It’s EASY to eat low carb on vacation, and actually – I prefer it. It’s much better to eat healthy so you’ll have high energy, not feel icky & bloated, and actually ENJOY your trip.
Before I head out, I wanted to give you a quick update with my most recent meals & macros. Hopefully this will give you some easy low carb meal ideas if you’re looking for something new to try, or find yourself needing a “low carb quickie” on the go…
Recent Low Carb Meals & Macros : Foodspiration 🙂
Let’s see, where did I leave off on my food journals? Ah – on Friday. I had a grilled chicken & cheese sandwich on Low Carb Everything Bread for dinner that night:
On Saturday I had errands to run so just had coffee for breakfast, then grabbed a plain Low Carb Thickburger from Hardee’s for an early lunch while I was out:
You can calculate your nutrition facts on Hardee’s Online Nutrition Calculator. Here are mine for the plain low carb cheeseburger (just lettuce, meat & cheese):
After that I headed to the lake, and I grabbed a quick snack to eat on the way:
I had two Michelob Ultra beers on the boat, which are 2.6 carbs each, and a few pieces of mild cheddar cheese (sliced off the block). Cheese goes great with beer. 🙂
For dinner that night we ordered out from a local place. I had a big fat hamburger steak with green beans:

That hamburger steak was HUGE, by the way. I couldn’t finish it all, so I saved the leftovers for later. On Sunday morning Ricky cooked sausage & eggs:
My own eggs always end up scrambled – even if I am attempting an omelet or fried eggs, lol. I asked Ricky how he managed to make “perfect” fried eggs. He said he cooks them “aggressively”, that the trick is to cook them hot & fast.

That was a late breakfast, so we had a really late lunch too – at Red Lobster. I didn’t get hungry again until almost bedtime, when I ate a couple of leftover sausage patties.
Here’s how Sunday’s macros worked out:
Ricky cooked up extra sausage to send home with me – YES, he’s an amazing guy!! – along with the Red Lobster and hamburger steak take-out leftovers:
We were celebrating our 2 year anniversary. Beautiful flowers, hey? 🙂

Obviously Monday was all about leftovers, which made for easy meals! I had 2 sausage patties for breakfast, and the leftover hamburger steak for lunch & dinner:

Here’s how my macros worked out for Monday:
(Yes, I had an Atkins shake & bar that day 😛 )
And GEEZ I drank a lot of coffee! Wowsa… lol.
That brings us to Tuesday… which was yesterday, but it’s still “today” for me (so far) because my rule is this: It’s not tomorrow until I’ve slept. 🙂 I’m really off schedule lately, lol. Anyway, I had a lot of errands to run today but I did manage to whip up some quick scrambled eggs w/meat & cheese before I headed out:
I grabbed a bottled water on my way out the door, and snacked on some Blue Diamond Almonds while I was running around. Then I stopped at McDonald’s for a coffee… and realized I was HUNGRY! I said “Can I have some plain chicken strips, like you put in your wraps & salads?” She said “Sure!” – and it only rang up as $2. Nice!
For dinner, I discovered I had saved the last two end pieces of my Low Carb Everything Bread and made a quick toasted chicken & dill pickle sandwich:
I just toasted the bread, and added mayo & dill pickle + Oscar Deli Fresh Rotisserie Chicken Breast slices. Easy & filling! 🙂 I hope this “4-day low carb food photo tour” gives you some low carb meal ideas for easy foods to enjoy on the go, or make real quick. I’m all for keeping it simple and doing whatever it takes to stay on track!

Most meats in the Low Carb program are delicious. Thickburger, hamburger steak, Ricky cooked sausage, quick toasted chicken, dill pickle sandwich and more…
I agree! I’m learning to LOVE the natural flavors of real meats… just add salt to amplify – like a big juicy ribeye. Mmm π
