Itโs been a few days since Iโve shared my low carb meals, but I assure you I HAVE been eating. ๐ I know you were sitting over there assuming I just hadnโt had a meal since Tuesday. Ha!
Itโs just been a busy week, is all. Iโm in Atlanta attending the Savvy Blogging Summit, so between packing and making the road trip and catching up with friends once I got hereโฆ I havenโt had a chance to post. But I did find time to eat. ๐
I attended this event last year, in July 2011, and loved it! You may remember that it was at the Cheyenne Mountain Resort in Colorado Springs. That was *such* a nice location. Much better than downtown Atlanta, of course. Weโre staying in the Hotel W, which is nice โ but definitely not Colorado Springs. Where that was a very relaxing experience with a beautiful view, the Hotel W is quite dark and loud โ trendy and club-like, with the lovely sound of traffic and construction on all sidesโฆ
I live in Tennessee so itโs just over 3 hours drive to Atlanta. I made the quick road trip on Wednesday. Interestingly, when I did my weigh-in on Wednesday morning, my weight hadnโt changed at all. Iโd lost a total of six pounds since I started back a week ago Monday, and generally I lose around a pound a day eating low carb.
Of course there are no scales here at Hotel W, so I wonโt get to weigh-in again until Monday morning after I get home. I canโt wait to see the numbers! Itโs keeping me motivated to โeat cleanโ while traveling this week. ๐
To catch you up, on Tuesday I had quick & easy low carb freezer meals again. I made Gortonโs Lemon Butter Grilled Salmon and Green Giant Green Beans & Almonds for a late breakfast:
It was nowhere near as good as Mondayโs Tilapia & Creamed Spinach, which I ate all in one sitting (lol). So I had half for breakfast and the other half for lunch. Blech. It was okay. I definitely liked the Tilapia much better! Then I made a big juicy half pound hamburger steak for dinner that night. So my total for Tuesday was 11 net carbs:
Gortonโs Lemon Butter Grilled Salmon (1 net carb each = 2 total)
Green Giant Green Beans & Almonds (3 servings in box, 3 net carbs each = 9 total)
Like I said, I was a little surprised I didnโt weigh in lighter Wednesday morning, but oh well โ thatโs to be expected here and there when you weigh daily.
I skipped breakfast Wednesday morning (oops!). I was busy packing and getting ready to head out. I ended up grabbing a low carb burger from Hardees on the way โ which was just lettuce, 1/3 pound hamburger & cheese.
Hardeeโs is similar to Carls Jr., by the way, depending on your location. Their thickburgers are delicious! They also have big crisp fresh lettuce leaves, instead of shredded lettuce like most fast food restaurants.
I had a bag of mixed nuts on the way (4 net carbs), and a large Iced Coffee from Starbucks. I ordered it with heavy whipping cream & sugar free vanilla syrup. Yum!
I finally made it to Atlanta (much later than I meant to, lol) and had dinner with my friend Angie at the Hotel W restaurant. It was so dark in there we had to use our cell phone lights to read the menu. ๐ We decided to split a small order of Calamari before our meal, and I asked for bleu cheese dressing as a dip for mine. The other sauces are typically very high in sugar/carbs, and the light breading on the Calamari was enough of a carb-splurge for meโฆ
They had a beautiful spinach and goat cheese omelet on the dinner menu, served with a side salad, which is what I ordered:
I only ate the omelet, which was absolutely fabulous!, and took the salad to go. All said and done, a decent low carb day, even while traveling. ๐ Now that Iโm here at the Hotel W, Iโm eating โwith the event.โ The Savvy Blogging Summit team always feed us so well! They put out great spreads including meals and snacks โ and tons of carbs, of course โ but I did really well sticking to low carb foods last year.
