I had another 24 hour day yesterday (up at 4am and up until 4am) so my food diary has 4 full meals in it.
I got up early to work before I went out on my 3 hour adventure, I came back home to work a couple hours, I rested all evening, then worked late last night.
I love working from home and having a fluid schedule that allows me to get out and enjoy these beautiful Spring days!
After my late nap last night I weighed myself, and I was under 150 pounds. 🙂 This morning… my scales still said 149.4 – so I’m a whole pound down today! FINALLY, lol.
Here is my Low Carb Food Diary for Day 18 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s not too late to join us if you haven’t already. 🙂
Day 18: Thursday’s Low Carb Meals
I had a healthy low carb breakfast before the hike. It’s 1/2 cup pecan halves, 4 small diced/frozen strawberries, and 1/4 cup Daisy brand cottage cheese. Easy & nutritious! (5 Net Carbs)
After the hike, and having to work for a couple hours, I was famished! I was also exhausted lol, so I just whipped up 3 eggs scrambled with cheese. Simple, fast, filling. 🙂 (1.2 Carbs)
That held me over through the afternoon, then I took a LONG evening nap (lol). I woke up hungry, but with no real appetite again… so I decided to have a quick healthy snack.
I measured out some frozen raspberries. So delicious and nutritious! 1/4 cup is only 2 net carbs, so it’s a perfect low carb treat. I did also weigh them, just to make sure my 1/4 cup measurement was accurate…
My healthy snack was 1oz Philadelphia cream cheese (2 carbs), 1/4 cup frozen raspberries (2 net carbs), 1 serving of Blue Diamond almonds (2 net carbs) for a total of 6 net carbs and 78% healthy fats.
I felt like I needed a “meal” later in the night. I still had no desire for it (appetite), but I WAS hungry – so I just whipped up a quick one skillet meal of sausage and fried eggs.
An entire day of NO low carb take-out, lol – imagine that!! 😛

My fun hike yesterday was a GREAT workout! I’m staying in for the weekend to catch up on some work so I’ll get some walks with Slim in if the weather holds, and I’m also going to do my Ab Carver Pro today and tomorrow to catch up on my upper body workouts.

Your meals always look so good it makes me hungry lol. So I got back on track yesterday after my mini slip up so I tried to keep my carbs low as usual and ate simple foods.
B: bpc
L: 3 scrambled eggs w ham & cheese
D: mcdonalds quarter pounder w/no bun, no ketchup (just meat, cheese, onion & pickle)
S: pepperoni chips & 1oz cheddar cheese, 1oz almonds
I drank 60oz of water , my fat was 79% and my net carbs were 12…plus I got another “mini” workout from chasing my 3 & 1 yr Olds at the baseball field lol. All in all I’d say it was another successful day π

Wow. Congrats on getting under 150.
I was so hungry yesterday. I felt like i ate too much even though i stayed low carb. I got a nasty cold and felt terrible so i did not feel like eating anything heavy.
Breakfast. Cottage cheese strawbe=ies and pecans
Lunch yogurt with almonds
Snack. Pork skins….. Bbq flavor
I ate too many. I need to buy these in small one serving bags because i tend to over eat on these….even though these have 0 carbs, it is not calorie free. I love these and it does get rid of between meal hunger but i over did it. So i am not buying a big bag anymore.
For dinner i had the cottage cheese and strawberries again
Snack….low carb strawberry cheese cake greek yogurt with finely chopped pecans on top
I swear this tasted just like real cheese cake as i put the yogurt in the freezer for a while but it was not frozen but just gave it a thick and creamy consistency. It felt like i was cheating but i wasn’t. (we find a way) π
With that being said, i know i had too many carbs today from dairy berries and nuts but my calorie count was still very low
Later that night…..i had a hot and steamy cup of chicken broth. I added some seasining to it. mrs. Dash and ginger powder and a pinch of cardamon to make it savory. It really DID hit the spot plus it opened my sinus a bit
I am going to try to decrease my carbs today but i still feel lousy but better than yesterday
No pork skins today….it reminds me how i could in the past over eat on chips
I do not want to go back to that woe again
I think if i can get over this cold that i could stick to the lchf woe better but still trying
I just do not want any meat ir cheese now or. Even salads. I just want soup really
I may try the Campbell s chicken broth
I was not too fond of the chicken broth in the cardboard container. π

Was it Swanson brand? I don’t like that one as much either. At all really. Campbell’s canned chicken broth has such a great rich flavor. I put 3/4 can of water with it instead of a full can, by the way (it’s condensed broth).

I totally get the mindless eating and overeating, and breaking those habits. Even with low carb foods, I’m aiming to “change my ways” not just my body. π

Lyn. The chicken broth is “Wild Harvest” brand of organic free range, fat free, chicken broth in a carboard container. It tastes very watery and not very flavorful
So i decided to make my own broth today using two large turkey wings. I make very savory soup but the difference in it now is that i do not add rice or starchy veggies to my soup
This will be broth mostly. I may shred up the turkey meat to use for something else for another meal. I cook the broth with onion .garlic. celery. bay leaf .ginger salt and pepper. I take out the veggies and pitch them i also add mrs. Dash and cardamon for flavor. This will make for several meals or snacks. I may add some fresh spinach to it before i serve my cup of soup. Spinach cooks very quickly. I thought about adding some cabbage to my soup also. It gives it a good flavor. This home made soup wipes out my colds in no time. And my home smells so lovely from the herbs and spices simmering in my broth
I do not know how id count carbs in the soup but i am certainly not eating any high carb foods or veggies
I just want to get well right now
I think the broth that isnt fat free helps more
With quenching hunger than the fat free kind for obvious reasons.
Soup is reccomended for all dieters as it has been proven to help us eat less with a meal only not the high carb soups…that would be defeating the purpose.

Just starting to track carbs fat etc. What an eye opener. I had no idea truvia sweetener has 3 carbs in 1 packet! I also just tried the cottage cheese strawberry and pecan breakfast. YAY. Yummy. I poured a splash of heavy whipping cream on top yum. What form of sweetener do you recommend?

Wow Laurel – I just looked that up: https://www.truvia.com/products/truvia-packets That’s crazy! π I used to use Splenda, which you count as 1 carb for 2 packets, or 1 for one packet, I can’t recall now.
The only thing I use sweetener for is my coffee, and right now I’m using Coffee-Mate Sugar Free Hazelnut Powdered Creamer (1 carb per TBSP).

You really have to read the labels on sweeteners. All Stevia is not the same. Some have dextrose added to it
Sweetleaf has 0 carbs. 0 calories. I love it.

I’m so relieved, I weighed in this morning a whole pound below my max weight allowance!!!! Now I’m enjoying a very high carb/protein (still grain free though) day! I’m pretty full since I barely ate anything the last two days, but I feel awesome!!!
