I’m leaving day after tomorrow on my next trip, but in the meantime I’ve been making easy low carb dinners at home.
Left is a quick & simple Steak & Chicken Stir Fry that takes very little prep or cook time.
And it’s absolutely delicious!! Even my carb eating family enjoyed it. 😉
It will probably take me longer to share the pictures and details with you than it took to prepare it and eat it. LOL. First, I’ll start by giving you a sneak peek into my grocery cart so you can see the ingredients for this meal:
What I used from this cart was: pre-cooked fajita meat (both steak & chicken), mushrooms, and bagged broccoli slaw.
I normally get my mushrooms already sliced, but they didn’t have any this time.
So I sliced the mushrooms, put a heaping tablespoon of butter (zero carbs) in a non-stick skillet and turned it on medium, then added the sliced mushrooms and broccoli slaw:
I doused a bit of soy sauce over the veggies and covered the pan, stirring them occasionally until they were nice and soft.
Just before the veggies were done, I tossed the Steak & Chicken strips into another pan, seasoned them just a bit, then heated them on high.
Just enough to get them nice and sizzly. 😀
You’ll find the fajita strips in the meat section of the super market. I find them at the end of the “real meat” section, between that and the processed meat section (sandwich meat, hot dogs, etc).
Look near the ground beef and beef roasts and see if you can find these pre-cooked fajita strips. They are super tender and oh so good!!
I even eat them cold sometimes, since they are pre-cooked, and dip them in Caesar dressing as a snack.
Once the meat was sizzly, and the veggies were tender, I tossed them together and served them. I made cucumber salad to go on the side. For that I peeled & cubed one whole cucumber, salted the cubes lightly, stirred in a tablespoon of mayonnaise, then let it set in the refrigerator until time to serve…
Easy – and delicious!! – low carb dinner. 😀

That certainly doesn’t “look” low carb, does it? Looks delicious π We pick up the precooked chicken strips often for salad nights, add veggies and ceasar dressing, and they really do make a nice fast dinner, and you can add a lot of them to the plate without adding guilt. Love that.

It was really tasty. And even great as leftovers for breakfast this morning! π I love adding the chicken to salads too, or eating them cold dipped in Caesar dressing – just as a snack.
The steak strips are also good sizzling, topped with shredded cheese & sour cream as a super easy low carb dinner. I like to keep this grocery item on hand all the time!

Definitely easy. I love keeping it simple. Especially during the hot summer days. And well, to be fair, anything that cuts down on time in the kitchen is always good. LOL.

These kind of recipes along with your previous Low Carb Food List are transforming my diet! I’m happy to report that, while I have not been able to get my carbs down below 20 grams like you, after 7 days following your blog I have eliminated so many carbs from my diet and am eating so much more protein that I’ve lost 3 pounds in my first week! (By the way, I’m using the Fat Secret Food Diary to log all my food and exercise. It’s a very easy and seemingly accurate system. I also joined their “Lose 10 pounds by the end of the summer” Challenge. Sounds doable, and they have good recipes on the site.)

Try looking near the roasts and ground beef. That’s where I found it. They have other convenience foods there too like pork roast in au jus etc…

I just made this for supper tonight and it was wonderful. I had to make a few adjustments because my grocer was out of broccoli slaw so I substituted with regular cabbage slaw and a package of a vegetable/broccoli stir fry blend. I made the cucumber salad, too β¦ it was all SO GOOD and my husband and daughter loved it!!! Thanks Lynn for sharing. Iβve never been a big prepackaged person, but I have to admit, the chicken and steak strips were really, really good and quite a time saver, too. I think I made supper in about 15 minutes and didnβt have to heat up the kitchenβ¦ Woohoo!
