Confession: I didn’t eat any vegetables today. 😯 I usually sneak my greens in, but on the odd day I don’t.
Ideally you should eat 10-15 net carbs a day in healthy low carb vegetables.
It was one of those lazy days of “making do” and just eating what I had on hand – or what I could get delivered, lol.
I’ll show you what I ate, and how the macros (nutrients) came out for each meal. At the very least, this should give you some ideas for easy low carb meals and snacks…
For breakfast I ate 1/3 cup of pecan halves dipped in Laughing Cow creamy swiss cheese (one wedge):
Tip: Pecan halves are cheaper in the baking aisle than they are in the snack aisle. 😉 They are very low carb / high fat, so they’re quite filling – and make a great (no mess) snack or meal on the go. It doesn’t sound like a lot of food I know, but I don’t like a big heavy meal in the mornings. I tend to snack with my coffee and drink my water.
For lunch today I had leftovers. It’s polska kielbasa (smoked sausage) with sauerkraut and two boiled eggs (with a dab of mayo to make them less dry – because they were overcooked, lol). It’s just what I had in the fridge:
For dinner tonight I got take-out. Actually, delivery – from Pizza Hut. I ordered 8 Traditional Bone-in “Naked Wings” (0 net carbs) and 8 Traditional Bone-In “Garlic Parmesan Wings” (4 net carbs for all 8). The ranch cup is 2 net carbs, but I didn’t even use half the ranch:
There’s nothing like low carb delivery. 😉
I only ate about half the wings, but I left the whole double order in my MyFitnessPal entry because I have a feeling I’ll finish them later – before I go to bed. :+)
I drank water today, but I also had coffees – so when you add in my creamer for that, I had a total of 16 net carbs today (23 total carbs).
It came out to 77% fat, 19.9% protein and 3.1% net carbs.
YES, I need something green. I aim to make up for that tomorrow. 😀

If you follow me on Facebook, where I share all of my meals, you’ll notice I usually eat much healthier than this. But I DO have “lazy low carb days” – like today. I don’t always share those food journals, especially when I’m junkin’ it on processed foods like cheese wedges and smoked sausage and such.
Try not to judge me too harshly. 😛 Sometimes I just eat whatever. Most of the time I eat “whole food” like some kind of granola health geek. lol.
