Yesterday’s low carb meals were super easy. They totaled 18 net carbs, 25 total carbs, and 1580 calories – with 115 grams of protein, and 64% fat.
I’ll share a couple of low carb take-out meals I had over the weekend too, since returning home from my low carb San Diego trip.
I’ve been a bit jet-lagged, and just resting up after such a fun & busy week, so these are some great LAZY low carb ideas for you. 🙂
Monday’s Meals & Macros
I started the day with my favorite “low carb cereal” which I make a big different every time. This time it was 1/2 cup Daisy brand cottage cheese, 1/2 cup crushed pecans, 4 small diced strawberries, and an Atkins Peanut Butter Granola Bar (chopped up). Total: 10 net carbs, 75% fat.
I had a slice of colby jack cheese off the block for a snack, a long nap (lol) and a very late lunch – which was a Low Carb Thickburger from Hardee’s (also called Carl’s Jr in some areas). I ordered a double – with no mustard, no onions and no ketchup.
I usually just eat it like a burger in the lettuce wrap, but yesterday I chopped it all up together into a “hot salad”. 🙂 I ate about half of it for lunch, and the other half for dinner. (It was a LOT of food! lol)
Seriously, those 1/3 pound patties are almost as big as my face. 😛
I enter my foods into MyFitnessPal by individual ingredients. This is a lot easier, especially when you special order a menu item (like my burger above), or make a combination of ingredients (like my “cereal” for breakfast).

For breakfast on Saturday I ordered grilled tenderloin & fried eggs:
While I was picking that up (a local place with a drive-thru), I also got “two hamburger patties” (that’s how I ordered it). I had those dipped in Duke’s mayo later in the day. Delicious. 🙂 It’s a great place that makes “real food.”
I haven’t done any cooking (AT ALL) since I got home, which is nice. 🙂 I love that eating low carb is so EASY! I do have some chicken thighs thawing, but tonight I think I’ll make up some smoked sausages and cauliflower. I haven’t decided yet.

Not sure I’ve ever heard you mention this, but what are your thoughts on the “egg fast”?.. by the way I love your recipes, pictures and busy lifestyle~it reminds me of meββ have a great day!
Thank you Gayle! π I know a lot of people do the egg fast, or the fat fast, but personally that’s too much like “dieting” to me. And I would gag by the end of day ONE on eggs. π lol.
I just eat super healthy. I think a lot of people do these “tricks” after eating off plan (having a cheat, or getting derailed). It’s just not necessary. All you have to do is eat low carb and you’ll naturally start losing weight again. Or if you’re in a true stall, analyze your diaries for potential culprits – and make improvements.
