I am living proof that you do not have to be an expert chef, or even enjoy cooking, to lose weight fast on the low carb diet. LOL. I’m sure you’ve seen plenty of proof of that in my posts this week. 😉
I do like to cook sometimes, and there are tons of great low carb recipes out there for people who like to experiment in the kitchen. I shared some easy chicken recipes recently you may like, for example.
My goal right now is to make it EASY though, as I “fell off the wagon” and needed a smooth transition back to low carb eating…
I’m a quirky eater, I admit. I don’t eat on a schedule, or by the clock – I eat when I’m hungry. And I’m just as likely to have pot roast for breakfast as I am eggs for dinner. In fact, yesterday I had grilled chicken strips for breakfast:
These are Tyson Grilled Chicken Breast Strips and you can find them in the meat section of the grocery store. Tyson’s site says they’re frozen, but the package I get is not. They’re very tender and tasty, and great for things like stir-fry or in low carb tortillas. Tyson also makes grilled steak strips, which are great too.
I just threw the whole bag in a skillet, put it on medium heat, and added a bit of Worcestershire & Mrs. Dash for nice flavor. I had a colby/jack cheese stick on the side. Weird breakfast I know, but I was tired and it was hot yummy food in a few short minutes – literally, less than five minutes from refrigerator to plate! And hardly any carbs at all (3 at the most), which is a plus. 😀
For lunch I decided to have a nice Saturday Splurge and ordered a medium Thin & Crispy Pepperoni Pizza from Pizza Hut. It’s 20 net carbs per slice. I had two smaller slices, and didn’t eat the end/crust at all – then ate the toppings only (pepperoni & cheese) off three more pieces. YUM! (Ideally you should just eat toppings only.)
My great dane, Slim, was the lucky recipient of all the crust I didn’t eat. This is how we BOTH felt after that meal:
LOL. Needless to say, we took a nap after lunch. 😛
For dinner I was going to whip up a big one-skillet meal of sausage, eggs & cheese. But I decided that was too much trouble (lol) and I didn’t have any chopped spinach in the house – which I really thought would *make* the meal. So I opted for the Tyson Grilled Chicken Strips again – quick and easy, and hardly any carbs at all. Which was important since I ate my total daily limit with that big greasy pizza!
Like I said, I just sprinkle a little Worcestershire or Soy sauce in the pan with them, and on medium high they’re beautifully browned and absolutely delicious in a matter of minutes:

Yesterday wasn’t too bad, that is if I stop counting about 5pm! lol
Breakfast was diced bacon fried up crisp, (drain grease), then add diced onion to sautΓ© when translucent. I added beaten eggs to scramble and just before taking it out of the pan I added a bunch of crumbled queso cheese on top (similar to feta).
Lunch was fresh veggies and pork tenderloin – I diced up a lot of carrots, cauliflower florets and onions sautΓ©ed until tender, then in the last few minutes I added 2 giant handfuls of chopped up kale and raised the heat up to crisp the kale edges a bit (like roasted in the oven). Cooked until the kale lost it’s bitterness (just a few minutes really). Sliced some left over pork tenderloin put on top of the vegetables, sprinkled diced green onion on top. Yum!
Supper was an entirely different matter! I pampered myself because of all my computer problems this week. LOL Ken? Well, I don’t know what excuse he used! But besides the margaritas, we ended our meal with a giant sopapia meant for 4 (we were just 2) with chocolate sauce, ice cream, honey drizzle and whipped cream on top! OMG, it was such a warm and fuzzy treat after a stressful weak, but I only splurge like that a couple of times a year. Today I’ll be back on track.

You’re much more of a cook than I am – your breakfast and lunch meals sound delicious! I don’t eat carrots (or starchy vegetables) except on rare occasion and at a minimum though. I hope you at least *enjoyed* your splurge. That’s the rule, you know! π *cheers*

Lynn⦠That pizza looks so GOOD! As you know I fell off the wagon for a while too and as of last week I kicked my butt into gear and back to eating low carb. Yesterday, I thought I was going to be bad and I had planned for it since I was going to a racing event. Surprising enough, I behaved for the most part.
So, yesterday I had a good breakfast consisting of a hamburger steak and a side of eggs. I then headed to the races and on my way I stopped and bought beer. I enjoy drinking a good beer (which means lots of flavor and carbs), but I decided I would tone it down and get some Michelob Ultra (2.5 carbs/bottle) and a bunch of high carb snack foods for the gathering at the races.
It turned out that it was almost 100 degrees yesterday at the races and it was too HOT to eat. Oh, my friends were BBQing a Mexican feast of food and that why I knew I was going to be bad. Needless to say, the heat helped me stay on the right path. OK, I did have three potato chips and 6 beers over the course of 6 hours.
Hmmβ¦ Iβm now getting hungry while I am writing this.
After our team kicked butt at the race, I came home and warmed up leftovers from the night before. That consisted of Mock Mashed Potatoes with brown gravy and a grilled flank steak. The Mock Mashed Potatoes were better than the first night! The flank steak was better the first night. However, the meal was very satisfying π
Speaking of food, it is now time for me to make breakfast. I think I have what is left of the flank steak and scramble some eggs.

I enjoy having a beer now and then – do you like the Mich Ultra?? I’m impressed with how well you did yesterday given all the delicious options! Thank goodness for the heat, hey? LOL. Extreme heat tends to curb my appetite too. I don’t do heat very well – I melt. π
How do you make your mock mashed potatoes? I know cauliflower, but is there a trick to making them smooth/creamy – or a good consistency?
