The last three days have been absolutely fabulous! I got up on Monday, grabbed my bags, and traveled to Vancouver, BC Canada to hang out with a girl friend at White Rock Beach for the week.
The last two days have been full of exercise, friends, rest, food and just an all around good time. 🙂
I have a bit of quiet time this morning, and wanted to share my low carb meals with you, as I know sometimes it can be difficult to figure out the best low carb food choices when you’re traveling – or staying with someone as a house guest…
Eating low carb through airports can be challenging – but not impossible!
On my layover in Denver I grabbed a pre-made grilled chicken caesar salad – and removed the croutons & cranberries. I also got a roast beef & swiss sandwich, and added that meat & cheese to my salad – plus a mayo packet. I was hungry !!! lol. It made for an easy LCHF healthy dinner on the go, at least.
It was really good. There’s a lot more roast beef than you can see there, I think. Once I cut the meat into chunks and added the mayo & dressing, I just put the lid on and “tossed it” all together. It was a filling meal.
Expensive? Yes. You know how airports are. It was $24, which included the expensive bottled water and both meals that I combined.
High, but… the alternative was a Big Mac. 😛 😯

The next morning I was up early, and decided to raid the “Canadian Fridge” and find something to eat. My friend & host, Tawnya… is a “female bachelor” like me, lol. 🙂
I found a beautiful block of mild cheddar cheese, a jar of peanut butter – and I had a bag of pecans I brought with me from Tennessee… Bingo!
She also had eggs, so for lunch I fried up a couple and added in a TBSP of salsa for a little “kick”. Easy! Sometimes you just have to get creative with what’s available, and focus in on the low carb options hiding behind and between all the other stuff. 😛 lol
Tuesday night we had dinner with another friend at The Hemingway Waterfront Public House on White Rock Beach. I ordered a bacon & cheddar stuffed burger without a bun (delicious!!) plus a side salad.
Unfortunately the salad was FULL of fruit. 😐 I skipped that, so it wasn’t a very filling meal, but it did get me by – and there was plenty of cheese & nuts to snack on back at the house later that evening.
There was a beautiful red wine flowing, but I stuck with water myself. I’d had a long travel day just before, and wanted to feel my best this week – and just enjoy the great company. When you have great girl friends, a beach, and lots of laughs… wine and carbs just aren’t necessary. 🙂
I’ve been drinking a lot of water and getting in a lot of walking while here, and just making easy meals & snacks in between outings.
There’s plenty of eggs, cheese & pecans… so I’m content to munch on things like that and otherwise lounge and enjoy the view and the company.
Last night Tawnya and I went through years worth of old photos, laughing at our old “chubby pics” 🙂 haha. We’ve both lost a good bit of weight! We’ve also both taken a big interest in our health the last few years. You know, one of those thing you always wish you would’ve done sooner…
She showed me some cool (easy) exercises for “bat wings”, how to do ” planks” off the couch (lol), and I got to check out her fun fitness gear. We’re doing a lot of walking here, and outlining our plans & goals to get in amazing shape this year.
I’ll get some pictures of us (now) this week, and show you some of our “chubby pics” too. It’s nice to be able to look back on that and laugh… because it certainly wasn’t funny at the time! 😛
Every year of your life can be even better than the one before – but it starts with today, this meal, this decision, this NOW.
A better year is made up of 365 days worth of healthy choices, one day at a time…

I wish Tawnya and I had found a chance to do some videos on that. She lays flat on her couch, and uses a light hand weight for arm exercises – which was really easy, but definitely effective!
My son showed me how to rid of my bat wing arms (still can’t believe he noticed them but he is a hockey player and really buff!). Basically you like on your back (you can do them sitting up too but prefer to lie down myself) and lift weight over your head towards your back. I use a 12lb weight and lift it up and over my head towards my back, hold for a couple secs then bring it back to my starting point. I try to do a couple reps (10-12) each day on each arm. It works! Miss our fitness tag team we had here but looking forward staying accountable with my 10,000 steps π
I liked how you showed me – with two hands. You have to video that for us, Tawnya! I can’t believe we didn’t get around to doing some videos. π
