I’m still sticking to easy low carb foods, and keeping it really simple. Mainly because it’s summer (too hot to cook much), and because I’ve been super busy lately – so I’m just going with things I can grab on the go, or that take very little thought or preparation.
Yesterday I had a couple of turkey & cheese roll-ups for breakfast, with a handful of almonds.
For lunch I had a big bowl of tuna salad with string cheese. Then for dinner I made a hamburger steak, and had the leftover tuna salad on the side.
Like I said, super easy…
The only thing I actually had to cook the entire day was the hamburger steak! I love how easy it is to eat low carb, and how you can eat plenty of foods that require little to no preparation at all. It’s really great for someone like me that doesn’t care to spend all day in the kitchen. 🙂
Earlier that morning I had a Vanilla Atkins Shake with a string cheese, and a coffee. That’s actually the first time I’ve bought or tried the Atkins Shakes, and honestly I only got them to use as coffee creamer because my store was out of everything else I would normally use.
(I know, go figure!)
I bought Vanilla and Milk Chocolate Delight, and you know… they actually made great low carb “flavored coffee creamers”! LOL.
Fortunately I talked my teen daughter into making a trip to the grocery store, so I now have cream and other low carb foods in the house – like hamburger, bacon, eggs, broccoli, etc.
So I got brave and decided to drink the rest of the Atkins Shakes on their own. I was a bit skeptical after Nicole said she thought the Vanilla tasted like baby formula, LOL.
I actually liked them both! The Milk Chocolate Delight and the Vanilla.
Of course, years ago I drank the SlimFast shakes and liked those too. The Atkins Shakes are really sweet, so they hit the spot when you have a sweet tooth or you’re craving something chocolate. Which is great, because too much of the sugar free chocolate candy I like so much REALLY hurts my stomach. 😛 Not the case with the Atkins Shakes, which is cool!
Anyway, that’s my Low Carb Journal for yesterday (Monday). I actually made it through an entire day with no take-out! haha. What about you – are you doing a lot of cooking lately, or keeping it simple? I would love to hear what you’re eating! 😉
Thanks for posting this, Lynn! Especial the part about you trying it by itself. I want to get back to eating gluten free (which I really hope this are) and need something I can grab on the go in the mornings just in case I can’t make anything for breakfast. This looks like it might fit the bill.
Lynn, try the Atkins Dark Chocolate Royale sometimes – it is not quite as sweet as the Milk Chocolate. I drink one many times as a meal replacement. The Mocha is good also for a coffee flavor.

I througly enjoy receiving your emails, nice to know that your not alone outthere, the last couple of days I have been researching on you tube and goodle the ( ideal protein diet ) its easy and a great way to jumpstart your lowcarb diet, also found that you can purchase some of the food on ebay, and that there is also an alternative if it is too expensive which is found on ( centable.com ) , have you heard about all of this and what do you think ! people are losing as much a 1lb per day and not hungry.

I’m finally back on low-carb after a seriously long break of like six months. I’m loving it again. I’ve been eating a good variety so far.
Sausages, peameal bacon (maybe a Canadian thing), bacon, hamburger, pork chops, chicken, almond milk, water, coffee, cheese (goat, feta, string, marble), peanut butter, easy mixed greens salads in the container have all been on my menu this week!
One of the things I do love about low-carb is that I get creative with my food much more so than when I’m not on it.
I’m going to try an atkins shake, never tried those!
Oh and can’t forget chocolate… I like my 85-90% dark chocolate. I mixed some in my coffee the other night too and it melted into a nice mocha cafe, lol… just needed whipped cream..
