I’m back to my home workouts, which feels SO good!
It can be really hard to MAKE that a daily habit, but I’m pushing myself on it. 😉
In my last Food Diary I was eating leftovers from a delicious Applebee’s low carb meal the night before…

Here’s what I’ve been eating since then, for the last four days. I should say upfront, it was a busy/lazy few days of just grabbing whatever was on hand or convenient. But sometimes that’s just life! Like this morning – I’m eating a simple snack plate of nuts & cheese while I work.:)
My Low Carb Meals on Thursday
I had Blueberry and Banana Nut Low Carb Nush Cakes at my desk, which are the BEST replacement for blueberry & banana nut muffins. 🙂
They’re organic, fruity, delicious & made from healthy ingredients!
For lunch I had my leftovers from Applebee’s the night before: grilled chicken topped with cheese & bacon with steamed broccoli.
I actually had the Blueberry Nush Cake for breakfast, the leftovers as a late lunch, then the Banana Nut cake that evening.
It may not seem like a lot of food, but my lunch was VERY filling – oh, and there were also some leftover wings I ate. I forgot about those! 🙂
My Low Carb Meals on Friday
My breakfast choice on Friday morning was TERRIBLE lol…
I honestly just grabbed a few things I had on hand and threw them all together, because I was out of groceries. 😛
It was edible, just WAY too sweet for my taste. 😉
I had Snickerdoodle NUI Cookies (which are already pretty sweet) with Legendary Foods Peanut Butter Chocolate Chip Almond Butter, a very little bit of cream cheese I had left (less than half an ounce), some raw pecan halves – and I drizzled ChocZero chocolate syrup over it. Just a TBSP, but still!
Normally I would use plain natural peanut butter or almond butter and more cream cheese to make my “cookie stacks” less sweet. 😉 And also use berries instead of chocolate. Oops!
If you love sweets, you might have really liked that bowl of treats lol. I had to drink A LOT of water with it!
I took my lunch break on the river to float in the sunshine for awhile, and took a large Vanilla Ketologie Shake in a Tervis Tumbler with me to enjoy.
I mixed it with coffee, but their shakes are just as good with water!
By dinner I was famished and definitely ready for some REAL FOOD so I called in take-out from a favorite little local place.
I got a half pound hamburger steak (“add cheese, please!”) with roasted vegetables and a side caesar with no croutons – just romaine & mozzarella.
Plus ranch for dipping. 🙂
I ate ALL of that dinner too. That hit the spot!!
My Low Carb Meals on Saturday
I had a keto bar for breakfast that’s 4 net carbs with no sugar alcohols. I had to grab something quick while I was heading out the door for an appointment.
I had more of the McDonald’s coupons for free McMuffins (those came off the McCafe coffee bags) so I got 3 of those while I was out running errands later.
I just ordered them with no cheese and ditched the bread, to make it easy. 😉 Their cheese is 2 carbs per slice, btw.
That actually took me two meals to finish, or maybe a meal and a snack.
Then for dinner I was craving a hamburger, so I went to Hardee’s and got the Frisco Burger (with an extra slice of cheese) on a lettuce wrap. They’ll make anything on the menu low carb for you at Hardee’s or Carl’s Jr:
My Low Carb Meals on Sunday
I had big breakfast yesterday of four eggs scrambled in butter with colby jack cheese. I use a full tbsp of butter to scramble them in, and about half ounce of cheese per egg, so it’s very filling – and delicious! 🙂
I was in a “get things done” kinda mood in the afternoon and didn’t want to take time out to cook or go get something, so I whipped up a quick “Keto Cookie Sandwich” with FatSnax chocolate chip cookies and almond butter. 🙂
THAT was delicious!
I don’t remember the FatSnax cookies being THAT good the last time I tried them! They’re WAY less sweet than other keto cookies I’ve had, more like slightly sweetened shortbread – which I love.

That nut butter cookie sandwich was so good… I just had another one for dinner. I was actually tempted to make another one for breakfast this morning, lol.
I’m back to doing my daily body weight / strength training, and I *did* figure out the proper names for the hip lifts (Glute Bridges) and the butt kicks (Donkey Kicks) lol – I need to update that in my MyFitnessPal account.
Twice this week I took my float down to the river to enjoy the sunshine and the afternoon. That was the best cheap entertainment from Amazon, lol.
It inflates/deflates quickly, folds up compact and fits in my daypack, and is perfect for a quick trip to the river – or for hiking to a swimming hole! 🙂
It’s been awhile since we talked about Know Foods, but they sent me some of their new products to try.
The thing that interests me most is their new Garlic & Herbs Keto Thins. I love their low carb crackers! That’s probably my FAVORITE Know Foods product, the Thins.
I think I’ll have those for lunch today with Tuna Salad so I can try the new flavor and compare the two. If you’ve tried them already, I would love to hear your thoughts…

Is there an easy way to find out net carb on food. I am just starting a Keto diet

Net carbs is Total Carbs minus Fiber. You can also subtract sugar alcohol if it’s a sugar free candy for example. See: https://www.travelinglowcarb.com/230/how-to-figure-out-net-carbs/ for an illustration on that.

I’m so glad Know has changed the packaging! I stopped buying them in the bags as by the time I got them they were so broken up I had to use them for everything but crackers. LOL it’ll be interesting to see what you think of the new flavor.
Me too Michele – I love the new boxes. π I still haven’t tried them yet, but I will probably have them with tuna salad today or tomorrow, so stay tuned! They really are the best low carb crackers I’ve ever had. MUCH better than flax crackers. π
