As promised in yesterday’s post, I wanted to share the low carb foods I’ve been eating for the last few days.
I’ve been keeping it super clean to kick start the New Year weight loss – which is working quite nicely. 😉
One thing about going into Ketosis is that it leaves you edgy (cranky!), having headaches, and restless – which makes it hard to sleep at night. Or nap, which I love to do. LOL.
I discovered it helped A LOT to drink water – and to save my carbs for the evening meal.
For example I might eat eggs for breakfast, tuna or hamburger steak for lunch, then have my cheesy broccoli on the side with dinner. I found it helps me sleep much better.
Many of you have said that you like seeing my low carb foods, as it helps give you ideas for new things to try. I eat a little quirky I know, but keep in mind that I’m usually eating on the go or cooking for one – which makes a big difference. You can easily incorporate some of these ideas into your bigger meals though. 🙂
Low Carb Foods I’m Eating
Breakfast has been either meat, eggs, or meat & eggs. One of my favorite take-out breakfast plates is this tenderloin & eggs from a locally owned joint:
Yum! Other days I just whip up 2-3 eggs at home. I’ve been eating them plain, just lightly salted, and without my usual handful of shredded cheese – just to keep it clean:
Hamburger Steak has been one of my favorite low carb foods, a staple really, this past week. I will eat it for any meal too – breakfast, lunch, dinner or even a bedtime snack. 🙂 It’s fast and easy, and filling, and I just throw on some garlic salt and a little Mrs Dash Original Blend:
Another quick & easy is Tuna salad. I think I ate three cans of tuna in the last week. I got bored with it so I topped it with shredded Colby Jack cheese one day, and stirred in Parmesan cheese another:
Now this is just a salad, but it was too dark to take a good photo of the rest of my meal – one of my favorite low carb restaurant choices: O’Charley’s. I had a caesar salad, and cedar plank salmon with loaded broccoli:
On the go, I grabbed a couple of plain hot dogs from the Sonic Drive-In, which I dipped in mustard for a quick low carb lunch:
Arby’s is another favorite for quick low carb foods on the go. This was the Roast Beef Max – their largest regular roast beef sandwich – and I just ate the meat:
Mmmm, hot wings! These are mild classic bone-in wings from Applebees. They are 6 net carbs (for the sauce) but these had very little sauce on them. When they come too saucy, I blot them off good with a paper towel to lower the carb count:
This is the Sirloin Tip beef roast I made in the slow cooker on Sunday. It was a good 3+ pounds of meat, so I ate on that for several days which was GREAT. 🙂 I did have a few small carrots here and there, but mostly meat:
As you can see, I’ve been eating VERY few carbs. I usually eat more veggies & salads with my meals, but my goal has been to reach Ketosis (achieved!) and drop some weight super quick to get back on track. I’ll be adding in my usual vegetables etc over the next week or so. In fact, I had half a pan of broccoli for dinner last night. 😉
My scales are standing still at 7 pounds lost, and will for another day or two I expect, as I drank a half bottle of my favorite wine on Sunday evening. 😀 It was worth it, LOL. Keep in mind if you do drink, even if it’s low carb like Rum, you’ll experience the alcohol stall.

I’ve been doing Zumba too, because one of my main goals is not only to lose weight, but to get in great shape over the next year. It’s such a fun workout! 😀

I’m a Get It Guide insider for Shine from Yahoo! and they sent me the Zumba workout package to review. I’ll be reviewing that and doing a giveaway on the blog soon. Tried the Basics DVD yesterday to learn the moves and I LOVE it! The music is awesome.
A long time ago I went to a Zumba class at a gym and hated it. It was NOTHING like this so I’m very excited to get going with this workout when I return from Oklahoma.

That is so awesome! I’ll have to check that out. I really enjoy doing it at home too. I have never done a class, but I really LOVE the dvd set. π Mine has 6 disks with sculpting, dance, 20 minute express workout, etc. Love the variety!

Would you share your recipe for the slow cooker sirloin tip beef roast? I absolutely love slow cooker pot roast.

Sure! I just bought a nice sized Sirloin Tip Beef Roast – enough to eat on for a few days, because that’s easy for me, so I got about 3 lbs. It was A LOT of meat. LOL. I used a packet of McCormick Pot Roast Seasoning, 1 cup of warm water, put it in the slow cooker, put the roast on top of that, and turned it on high for 6 hours. I usually do 5 hours, but I usually have a smaller cut of meat.
I cleaned and cut 2 pounds of carrots, and 2 large baking potatoes, and added those later. The carrots about 2 hours later, the potatoes 3 hours later. I added those for my daughter. π That’s it!

I agree. I also like to eat like a queen in the morning and a pauper at night. (That little thought comes courtesy of my daughter, Nicole.)
I load up on proteins in the morning with about 3 or 4 eggs, scrambled up with lots of cheese and lots of meat mixed in. Yesterday I had some leftover grilled pork tenderloin so I just sliced up a big serving and stirred that in, as well.
I also drink 1 gallon of green tea (home brewed using 4 teabags, no sugar) each day – so that’s a gallon of water every day.
And, yes, I believe saving the carbs for dinner helps me sleep. Of course those carbs are what I call “close to the source” carbs; like cabbage, broccoli, celery, nuts, and a little brown rice or other un-processed whole grain.
