It’s been a crazy, busy, full, (thankfully better!) whirlwind of a week since my last note to you on Monday! ๐
In that note I was talking about lack of motivation, and kick-starting your butt in gear when you have to.:)
That’s exactly what I’ve been up to!
I also did a FUN photo shoot on Wednesday for an upcoming feature in Woman’s World Magazine. You’ll be able to see me in the August issue! ๐

My Low Carb Meals This Week…
My meals have been all over the place this week, but my weight has NOT. It hasn’t budged in days, so I’m holding steady (a little up!) at 142.4 pounds.
Regardless of what the scales say, I do FEEL leaner than I did earlier this week – less bloated, more energy, etc. I’ll show you some pictures in a minute. ๐
I’m not at all concerned with it, and just going with the flow through a super busy / chaotic month. Admittedly I’ve been eating some convenience foods (low carb of course), missed a meal here and there, my sleep is off, etc. But I *am* back to getting regular exercise and working on straightening out my sleeping/eating schedule.
You’ll find that weight loss is not linear. You’ll have holds and fluctuations as a very normal part of your weight loss trend, but if you stay consistent it will be an overall downward trend.
And of course if you do intense workouts, like my two serious hikes this week, the scales generally won’t move for a few days due to a normal “muscle recovery” period. The key is just to focus on living a healthy active lifestyle, and let the scales say what they will – because they are NOT the whole picture.;)
Monday’s Low Carb Meals
Monday was a very long day where I got up early and stayed up late, so I had four “meals” that day. Starting with cheesy eggs scrambled in real butter with colby jack cheese:
For lunch I had my favorite “cereal” which is an easy gluten free and LCHF breakfast idea with GREAT macros. It’s just 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese & 4 small diced strawberries. (5 net carbs, 85% healthy fat)
For a late afternoon low carb snack I had two Ginger Turmeric FatSnax cookies (YUM!) with an ounce of cream cheese – made into a LCHF cookie sandwich. ๐
For dinner (lol, I was exhausted!) I was still at my desk wrapping up work… and had a bit of each of two flavors of Halo Top low carb ice cream with some pecan pieces. ๐ That stuff is SO good!!
I also drank 6 full mugs of coffee, with coffee-mate sugar free creamer…

Tuesday’s Low Carb Meals
I got up at 3:30am on Tuesday. ๐ฏ lol – I told you I’ve been off schedule!
I started the day with a delicious “LCHF dessert breakfast” with the Chocolate SmartCakes. These little gluten free low carb cupcakes are ZERO net carbs and come in 3 flavors, and they’re fluffy & delicious!! ♥
I had two Low Carb Peanut Butter Fudge pieces leftover, which is basically just peanut butter & coconut oil mixed together. So I melted those, and topped the cakes with cream cheese & fudge sauce and pecan pieces:
Wowsa! ๐ DELICIOUS!!

I got up early that day to finish my work so I could get out for a hike. ๐
On my way to the mountain, I stopped at McDonald’s and grabbed “3 sausage patties and 3 round fried eggs, please.” (that’s exactly how I ask for it)
I had a GREAT hike on Tuesday…
I spent almost 7 full hours in the woods hiking technical trails with steps and inclines, getting a really good thigh workout for the day. ๐
I also played in four different waterfalls, climbed a few hills, and decided to work my arms and upper body on this huge rock formation above Sycamore Falls:
It was an AMAZING workout! ๐
It was also a very hot day so I had a nice swim, then found a cold flat rock to sit on above Hanes Falls to eat a few bites of cheese & nuts. I had worked up a good appetite but I was also exhausted, and still had a good mile or so to hike out…
I didn’t eat a lot, just enough to satisfy the immediate hunger, then I hiked out and drove the hour home… and crashed. ๐ I was too tired to worry with dinner, lol.

I started Wednesday with my easy go-to breakfast of cheesy eggs:
For lunch I had a NUSH Foods Organic, Gluten Free Low Carb Carrot Cake topped with Kosher cream cheese. Delicious! ๐

Wednesday was the day I had my Photo Shoot for Woman’s World Magazine, which was SO MUCH FUN!! It was also the hottest day of the year here in TN so far, and several hours of serious work. I picked up dinner while I was out, but I put it in the refrigerator and went straight to bed after -lol.

It’s not like me to skip meals – intentionally. I’ve just been going non-stop this week, and a bit off schedule. I’m all about the “listen to your body” thing so if I’m hungry I eat, if I’m exhausted I sleep!
I drank LOTS of water this week too. And the photo shoot on Wednesday was a great workout. Who knew “modeling” was such hard work?! ๐ I had no idea, lol. Between two BIG hikes and the photo shoot, I’ve been wiped out.;)
My hike on Tuesday was adventurous and FUN!
I’ll have to tell you all about it when I get caught up a bit, but it was definitely great exercise. I use a Fitbit Tracker and the Floors tracked represent 10 feet of elevation – so those 76 floors equals 760 feet of elevation on my hike (up only, it doesn’t count coming back down!).
We had an interesting discussion about eating low carb at McDonald’s on Facebook this week, following some negative comments about that on Instagram.
When you order the “round fried eggs” they are real eggs, cracked on site. The sausage patties are not the best option in the world, and they are 1 carb each, but it is a quick & easy low carb meal when you’re on the road.
In the discussion I shared what you should know about eating low carb fast food.
Anyway, this was my response… ๐ lol

Like I said, my weight is holding steady according to the scales, but I feel LEANER and feel great, and I’m just continuing to mind my macros and stay active! ๐
I can’t wait until the August issue of Woman’s World Magazine comes out. I’ll keep you posted on that. Exciting!! They specifically interviewed me about eating low carb on the go, so it should be interesting to see how the feature turns out.

Most of all… I hope the article inspires more people to consider how EASY it is to lose weight and make healthier choices. Going low carb is the best thing I’ve ever done for myself, and I love sharing that message with the world.

The smart cakes would most definitely be my first choice. Those are 0 net carbs…..you cannot do better than that. I will order the coconut and cinnamon flavors. And they e for these look so cute. Love low carb. Lost 30 lbs and never felt better…ot hungry! Keep your eye on nutrition, too. These 3 days are really low on clean protein, veggies, salad and low glycemic berries and fruit.

I agree, though I did have eggs every day – and nuts & berries too. But I explained that these were three very busy / chaotic / off schedule days in a row. And sometimes you have to eat what you can to get by at times like that, instead of grabbing junk with sugar & carbs. ๐
I made up for it the next two days, which you’ll see in my next food diary coming out later today, with spring greens & spinach & such. ๐ *cheers*
p.s. I honestly just wanted to order a pizza or go out for sushi, so I was really pleased I made it through this 3 day stretch with great macros. ๐ lol

I bet McDonalds would love to use your photo here (i eat at McDonalds) for their advertising since McDonalds has such a bad rep for being unhealthy. All restaurants can lead to obesity not just McDonalds. It’s all a matter of making smart choices at any restaurant. You have showed us that is possible to eat healthy and low carb at just about any restaurant. ๐
That’s so true, Gina. I really dislike the way people attack McDonald’s as if they’re the devil himself – when there are TONS of unhealthy options out there, even at the grocery store. ๐
It’s all about mindful eating & healthy choices – anywhere, and as part of a busy full “real life” which most of us have. Fortunately there are options: to stop here or NOT stop here, to choose this or to choose that.
