The strangest thing happened this week. 😯 I went grocery shopping! I knew you’d need proof, so the Butcher captured this fun shot of me (below) “in action” -lol. Yup, unshowered and all! haha.
I threw my hair up, ran to the store, stocked up, came home & put the groceries away – and put a beef roast on for dinner… in 37 minutes flat! It can be done…
As you probably know by now, I rarely cook – and it’s even more rare to catch me in any kind of store. I do most of my shopping online, order take-out and grocery delivery, and otherwise travel and eat out. All low carb of course! 🙂
I have some fun travel plans coming up, but lately I’m working on things here at home. I got tired of eating the same things over and over, and ultimately ended up with BARE cabinets. So off to the store I went!
I thought you’d like to see what I got this week…
My Low Carb Grocery List
Obviously this list is not all-inclusive, meaning it’s not EVERY low carb item you might want on your grocery list. It’s just what I got THIS week.
When I first started eating low carb, I used this list of low carb foods. Then I spent HOURS in the grocery store reading labels, trying to figure out healthy combinations of low carb foods I might like. Now I just KNOW my favorites and can whiz through a store like I’m driving a NASCAR grocery cart, lol. 😛
Anyway, here you go:

I don’t drink a lot of Diet Coke, but I do like half one now and then. That was probably one of my biggest habits & addictions to break, but I’m pleased to say I’ve gone from drinking 6 or more a day… to half a soda “now and then”. 🙂

I’ve never really gotten the chicken thighs. How do you cook them?
Chicken Thighs are great! They are cheaper, and they are higher in fat – so there better for you on this diet anyway. I put a little olive oil (drizzle) in a pan, lay the chicken thighs in the pan, top each thigh with a pat of butter (1/2 tbsp is fine), salt them, and just bake.
I cover the pan with foil and bake mine for about 40 minutes, then uncover until they crisp up – usually another 20 minutes or so. It’s best if you get the thighs with the skin ON because that crispy skin is delicious!! 🙂

They are a family favorite. Especially with boneless skinless thighs
Bacon , Kale, Eggs and pretty much most of what you’ve got in your cart or some variation.
Bacon, Eggs and rotisserie chicken, are must haves every week.
I love Prosciutto wrapped around freshly blanched asparagus!!! So I would add Aspargus and Prosciutto to the list. I also like blackberries with real whipped cream!!!

Some of my LC staples are eggs, cheese, cream cheese, veggies & meats of all kinds, pecans and macadamia nuts, protein drinks, pork rinds, almond & coconut flours and ground flax seed.
I tend to buy most of my items in bulk though.. I cant imagine buying nuts at the grocery store. Im curious to know what you pay for your pecans since I know you eat them as often as I do. I pay between $5.50 & $6.00 per pound… anything over that is highway robbery in my opinion.. I’ve had to pay closer to $6.50/# closer to Christmas but usually I stock up early when the pecan harvest happens in Sept/Oct/Nov depending on the location and variety..
Pecans are expensive here in Buffalo, NY they are 10.00/lb if you buy in bulk. Can’t find them cheaper. But I love them

What is your recipe for roast beef &what cut of meat do you use ?
Hi Kate,
I get a Beef Chuck Roast, and I use the McCormick Pot Roast Seasoning (made per instructions: add the water). You can season it yourself to lower the carb count, or just account for the carbs in the seasoning mix. You could easily use HALF the packet too.
Anyway, I cook the roast in a slow cooker on high for 5 hours. 🙂
I would add:
Pepperoni
dill pickles
heavy whipping cream (for my coffee!!!)
salmon – I’m craving fish for some reason!
Heavy whipping cream
block sharp cheddar to shred
raw parmesan (shredded) from TJs
bacon- thick cut
eggs
Duke’s mayo
meats of all kinds- usually ground beef, chicken thighs, chicken quarters, steaks
fish- tilapia, salmon, shrimp, crab
spices to make my own spice mixes for tacos, chili etc
lettuce, asparagus, broccoli, zucchini, artichokes, kobocha squash
All of the above but I have to have unsweetened almond milk, PB2 and walnuts

Hi Lynn. I know this is an old post, but thought you may still respond. LOL. I have been buying HEB’s skillet mix ground beef for the longest and just started KETO. It looks like when I put that ground beef in for MyFitnessPal it comes up as 4 carbs per 4 oz! Is that because of the added seasonings they use or why would hamburger meat be so high in carbs? It’s the cheapest, so that’s why I get it. LOL. Thanks!
