I had a fabulous day today. ๐ I got up early and knocked out some work (I work from home), then headed out to run a few errands before meeting my friend Sue in the city for lunch.
After a beautiful lunch, I had an even more beautiful nap (lol).
Then I had a bit of dinner, hung out with a friend, and caught up with my son โ and even snuck in a little more work during the evening hours.
All in all a GREAT day. Minus a workout โ oops! I need to make up for that tomorrow. I did manage to get in around 3500 steps today according to My Faithful Fitbit, but itโs a far cry from my 10k goal. ๐
You may have already seen my meals throughout the day on Facebook or Instagram, but hereโs a breakdown of everything I had & how my macros came out for the day.
Breakfast: Coffee & Cheese
I was busy this morning so I just snacked on some Colby Jack cheese off the block along with my coffee while I wrapped up some work and got ready to head out. Iโm not a big breakfast eater. I usually donโt eat a โmealโ (a light meal) until around mid-morning.
Lunch: Low Carb Meal at Loganโs Roadhouse
I met my friend Sue at 11:45 in the city. She picked the restaurant this time, which was Loganโs Roadhouse. I love eating there because they have a new Healthy & Hearty menu. They donโt publish their nutrition facts though, so you have to be smart about what you order and stick to โsafe foodsโ.
Thatโs me on the right. ๐ And hereโs my lunch:
I had the (plain) Grilled Salmon, Steamed Broccoli & Sauteed Mushrooms with a side Caesar salad (no croutons). I wasnโt able to finish it all, especially with the salad added on, so I brought the rest home to enjoy laterโฆ
Dinner: Leftovers + PB&J Cottage Cheese
I finished the leftovers from Loganโs around โdinnertimeโ (above), then later in the evening when I got hungry โ with hardly ANY groceries left in the house (lol), I whipped up somethingโฆ sorta odd.
I took 1/2 cup Daisy Brand cottage cheese (4 carbs) and added 1 TBSP sugar free raspberry preserves (1 carb) plus 2 TBSP peanut butter (4 Net Carbs). A bit high carb, and WEIRD, but itโs what I had on hand. ๐
I mixed it all together, not knowing WHAT to expect โ but it was actually very good. It was creamy and delicious! ๐ A โbowl of PB&Jโ lol. Who knew?!
Hereโs my MyFitnessPal Food Diary w/Macros:
I had 5 cups of coffee & 40 ounces of water today.
Next up: some serious grocery shopping! Iโm going to be โinโ again for the next week working on some projects before my next trip, and Iโm craving a little food variety. ๐
So far on my list is cucumbers, squash, broccoli slaw (great for stir fry!), chicken thighs, beef roast, avocado, ground chuckโฆ hmm โ still working on that list. ๐
What about you? Whatโs going on in your kitchen, or what fun new low carb recipes have you tried lately? Iโd love to hear how your health goals are going!

I have been on almost every diet imaginable. Iโm one of those people who wants to lose weight without changing much of anything. I have been on the low carb diet (using mostly your recipes ish) for a little over a week. It has been slow but Iโm losing and I feel like Iโm not being deprived of much. Iโm a retiree and donโt have much activity going on. I appreciate you posting your meals, etc. I tend to eat the same things for several days in a row so this works out well for me.
Thank you Linda, Iโm really glad youโre finding it helpful. ๐ I think weโd ALL love to lose weight without changing anything -lol. I know I would!
That said, going low carb had SO many more benefits than I ever expectedโฆ Itโs the best thing Iโve ever done for myself. ๐
We have been traveling route 66 for two weeks. Have two weeks to go. These tips have come in so handy. Canโt thank you enough.
Iโm really glad, Clarise! ๐
Enjoy your trip! *cheers*
The pj and jelly and cottage cheese was out of this world good.
