I had a fabulous day today. 🙂 I got up early and knocked out some work (I work from home), then headed out to run a few errands before meeting my friend Sue in the city for lunch.
After a beautiful lunch, I had an even more beautiful nap (lol).
Then I had a bit of dinner, hung out with a friend, and caught up with my son – and even snuck in a little more work during the evening hours.
All in all a GREAT day. Minus a workout – oops! I need to make up for that tomorrow. I did manage to get in around 3500 steps today according to My Faithful Fitbit, but it’s a far cry from my 10k goal. 😛
You may have already seen my meals throughout the day on Facebook or Instagram, but here’s a breakdown of everything I had & how my macros came out for the day.
Breakfast: Coffee & Cheese
I was busy this morning so I just snacked on some Colby Jack cheese off the block along with my coffee while I wrapped up some work and got ready to head out. I’m not a big breakfast eater. I usually don’t eat a “meal” (a light meal) until around mid-morning.
Lunch: Low Carb Meal at Logan’s Roadhouse
I met my friend Sue at 11:45 in the city. She picked the restaurant this time, which was Logan’s Roadhouse. I love eating there because they have a new Healthy & Hearty menu. They don’t publish their nutrition facts though, so you have to be smart about what you order and stick to “safe foods”.
That’s me on the right. 🙂 And here’s my lunch:
I had the (plain) Grilled Salmon, Steamed Broccoli & Sauteed Mushrooms with a side Caesar salad (no croutons). I wasn’t able to finish it all, especially with the salad added on, so I brought the rest home to enjoy later…
Dinner: Leftovers + PB&J Cottage Cheese
I finished the leftovers from Logan’s around “dinnertime” (above), then later in the evening when I got hungry – with hardly ANY groceries left in the house (lol), I whipped up something… sorta odd.
I took 1/2 cup Daisy Brand cottage cheese (4 carbs) and added 1 TBSP sugar free raspberry preserves (1 carb) plus 2 TBSP peanut butter (4 Net Carbs). A bit high carb, and WEIRD, but it’s what I had on hand. 😛
I mixed it all together, not knowing WHAT to expect – but it was actually very good. It was creamy and delicious! 🙂 A “bowl of PB&J” lol. Who knew?!

I had 5 cups of coffee & 40 ounces of water today.
Next up: some serious grocery shopping! I’m going to be “in” again for the next week working on some projects before my next trip, and I’m craving a little food variety. 😛
So far on my list is cucumbers, squash, broccoli slaw (great for stir fry!), chicken thighs, beef roast, avocado, ground chuck… hmm – still working on that list. 🙂

I have been on almost every diet imaginable. I’m one of those people who wants to lose weight without changing much of anything. I have been on the low carb diet (using mostly your recipes ish) for a little over a week. It has been slow but I’m losing and I feel like I’m not being deprived of much. I’m a retiree and don’t have much activity going on. I appreciate you posting your meals, etc. I tend to eat the same things for several days in a row so this works out well for me.

That said, going low carb had SO many more benefits than I ever expected… It’s the best thing I’ve ever done for myself. 🙂
