I woke up STARVING on Sunday morning. Thatโs so unusual for me. Iโm not a big breakfast eater. I decided to just make a quick bowl of Tuna Salad so I could get on with my day. Unfortunately my can opener has completely stopped working for some crazy unknown reason, so I got a good morning workout just trying to get into the stupid can. ๐ But first I tore apart the entire kitchen looking for my Pampered Chef can opener โ which I know is here somewhere! No luck. *pout*
I did finally get the can open and have breakfast, but while placing an order on Amazon later I also ordered a new can opener. I didnโt really do any research, just grabbed the first one I saw. I mean, a can opener is a can opener, right? Not including mine which doesnโt work at all, of course. LOL. I got the Amco Swing-A-Way 407BK Portable Can Opener, Black, by the way (pictured above). I suppose I could have run out to the store โ but you know me, I enjoy shopping about as much as I enjoy cooking. ๐
But Wait! Brace Yourselfโฆ I actually COOKED Lunch!
Yes, you heard that right. Itโs not a typo. I โcookedโ yesterday. If you can actually call it that, LOL. It was a super easy one-skillet meal that literally only took a few minutes to put together.
But MAN was it good! ๐
(no can opener required, thank goodness -lol)
I used half a bag of Tyson Breakfast Sausage Crumbles, and Birds Eye Steamfresh Creamed Spinach. The sausage crumbles cook in a skillet in about 5 minutes. There was very little grease, so I just added three eggs (scrambled in a cup first).
The spinach cooked in the microwave for five minutes while the sausage was cooking, so I added a few heaping spoonfuls of that into the skillet after the eggs:
It looks pretty gross in that picture, I know. Yuck, lol. I also added some cubed Colby Jack cheese. No spices or salt even, and it turns out it didnโt need it. I cooked it (thereโs that word again, lol โ basically I stirred it around) until it was slightly browned:
After it was done I topped it with a โDollup of Daisyโ โ meaning a spoonful of Daisy brand Sour Cream. ๐
Oh my goshโฆ it was DELICIOUS! In fact I ate the entire skillet! It was really meant to be two servings โ one for now, one for later. Fortunately the total carb count for both servings was approximately 4 net carbs. ๐
You could add all sorts of things into a one-skillet low carb meal like this. A bit of onion or roasted tomato, mushrooms, you name it. Itโs less a recipe, and more a โthrow whatever you have in the kitchen all into one skillet and top it with sour creamโ kind of thing.
Since I expected to have that second serving left, I had to come up with something else for dinner. I had a single slice of the leftover thin crust pizza from yesterday. Actually, I wasnโt very hungry after my huge lunchโฆ
Oh-that sounds good and I think Iโll make that for dinner tonight!!! Thanks! Iโve got some turkey breakfast sausage in the refridge right now.
I made something so good and easy for lunch yesterday. I buy the Joseph low carb pitas(4 net carbs) at Walmart and I made a pizza with one. I used the Walmart brand pizza sauce(4 net carbs per 1/4 cup, only used 2 tbsp), some Armour Turkey Pepperoni, and Italian blend of shredded cheese(Walmart brand of course) and added some fresh Basil I grow and popped it in the toaster oven till toasty and it was DELICIOUS and fast!!

This is a great idea. My girlfriend and I have been going โlow carbโ for almost 2 months now. She has lost about 10lbs and I have lost 20lbs. The only issue weโve faced is that while we have a lot of recipes, we start to get bored with the same meals. Seeing this one gives us something to add to ours.
