I finally get to meet Kyndra Holley of Peace Love and Low Carb tonight. 🙂
Kyndra is in the Nashville area on her Craveable Keto Book Tour and several of us are meeting up for dinner for a fun low carb meal and social get-together before the book signing event.
I’ll share photos with you in my next post, but before I head out I wanted to share my Food Diary from yesterday with you – plus a few tips & topics we’ve been discussing around the web this week…
Staying On Track When Dining Out
On Monday I shared this post about dining out and asked:
When you go out to eat, do you feel like you’re missing out on something? Or how do you feel if you DO indulge in off plan foods?
That made for a great discussion!
Feeling Deprived vs Feeling FREE!
Personally… I missed out on SO much when I was overweight, unhealthy, in pain and insecure. I remind myself of that if I ever feel “deprived” now. 😉
I used to THINK the opposite, that not eating certain foods felt like depriving myself. I didn’t realize that by indulging, I was depriving myself of a quality of life I could TRULY enjoy…
I have some more thoughts & updates to share with you, but first here is my Food Diary for yesterday along with some interesting notes about each meal choice…
My Low Carb Meals on Friday
I got up and decided to bake my Low Carb Coffee Cake Recipe.
This time I baked it in a glass dish instead of a bundt pan (smart! lol) but it would do even better in a 9×9 or 9×11 well-buttered glass baking dish – because it’s SO moist! 😉
I had 1 1/2 servings of that with 18 grams of blueberries (1/4 cup) and 4 small sliced strawberries. Delicious!! And a welcome change from eggs.;)
For lunch I had sausage links & cheesy eggs.
It’s three eggs scrambled in butter, with 1.5 ounces of colby jack cheese cubed off the block. The eggs and cheese, real food. The sausage: questionable 😛 lol…
I have NO idea what compelled me to pick this up at the grocery store last week, but this is the sausage links I had for lunch – and this particular brand definitely has some sketchy ingredients – including soy (which I try to avoid for the most part).
No big deal really, it was cheap and fast and tasty.:)
I do eat clean (real food, and real simple) most of the time, and living low carb has made me VERY conscious of ingredients and nutrition – but not to the point that I’m a total “food snob” or won’t enjoy a diet coke now and then, even. 😉
I will definitely pay more attention to the label before choosing sausage links in the future though!
Dinner was a nice simple combination of healthy foods…
This meal was literally freezer-to-table and done in 10 or 15 minutes, with enough food to serve three people.
Someone asked me recently about cooking for a family vs eating out or eating alone all the time. LOL… I usually only ever take a picture of MY plate. 🙂
This was cauliflower rice and Tyson Grilled & Ready Chicken Strips cooked in the same skillet with real butter, along with Spicy Chili Pili Nuts – which add a buttery soft crunch and a nice kick!
All served over a bed of fresh baby spinach and sprinkled with fresh parmesan…
Blueberries, strawberries, eggs, spinach, chicken, cauliflower, Pili Nuts, and the almond flour used to bake the coffee cake for breakfast… a good variety of nutritious foods for a single day!

Ideal LCHF / Keto Macro Tracking Explained
My favorite meal of the week was this delicious bowl of low carb cereal. 🙂
I used KZ Swedish Keto Cereal and Macadamia Milk and added diced blueberries. Plus crumbled up some leftover sugar free snickerdoodle cookies in it just for kicks!
That Macadamia Milk came in the last Keto Krate box, and it’s the second time I’ve tried it. It’s SO good! Much better than almond or coconut milk. 🙂
I got out for a GREAT hike earlier this week too, which made me SO EXCITED that Spring is almost here!!
I absolutely cannot wait to get back out on the trails and in the waterfalls…

I recently joined the KetoForBeginners FB page. Several people said that if you are not losing weight, then youβre not eating right. Well on an avg day, I eat breakfast: 2oz bacon w 1oz of neu cream cheese; 1-2 string cheese(snack); 2 slices turkey, cheese, pickle roll ups (lunch); nuts(snack); chicken, green veggie(dinner); 80-100oz water. After 10 days, I lost 2 lbs. I tend to go back and forth bec I get discouraged and binge. Then itβs like a merry-go-round overshadowed by failure. Do I just need to push through for a full month and stay off the scales? I even bought the Almost Zero Carbs plan for receipes.

Hi Debi,
That’s not necessarily true – that if you’re not losing weight, you’re not eating right. There could be a variety of factors at play, including normal weight loss trends for holds & fluctuations.
That said, the only real way to know is to track your macros daily and consistently, and track your own weight loss trends over time. Not just a few days or a few weeks, but at least 3-6 months.
I finally discovered my own (normal!) weight loss patterns by staying consistent long enough to actually see how my body responds in phases.
I did what you’re doing for a LONG time – and didn’t see any real success (true success) until I stopped stopping and stopped starting, and just decided to LIVE low carb and enjoy the lifestyle.
That dieting roller coaster and yo-yoing is enough to drive you mad π lol. It almost did me! It was an emotional ride for sure, and one I finally wanted OFF of. That… was the best thing I ever did for myself – and for my weight loss goals. π
