It’s Day 65 of the Spring Low Carb Challenge, and we weigh in every week on Monday mornings. If you’re participating in the low carb challenge Facebook group, you’ll find the Week 9 Weigh-In thread here.
My current weight is 146.8 for a total of 7.8 pounds lost in the last 8 weeks.
That may not sound like much, but around a pound a week is GREAT at my weight. Plus my body has changed SO much in eight short weeks!!
I’m surprised I didn’t come home a bit heavier from my low carb beach trip, given I ate so much from the “list of foods that typically stall your weight loss” lol. I did have lots of cheese, nuts & cream cheese and even 3 Atkins bars.
Here’s the kinds of low carb foods I ate through most of the trip:
I’m still super proud of myself for sticking to healthy low carb foods through the ENTIRE trip! 🙂 Today is my birthday too (I’m 43 years old) and I have absolutely no desire to “treat myself” – other than treating myself to a good walk this morning, and maybe a big fat Delmonico ribeye steak tonight. haha…
I ate super simple yesterday after returning from such a BIG trip…
Here is my Low Carb Food Diary for Day 64 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s NEVER too late to join if you haven’t already!
Day 64: Monday’s Low Carb Meals
For breakfast I had 3 eggs scrambled with colby jack cheese. Super easy and very low carb. Eggs are .4 carbs each so this meal was only 1.2 carbs.
I took a ridiculously long (3 hour) nap all afternoon 🙂 and decided to have my favorite “low carb cereal” when I woke up.
It’s 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries for a total of 5 net carbs and 85% healthy fats.
Later that night I grabbed one of these Oscar Mayer P3 Protein Pack snacks that I had leftover from my road trip. They’re good. This was was 4 total carbs, 3 net carbs. Great for a quick (healthy) low carb snack to grab!
I snacked later in the evening too – just some pecans and peanut butter because I got a little hungry, and I don’t have much left in the house lol.
Here’s My MyFitnessPal Diary for Monday:
Net Carbs: 19
Total Carbs: 31
Protein: 56 Grams
79% Fat, 16% Protein
Exercise: None (resting after my trip)
FitBit Steps: 3,897
Water: 40 ounces
I have some new health goals I’m working on – or about to work on. I can’t wait to share those with you. 🙂 Obviously I’ll continue eating low carb and super healthy. I still have some body fat to lose and definitely want to maintain the weight I’ve already lost. But the big question is: What’s Next?! There’s more to life (or MY life at least) than just “maintenance mode”. 😉 This next leg of the journey should be a lot of FUN!
Oh – and remember me telling you about my “CARdio”??
I break a SWEAT and get a seriously good core workout on my drives – lol. Here’s a video to show you what I mean, appropriately to “Sit Still” by Group Love from the Never Trust A Happy Song album (ha!):
Obviously I can’t dance AND have no shame – haha. But I love to make good use of the miles & time on my road trips. 🙂 I *really* get into it when there’s nobody else in the car! My motto lately: just keep moving.
How are things going on your end?
Did you weigh-in today?
I look forward to hearing from you…
