I had an amazingly fun & healthy day yesterday. 🙂 What a great way to get right back on track!
I won’t say I regret my cheat day on Thursday, but it is SO NICE to be back to foods I love – and realizing that I now love my healthy lifestyle more than I ever loved my old life of unhealthy indulgence.
That was something I thought I would always miss. It was something that threw me off track so many times.
It’s interesting how EASY it is to change your habits, your mindset, and yourself – just by consistently forcing positive change. For some reason it seems so much harder than it is. Looking back, it’s obvious I gave in to the mental resistance (over and over) – and that all along I was only a few weeks away from beating it altogether.
Wow. What a realization…
My sister was in town for two nights, so we made the absolute most of it. 🙂 You’ll get to meet her in this post, and see pictures of our fun day and delicious meals.
Here is my Low Carb Food Diary for Day 40 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s not too late to join us if you haven’t already!
Day 40: Friday’s Low Carb Meals
I skipped breakfast again and just had coffee. I had a busy morning and an early lunch planned anyway, so that suited me fine.
Lunch was at a local restaurant (Gondola Pizza & Steakhouse) with my family. My sister also eats low carb and gluten free (closer to Paleo actually) which is really cool. Here’s a picture of us at lunch together:
We both got the grilled chicken & roasted veggies, which is my favorite meal at this place. I brought the carrots home for Slim, of course. 🙂 He loves that!
After lunch we made a coffee and sat out on the back deck deciding between a nap and a walk (lol). We were both feeling drained, but forced ourselves to throw on walking shoes and go enjoy the sunshine. 🙂
I had a laugh when we both came out wearing similar shoes!
Mine are Northside Burke II Sandals and hers are KEEN Whisper Sandals. They’re very similar, except I think mine cost less. We both LOVE these shoes for summer walks, hiking, creek wading, kayaking, etc.
We took Slim out with us and did a quick downtown walk, short but brisk enough to work up a nice sweat and get Slim out for a bit. 🙂
We got back hot, sweaty, still ready to nap… and decided to take off and go hike Lost Creek Falls. 🙂 LOL, we were on a great roll yesterday!!
And yes, that’s the HUGE Lost Creek Cave behind us… right after watching The Descent the night before. 😯 haha. Eek!
We just grabbed some almonds and bottled waters and took off for the hike. I love that we are so much alike, from our cool shoes – to our “keep it simple” and go with the flow mentality. It’s hard to be spontaneous when you over-complicate it and have to plan & prepare and pack a picnic basket and such. 😛
We had company last night, but everyone had a long day and so I just put out a simple dinner for “noshing & grazing” so we could hang out on the back deck and enjoy the beautiful weather & good conversation.
Again, who wants to be in the kitchen for an hour or two when there’s life to live?! 😛 I just pulled out a variety of low carb foods I had on hand…
It made for a great spread! 🙂 We had smoked salmon with Laughing Cow creamy swiss wedges, nuts & cheese, turkey & chicken slices, and cream cheese with berries.
The “picnic on the deck” was a big hit with everyone, and made for a nice relaxing social evening. And we were all STUFFED. 🙂 Fun!

It was so very nice to spend the day with my sister. We haven’t had one-on-one time in I don’t know how long. When we were teens maybe?! Wow. What a GREAT day!
She left a cairn at the Lost Creek Falls to mark our adventure:
We hiked up to the second waterfall too, and there was a HUGE rock just sort of hanging at the top of the waterfall. See this picture to get an idea what it looked like.
That’s the kind of rock that’s just waiting to fall on your head. 😛
We also hiked up to the top of the main waterfall, and discovered a cave as the water source up there. I’m going to talk Joe into going back to explore that further. 🙂 I’m taking it easy for the rest of the weekend though, and just plan to enjoy the cooler Tennessee weather and easy walks with Slim downtown.
I feel GREAT. I love that I’m eating so healthy, and so simple, and that I’m getting out and moving more. My whole life is changing in such positive ways, and I LOVE it!!
My sister and I talked a lot about that yesterday – about how far we’ve come, how happy we are, the huge things we’ve each put behind us, and how excited we are about life going forward. And how GOOD it feels to be HAPPY.
Positive change is so worth it.
It shows in our smiles. 🙂

I can tell you are in a much happier place by the tone of your posts! I’m so happy for you! You are rubbing off on me! I’m sitting here eating the berry pecan cheese cereal! I have to say I tried it before with a different brand of cottage cheese and didn’t care for it. I got Daisy this time and it made a huge difference! Today is day 7 for me nod I’m feeling good!

Thank you so much, Barb. π Daisy Brand cottage cheese really DOES make a huge difference. Most brands are full of chemicals and weird ingredients. Compare it to any other label on the shelf, and you’ll see why it tastes so much better!

Thank you Sherry π I’ve lost around 50 pounds. But sadly, it took me about 5 years of yo-yo’ing with tons of interruptions (hysterectomy, etc).
