I woke up at 4am on Thursday morning, and I was up until almost 3am Friday morning – with a 2 hour nap somewhere in between. What a LONG day! 😛
Today (Friday) is Day 5 of the low carb challenge, and I am STUCK at 154 pounds this week. Wait. On Monday I started out at 155.4 pounds, so I did lose 1.4 pounds right off the bat. It’s funny how we expect the scales to move every day, even when we know better! lol…
My sleep is really off this week, which always affects my weight loss. That and I had ONE off plan night last week which added a few pounds and threw me out of ketosis – so it’s been a crappy week dealing with keto flu all over again. Ack!
Thursday’s Low Carb Food Diary
Breakfast: 3 Fried Eggs & Sausage
The eggs are fried over medium, in the sausage grease. This is Tennessee Pride (Mild) pork sausage. I’m not real picky. Sometimes I get Jimmy Dean.
^ This is my favorite go-to low carb meal lately because it takes exactly ONE skillet and it’s quick and easy to make. I usually cut the sausage tube in half, cook that and put the other half away to cook next time.
The half tube makes two servings, so I just make fried eggs the next time I want the leftover sausage. So I guess I’m saying a tube makes me 4 full servings. Yes.
Lunch: A Science Experiment 😛
I ran out of cottage cheese! 😯 My favorite “low carb cereal” usually has either 1/4 or 1/2 cup of Daisy brand cottage cheese. I had nuts and berries, so I hunted around for something to add to make a meal out of it.
I had two Laughing Cow Creamy Swiss Wedges, so my first thought was to cut those into bits and stir it in with the crushed pecans and diced strawberries.
I realized that wasn’t going to hold together in any way, so I added a TBSP of peanut butter and warmed those up together to try to make something “sticky”. lol.
Peanut butter and cheese. Who does this?!
I realized after the first 20 seconds in the microwave that it wasn’t going to work. 😐
Hmm. I decided to add 2 TBSP of organic, unrefined coconut oil to the mix.
Yes, this is the one I use. And yes I order it on Amazon. I like to shop about as much as I like to cook! 😛
I microwaved the swiss wedges, coconut oil & peanut butter all together and stirred it up and poured it over my nuts & berries. Then stirred it together and ate it. It was questionable. I was unsure…
Very weird, but quite tasty – and also healthy & filling!
I’ll definitely make it again. Minus the swiss wedges. lol…
The interesting thing is, I could only eat half of it (see the macros in my MFP Diary below). I put the other half in the refrigerator to eat later, and because of the coconut oil… it “set up” – almost like candy! Yum. 🙂

Snack: Oh Yeah! Cookies and Creme Protein Shake, 14 oz
This is NOT something I normally do.
I don’t even know where this thing came from. I found it in the back of my fridge when I was hungry and tired late yesterday afternoon, and just couldn’t be bothered to fix anything.
So I drank it.
Eh. It did the trick.
If I’m going to drink a shake, I’d rather have a GNC Total Lean strawberry shake. Those are pretty good.
But I prefer real food.
Anyway, at least it’s gone. 🙂
Dinner: 3 Grilled Chicken Breasts
I woke up from a nice long late afternoon nap, and STILL didn’t feel like messing around in the kitchen.
I ended up getting take-out, and in my typical style I ordered TWO take-out dinners instead of one… so I’d have another one to eat later. lol. Smart, right?! I thought so.
I got charbroiled chicken dinners with roasted veggies. I had two pieces of grilled chicken for dinner. Then I had another (3rd) piece of grilled chicken before I went to bed. So I still have one breast and two orders of veggies to enjoy today. Yay!
I dipped the chicken in ranch dressing. Weird, but good.

I’m really sore today – my lower body, that is. Slim and I have been out on quite a few walks this week. I got another good one in yesterday, but today I think I’m going to have to do an upper body workout…
Maybe weights for batwings, and my ab carver pro. Yes, that sounds good! 🙂
I walk faster than most people run, by the way. No leisurely strolls here, lol. I also pull in my abdominal muscles and focus on my core while walking. Slim is a great dane, so he has no trouble keeping up with my super fast pace. We’ve picked it up into a jog here and there starting this week, so I may be running before you know it!
Not today though. My calves are sore. 😛

p.s. I drank 40 ounces of water yesterday. I would have had more, but Slim drank most of my water on our walk! He’s getting spoiled on the water bottle. Now he just bumps the bottom of my bottle every time he wants a drink. Silly dane. 😉 I’m going to have to start carrying a backpack full of waters! lol…

My week is going quite well. We had an office luncheon for a staff member’s birthday – everyone ordered Chinese, but I brought in my lunch. Not really tempted – my broccoli soup was delicious βΊ- when they had triple chocolate ganache cake, I made a chocolate mug cake, which I had with a cup of coffee and whipped cream. Didn’t feel deprived at all! Haven’t jumped on the scale except for day 1 – will weigh on Sunday.
