Itโs Day 65 of the Spring Low Carb Challenge, and we weigh in every week on Monday mornings. If youโre participating in the low carb challenge Facebook group, youโll find the Week 9 Weigh-In thread here.
My current weight is 146.8 for a total of 7.8 pounds lost in the last 8 weeks.
That may not sound like much, but around a pound a week is GREAT at my weight. Plus my body has changed SO much in eight short weeks!!
Iโm surprised I didnโt come home a bit heavier from my low carb beach trip, given I ate so much from the โlist of foods that typically stall your weight lossโ lol. I did have lots of cheese, nuts & cream cheese and even 3 Atkins bars.
Hereโs the kinds of low carb foods I ate through most of the trip:
Iโm still super proud of myself for sticking to healthy low carb foods through the ENTIRE trip! ๐ Today is my birthday too (Iโm 43 years old) and I have absolutely no desire to โtreat myselfโ โ other than treating myself to a good walk this morning, and maybe a big fat Delmonico ribeye steak tonight. hahaโฆ
I ate super simple yesterday after returning from such a BIG tripโฆ
Here is my Low Carb Food Diary for Day 64 of the โGet Lean For Summer!โ 90 Day Low Carb Challenge. Itโs NEVER too late to join if you havenโt already!
Day 64: Mondayโs Low Carb Meals
For breakfast I had 3 eggs scrambled with colby jack cheese. Super easy and very low carb. Eggs are .4 carbs each so this meal was only 1.2 carbs.
I took a ridiculously long (3 hour) nap all afternoon ๐ and decided to have my favorite โlow carb cerealโ when I woke up.
Itโs 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries for a total of 5 net carbs and 85% healthy fats.
Later that night I grabbed one of these Oscar Mayer P3 Protein Pack snacks that I had leftover from my road trip. Theyโre good. This was was 4 total carbs, 3 net carbs. Great for a quick (healthy) low carb snack to grab!
I snacked later in the evening too โ just some pecans and peanut butter because I got a little hungry, and I donโt have much left in the house lol.

I have some new health goals Iโm working on โ or about to work on. I canโt wait to share those with you. ๐ Obviously Iโll continue eating low carb and super healthy. I still have some body fat to lose and definitely want to maintain the weight Iโve already lost. But the big question is: Whatโs Next?! Thereโs more to life (or MY life at least) than just โmaintenance modeโ. ๐ This next leg of the journey should be a lot of FUN!

Obviously I canโt dance AND have no shame โ haha. But I love to make good use of the miles & time on my road trips. ๐ I *really* get into it when thereโs nobody else in the car! My motto lately: just keep moving.

YOU are my heroโฆโฆi love your blogs. I have learned so much from you about low carbing and how to how to make it interesting and EASY. ๐
I Love dancing and music too. I was smiling when i saw the video of you breaking out in dance and then today dancing while driving. I do that a lot too but not when there is a lot of traffic. ( oh the stares) lol
I went to a steak house with my daughter last Friday for my birthday
i had a T bone and a big salad. Nothing else.
BUT. on my way home i stopped for a sift serve light ice cream cone
i was tired and did not feel like going to the store to find sugar free ice cream
it was really good but NOT as good as i remembered it to be. So i wonโt ve doing that again. It was not worth it simply because, the sugar in the ice cream, must have triggered my insulin to spike thus making me experience excess hunger for the next 12 hours or more. That is the bad side effect of eating anything with sugar or corn syrup in it and these days almost EVERYTHING i look at in the grocery has some form of sugar in its ingredients
i swear, i was looking for a SF barbq sayce and every single brand had corn syrup or sugar in its ingredients.
I finally calmed down my hunger again after sticking to low carb for the next two days. So for me, it is so not worth it to indulge in anything with sugar in it. Btwโฆ.high fructose corn syrup is the worst possible sweetner we could ever eat. This one ingredient in the American diet is a major cause of obesity today. I am sure you know this, Lyn but i am sharing this info to help others.

i wish the hotel that i am stayin at had strawberries or blueberries and walnuts at the buffet. I do keep some berries in my fridge here though but i can get scrambled eggs with sausage ir turkey bacon every day. They also have my low carb yogurt here too ๐
I snatch the packets of creme cheese and PB to keep in my room also. ๐
Last night they had a social hour and i had a plate of cucumber slices, cherry tomatoes and baby carrits with a fresh green onion dipโฆ..it was so yummy. and three small slices if cheddar cheese.
I passed on the breads and crackers and chocolates beer and wine. Lol
Tonight they are offering grilled hamburgers and veggies with fruit for desert
i hope they have berries cause i do not eat fruit anymore.
Wed. Is desert night or food truck night. I did not attend desert night. Lol
There is no social hour from Thurs-Sunday
i really am enjoying this extended stay Hotel
i went swimming already and used the excercise room too.
I am making the best of my situation while my home is being repaired. I feel like i am on a long vacation even though i am still working abd exhausted some days.
I am staying low carb. It has been super easy. Thanks to you and your suggestions for eating liw carb while travling. ๐

I planned on getting one today, but Iโm not sure Iโm in the mood for it โ or to go out (again I mean โ I was out getting in a good walk earlier!).
Youโre SO right about carbs/sugar triggering hunger. Iโve noticed that in the past too. Itโs a vicious cycle โ for me, going on/off plan with foods, I mean. Funny you mentioned that though as Iโve been craving something similar โ more mentally than physically of course, as my cravings are totally gone. Just thinking Iโd like to have something. And I may โ weโll see. ๐
What was really different this time i ate off plan was that i ate liw carb all day but the desert was the only one thing i allowed myself
in the past this would have resulted in an all day binge.
My mindset has really changed. Although next time i am going to try a low carb desert instead. The sugar caused too much hunger. I did not like that at all. ๐
I got back on track immediately ( another big change for me) for once in my life i feel in control of my eating. Itโs GREAT!!!!
I totally get it, because thatโs exactly where I am now too. ๐ I feel in control โ instead of easily spinning OUT of control โ which feels so great!!
I really like just cream cheese & berries. Itโs so rich and just perfect!

I did notice one thing. I do not eat much red meat. After eating that Steak for my BD (and the leftovers the next day) i started having some of the fibromyalgia again or it may have been caused by the sugar. Anyway i am avoiding both culprits just in case
i felt better on strictly low carb. It helps manage my pain too. I have had chronic pain from fibromyalgia and Rheumatoid arthritis. I have been having more pain again in the last two days
Also stress can cause a flare as well i have had a very stressful time since last month. Going off low carb is just not worth it for me in many ways.
I would guess it was the soft serve, as I have the same issues (fibro & inflammatory arthritis in my lower back from an accident) and itโs sugar/carbs that do it to me every time.
I do eat red meat โ the burgers, and a steak now and then. Not tons (as in daily) but enough to know it hasnโt ever caused a flare up for me personally.
I prefer salmon, chicken wings & thighs, etc though. But a ribeye hits the spot now and then!
I think you are right, Lyn. Steak has not caused more pain for me the other times i have eaten it
it is that nasty sugar. ๐ i love a good steak once in a while. ๐
Happy Birthday Lynn. I have stayed on plan for 9 days now and lost 7 lbs. I also tried your avocado fried in butter, and it was excellent. I will definitely have that again! Thanks for all your menus. Once I decide to try what you are eating, its always really good! Hope you are having a wonderful day!
