This is a very versatile recipe that you could get creative with to do all kinds of fun low carb baking! I love creative keto swaps like chayote squash in place of apples.
I’m thinking this would make a delicious breakfast treat, warm OR cold, and would be great to add to your keto meal prep rotation!
👩🍳 Low Carb Peanut Butter Apple Caramel Bars 🥜🍯
This recipe uses a 1/2 cup of Chayote “Apple” Topping recipe.
Chayote “Apple” Topping Ingredients:
16oz chayote squash, peeled and chopped
5TB Brown sugar sub
3/4tsp cinnamon
1/8tsp ground ginger
Tiny pinch nutmeg
1tsp lemon juice
1tsp Apple extract
2 pinches xanthan gum
* (apple Topping modified by Low Carb Yum Apple pie recipe)
Bars Ingredients:
1/2c Lolli’s Peanut Butter Macadamia Cookie Clusters, pulverized
1/2c Cut Da Carb, dried out and pulverized
1/2c no sugar added peanut butter
1/4c softened butter
1/4c brown sugar sub
1/4c peanuts, finely chopped
6oz cream cheese, softened
2-3TB powdered erythritol
1 egg
2/3c no sugar added peanut butter
1TB lemon juice
1/2c chayote “Apple” topping
Sugar free caramel topping
➡️ NOTE: I prefer Swerve Sweetener for the powdered sweetener & brown sugar substitute. That’s what I use for all of my keto baking. You can get the Swerve Baker’s Bundle on Amazon here. (that’s the best deal)

➡️ NOTE: “Cut Da Carb” is a popular low carb flatbread that is sold exclusively online. You could substitute this ingredient with something similar, or I thought to just use a full cup of Lolli’s Peanut Butter Macadamia Cookie Clusters instead of 1/2 cup of each.
* If you do that, you may want to “sweeten to taste” – which I usually do anyway as I don’t like my desserts overly sweet, and the sugar free syrup drizzle is deliciously rich!

Recipe Instructions:
Line an 8×8 baking dish with parchment paper.
Preheat oven to 350 degrees.
Beat together 1/2c peanut butter and butter. Beat in brown sugar substitute. Beat in Lolli’s Cookie Clusters and Cut Da Carb. Reserve 1 cup of this mixture and set aside. Press remaining mixture into the bottom of baking dish. Bake for 12 minutes.
Meanwhile, beat cream cheese and powdered sweetener until smooth. Add in egg, 2/3 cup peanut butter and lemon juice until combined. Fold in chayote topping. Spread over crust. Stir peanuts into remaining peanut butter mixture and carefully spoon in small increments over cream cheese mixture evenly, smoothing as you go.
Bake 25 minutes.
Cool completely and chill several hours before serving.
Drizzle with sugar free caramel.

I think this recipe would be amazing with blueberries added 🫐 but I’m on a SERIOUS blueberry kick lately!:) You could also add white or dark chocolate chips… or melt sugar free white chocolate chips and use that as the drizzle on top instead of syrup.
It would be really good layered with a low carb cheesecake recipe too, plus raspberries, sort of like a dessert lasagna. 😍 I would definitely eat that for breakfast!
