I’m not typically a big breakfast eater, but I was rather hungry this morning for some reason. I eat when I’m hungry, by the way – not on a schedule. I’m a big believer in the “listen to your body” thing. 😉 Anyway, not being in the mood to cook, and eggs not appealing to me either, I decided to whip up something quick & easy.
You’ll LOVE this easy, fast low carb breakfast idea!
I had Daisy small curd cottage cheese on hand, and some frozen strawberries in the freezer. I measured out a quarter serving (1/4 cup, 2.5 net carbs) and let them thaw on the counter while I made coffee and got a few things done. Then I measured out a serving of cottage cheese (1/2 cup, 3 net carbs) and topped it with the thawed strawberries:
I then added a dash of cinnamon, stirred it up and it was delicious! No sweetener necessary. The strawberries and cinnamon made for a great naturally sweet flavor. It was kind of like having a bowl of cereal, or maybe yogurt – except I have never liked yogurt (yuck! lol). YUM. I’ll definitely be having this again!! 😉

I agree JulyMama – and it was really yummy, with real food and naturally sweet (just enough!). A great alternative for a quick easy breakfast. π Enjoy!
