Eggs are a standby for something quick & easy when I’m at home. And I should say, I’m cooking for one, so simple is ideal most of the time. Fast, and less mess in the kitchen – even better! lol…
This was a quick low carb lunch idea, basically using up what I still had left over in the refrigerator after the holidays (ingredients to make Pigs in a Blanket for the kids). That’s “lil smokies” heated in the skillet with some slices of Colby Jack cheese on the side.
Speaking of, I decided to make Pigs WITHOUT Blankets the next day, which turned out delicious!
To the left is a Hardee’s Low Carb Breakfast Bowl. This is NOT my favorite low carb breakfast, but I was out and about that morning – and HUNGRY. lol.
I find it to be a bit salty for my taste, which is why I add the mayo. It’s actually more than I can eat in one sitting. Especially in the morning.
I also had Pizza Hut one night, as a sort of low carb splurge. If you click the link you’ll see that I just ate the toppings – and the new Garlic Parmesan wings.
Another thing I had leftover from the holidays was a two pound pack of Snow Crab Legs in the freezer.
I had company one night so I made the crab legs, with melted butter on the side of course, caesar salad (minus the croutons), and mozzarella stuffed mushrooms. Yum!
And then – I finally went to the grocery store. 😀 As you can see I stocked up on frozen veggies, plenty of greens, and a few “low carb convenience foods” like steam-in-the-bag shrimp and microwavable Tilapia…
Gorton’s Tilapia is actually really good. Well seasoned and tender/flaky! It looks better in these pictures. It cooks in the microwave in six minutes and makes for a quick low carb lunch idea. I had it with a side of cottage cheese topped with parmesan cheese.
Brace yourself! I actually cooked. 😀 lol. I made half pound hamburger steaks. I added one egg and seasonings (Grill Mates Spicy Montreal Steak seasoning – which made is nice ‘n spicy!) to the raw meat, mixed it up well, and fried them in the skillet.
I boiled the cauliflower, then added butter & salt. I fixed Birds Eye SteamFresh Creamed Spinach in the microwave, then put it in the same skillet I used to make the hamburger steaks and fried it a bit – which I call “dirty spinach” – and served the meat on top of that with the cauliflower on the side.
It was a super fast meal to make, but SO good!!
The next morning I had what was leftover of the hamburger steak with a side of cottage cheese for breakfast.
And for lunch, I stirred up the leftover spinach and cauliflower. 😀
This is one of my favorite low carb take-out meals. We have a great little Greek restaurant here that has the BEST grilled chicken! I ordered it with roasted vegetables. It comes with carrots too, but I give those to my Great Dane. He LOVES carrots!! 😛
There was enough chicken & veggies left over to make for a great no-fuss breakfast the next morning. Sometimes I over-order on purpose, just to have leftovers the next day. It makes for a great low carb breakfast or lunch without having to mess around in the kitchen.
Then the night before my trip I had an easy “bacon and eggs” dinner. I cooked the entire pack of bacon so I could pack the leftover bacon with me on my trip the next morning. 😀
