense dvd) lol. And of course I’d leave the weekends free because we’re always doing something physical on the weekends.
Lynn Terry says
That sounds ideal! I miss getting out and walking 2-4 miles with my great dane, but it’s entirely too hot (for him especially, but for me to!) for that… I look forward to cooler weather so we can get back to our fun walks. 🙂
I have T25 and Zumba DVD’s, so I need to set those up and work through those. They are both SO fun!!
Diana says
I love reading your posts. They give me inspiration to keep trying. I’ve been doing low carb off and on for many years, but I always ended up sabotaging myself. My highest a few years ago was 213#. I was losing very slowly, until last year. My husband was very sick for a few years and in late 2012 started needing 24/7 care. In February 2015 he went from the hospital to an LTAC (long term acute care) hospital to a nursing home. He passed away in November. My days and nights were filled with taking care of him and our special needs son, and my weight went down to 161#. I was happy about that but it wasn’t a healthy weight loss. After everything settled and my new real life w/o my husband of 30 years started, I immediately started to put some weight back on. Then I found your website. It’s nice to know that I’m not the only one going through ups and downs. I am an emotional eater, too. You are helping me more than you know. I started this challenge at 176# and today I am 177#. Not great but I’m not giving up. Thank you!
Lynn Terry says
I went through a long cycle of self sabotage too, Diana. It’s hard stuff. I am so sorry you’ve had such a tough few years. My heart goes out to you. I can only imagine what all you have been through – physically and emotionally.
I’m not sure if you saw this: http://www.travelinglowcarb.com/10307/stress-depression-dieting/ but I find that it helps to have ONE thing I CAN control in my life, when everything else just seems haywire.
I’m glad you joined us here. 🙂
Carla Ives says
First weigh-in on this mini-challenge saw a loss of 3.2 pounds. Sometimes it takes me two months to lose that much! I took your advice and did My Fitness Pal with your net carbs hack. I was NOT getting enough healthy fat. Now I am. Even if I could lose one pound a week consistently, I would be a happy old bat. 😉 Workouts? Not much, sadly, as I had a bad fall on July 4th which I’m still paying for. I do gentle Zumba dances and some walking right now. As soon as I’m back to “me,” I will be attacking Zumba again. And, Lynn, crap mood or not, you look MARVELOUS!!!
Lynn Terry says
Thank you, Carla!! 🙂 🙂 I hate to hear you took a fall a couple weeks ago. Ouch! I know at my age now those falls hurt more (and longer, lol) than they used to. 😛
The tracking and 70% fat minimum made ALL the difference for me, so I’m glad to hear it’s working for you too! 3+ pounds in one week is GREAT! I lose really slow too, but that’s because I’m so close to my goal weight now. I’m VERY happy with an average of a pound a week. 🙂
Gina says
I took a long nap. No breakfasr because i was not hungry i had not slept last night so now when i woke up the scales moved. It is weird how the scale changes in a day. This is like my first morning wake up weight. I lost 2lbs not 1/2 lb. That was a surprize. I hope thaweight stays. 🙂
Lynn Terry says
That often happens to me if I don’t sleep enough too, Gina – I’ll sleep more and THEN see the scales move. 🙂 Good to hear!! That makes July a VERY successful month for you! 🙂
Gina says
Thanks Lyn. I have been moving more lately. I am doing a lot of fast paced walking and just moving my body any chance i get. I even dance while driving. I think this has made a lot of difference. I se to be doing better now than the 90 day challenge. My Dr. Will be very happy to see my big weight loss tomorrow. 🙂
Ps. You see it is not the SF creamer…..i drink it everyday too. 🙂 🙂
Lynn Terry says
LOL so true! And I do (obviously) LOVE my creamy delicious hazelnut creamer. 🙂 I’m down another pound this morning myself… so I’m just going to keep doing what’s working!
Gina says
I have been pondering over this for some time now; I asked myself what will you do when you finally reach your goal weight ( like you,Lyn i do not know what that number is yet) My answer to this question is obvious. I will stay on this woe the rest of my life because if i go back to eating carbs i will slowly re gain some of my weight back. I know that i am carb sensitive. And the great thing is that i love this woe. The only difference will be that i will not continue the keto diet. (20 net carbs a day) but will stay on a low carb diet that does not include sugar or grains and flour or starch products
I will increase my carbs for weight maintenence but eat healthy carbs and low glycemic foods as i do now
there are so many low carb foods available for us now so it makes it so much easier and so we do not feel deprived….yes we can have low carb deserts and candy breads etc…..so i definitely can do this long term. I have been doing low carb already for 21/2 years so for me it is already a way of life.
and it works for me
i know it is too soo. For me to be thinking about weight maintenence for still want to lose at least another 20 lbs. But this is my epiphany……this has to be a life time way of eating for me. It is not a diet and i live eating this way. If i ever have an off meal, i get right back on track immediately.
I just wanted to share my thoughts with all
i have to also make a lifetime commitment to excercise. I like fun excercise i need to do it on a regular basis to tone up..
The 90 day weight loss challenge really helped me get motivated again
Thank You. LYN. 🙂
Lynn Terry says
I agree, Gina – it really helped me get super motivated too! And like you, I’m low carb for life. Not just for maintaining my weight loss, but also because I feel SO much better and I’m eating healthier than I ever have in my life! 🙂
I love that I have a much more active lifestyle now too, and I intend to continue that as well. I imagine I’ll only push myself harder, find new and even more fun ways to stay in shape. I’m loving the hiking, rock climbing, caving, etc for that!
Marti says
Down 2lbs from last week which is huge for me! I’ve really been faithful to keep up with carbs not just take a good guess like sometimes and it has paid off. I’m also continuing to work out and am anxious to see some of this flab firm up! Today was a day of shopping for vacation coming up this weekend. I picked up lots of LC snacks to pack in the cooler. This will be my lifesaver as my husband’s family are HUGE junk food junkies ALL the time but I’m gonna be prepared with my own little cooler of goodies. Have a good day everyone!
Lynn Terry says
That’s so smart, Marti. 🙂 And yes, tracking REALLY helps. Not only for staying within macros that help you lose weight (and faster) but also for accountability. I find it really helps me do more mindful eating – vs mindless eating – when I’m tracking every single bite. 🙂
Enjoy your vacation!!
Lidjea says
I joined the 90 day challenge late, but ended up losing 8 pounds. Then I put 4 pounds back on and my weight wouldnt budge. I couldn’t figure out what was wrong. After studying about KETO and following your Instagram and blog I realized that I was focusing too much on protein and not on fat. That has made all the difference. So I was so excited when you decided to do this 20 day challenge. I decided to give it (KETO) another try. I’m down 4 lbs this first week and I’m really enjoying this way of eating. It’s really not a struggle for me and I stay satisfied!!!! …. So far!
Lynn Terry says
That’s awesome, Lidjea!! A lot of people don’t realize how important the 70% fat minimum part is to the weight loss – or to the low carb diet in general.
Even if you don’t eat low carb, you’re only supposed to have 20-25% of your daily calories in protein. But eating too lean / high protein can have some serious health drawbacks (gout, kidney problems, etc).
Plus when you limit your carbs so dramatically, your body uses the healthy fats for fuel/energy – instead of carbs/sugar. So if you don’t get enough healthy fats… you have no energy and feel lethargic.
Here’s an easy explanation on that: http://www.travelinglowcarb.com/4606/lchf-diet-explained/
Kudos for joining in, and congrats on your FAST results!! 🙂
