Today is our Week 11 Weigh In, so itโs time to check in and share your total number of pounds and/or inches lost since Monday!;)
I havenโt shared a Daily Food Diary with you lately, so Iโll share a photo tour of some of the low carb foods Iโve been eating lately โ both at home and on the go โ including fun low carb snacks, low carb fast food and take-out, and what Iโve been cooking up here in my kitchen the last few days. ๐
Creative Low Carb Food Ideas, Fun Snacks & Simple LCHF Meals
My daughter came for a visit and we enjoyed a great take-out dinner from our favorite restaurant: Gondola Pizza & Steak House (Greek/Italian).
I had the Philadelphia Chicken (grilled chicken topped with mushrooms & swiss) with broccoli & cauliflower. She had the Charbroiled Chicken Salad:
I can never finish a full order of their chicken, so I finished the rest for lunch the next day โ along with the cherry tomatoes I picked out of her salad. ๐
Iโve actually had this meal twice in the last week, because itโs so delicious! It also comes with sauteed onions, but I order it without โ which is just personal preference, but onions are also higher carb count.
Another great meal I enjoyed recently, and one that has become an EASY favorite, is this Roast Chicken Bites Salad from Bojanglesโ. The chicken is bit spicy, and the salad is always super fresh!
I added the boiled eggs and Pili Nuts myself at home, which made for a hearty meal. ๐
Pili Nuts are an amazingly unique nut โ big soft & buttery! ๐
One of my low carb staples is a simple plate of 3 eggs scrambled in real butter with colby jack cheese. Easy & filling!
Sometimes Iโll add something, like a few strawberries on the side:
โฆ or sausage or bacon โ or BBQ smoked sausage, made with Guyโs Sugar Free BBQ Sauce:
Another staple in my low carb lifestyle is raw pecan halves. I often grab those to eat at my desk while Iโm working, or to eat on the go.
Simple, real food, not messy โ very low carb / high fat, and 420 calories for 1/2 cup (60 grams) so theyโre both convenient AND filling. ๐
My all time favorite low carb meal is this combination of healthy real foods that I stir together and call โlow carb cereal.โ ๐
Itโs 1/2 cup pecan pieces, 1/4 cup Daisy Brand cottage cheese & 4 small strawberries. That comes to 5 net carbs and 85% healthy fat.
Sometimes Iโll add 18 grams of blueberries too, which makes it even better! ๐
This little beauty is a Bacon Wrapped Filet that comes individually packaged by The Great American Steak Company. Theyโre great for making a quick meal for one!
I was out & about the other day and grabbed a low carb style Frisco Burger from Hardeeโs (known as Carlโs Jr in some areas). Theyโll make anything on the menu low carb for you. ๐ All you have to do is ask for it โlow carb style!โ
This is such a simple little LCHF I enjoy: cream cheese & peanut butter. It tastes like peanut butter pie. ๐ Just something quick & easy when I need a bite on a busy day!
I also love cream cheese & berries. ๐
And here are those big beautiful Pili Nuts again!
Iโm a big fan of โsweet โn saltyโ combos.;)
Pili Nuts are large, soft and buttery โ similar to macadamia nuts but MUCH softer, and zero net carbs! Speaking of, Iโd never really eaten macadamia nuts (outside of cookies, that is -lol). Theyโre delicious too!! Much more โcrunchโ than a Pili Nut, so a totally different texture.
I picked up a bag of these NOW brand Dry Roasted Macadamia Nuts with Sea Salt recently, and really enjoyed them. ALL of them, lol.
They went GREAT with the Lilyโs Sugar Free Coconut Dark Chocolate Bar. ๐
These are the first two Lilyโs Sugar Free Chocolate Bars Iโve tried, and they were SO good! You can get them on Netrition as singles and mix & match all the flavors, or thereโs also a variety pack on Amazon (but theyโre cheaper on Netrition!).
Sometimes when Iโm not in the mood to cook, or busy with work and in a hurry, Iโll just make a plate of whatever I have โ which often turns out to be an interesting & delicious LCHF meal. ๐
Like this plate with pecan halves, macadamia nuts, Lilyโs Salted Almond Milk Chocolate, cream cheese & blueberries, and two FatSnax Ginger Turmeric cookies:
That was amazingly delicious โ and definitely a โmealโ lol:

Another snack I enjoyed with those same foods: peanut butter & chocolate with salted macadamia nuts. Yum! ๐
Did I mention I ate ALL of those macadamia nuts?! ๐ haha ~ Another beautiful low carb plate I enjoyed was these NUSH Foods Organic Low Carb Chocolate Cakes stacked with cream cheese & topped with macadamias:
Those are great, but my FAVORITE are the NUSH Banana Walnut Cakes. ๐
Iโve been enjoying a lot of cream cheese lately, because I found a HUGE stock of Philadelphia Kosher Cream Cheese at my local grocery โ and the kosher cream cheese is MUCH lower in carbs. ๐
This is just cream cheese & peanut butter with strawberries & blueberries. Simple, healthy, low carb/high fatโฆ and delicious!
Another easy but VERY filling LCHF snack: pecans dipped in peanut butter. ๐ Even better: dipped in peanut butter AND chocolate! This is actually Nuti Light Hazelnut Chocolate Spread which is sugar free, thick and delicious.
A recent meal I really enjoyed was from a local place called Stacked Bistro that I discovered delivers in my area!
Itโs sandwich shop, but I ordered the Turkey Spinach Wrap with no wrap, with a caesar salad as the side โ and just mixed them together into a big hearty salad:
This was take-out from Applebeeโs Carside-to-Goโฆ
The American Standard Burger, with green beans instead of fries:
Aaron got the Fiesta Lime Chicken with broccoli instead of rice. Neither of us finished our dinner that night, so I ate the leftovers the next day. ๐
Both meals were on the Applebeeโs โ2 for $20โ menu, which was a great deal!
Another one of my favorites is sausage & eggs from McDonaldโs.
I order โ3 sausage patties and 3 round fried eggs, please.โ Their sausage patties are 1 carb each, and the eggs are โreal eggsโ cracked on site.
A quick snack plate of Old Wisconsin Beef Bites (1 carb for 6 pieces) with pecans and colby jack cheese, sliced off the block โ a quick & easy low carb snack (or for me: a meal).
I also enjoyed the Quest Cinnamon Cereal Bar out of my June Keto Krate box:
That was delicious!!
I got another box of Smart Cakes recently. Theyโre like little gluten free cupcakes that come in 3 flavors, and theyโre ZERO net carbs. ๐
I had said before that the chocolate cakes were not my favorite, but this batch was actually better than the last! Still, the coconut Smart Cake is DEFINITELY my favorite of the three. ๐
Beautiful, right? ๐ That was a close-up from this gorgeous plate of cake with all three flavors โ topped with cream cheese & strawberries, and drizzled with melted peanut butter & sugar free chocolate hazelnut:
You can get the Smart Cakes on Netrition in individual packages or larger boxes.
That was a SWEET โlow carb meal for twoโ with Aaron. ๐
Who doesnโt like dessert for dinner?! lolโฆ
Speaking of low carb desserts, we finished off and LOVED this Low Carb Snickerdoodle Strawberry Cream Pie too:
I used Good Deeโs low carb mixes to make that pie crust, and then this weekend I whipped up some awesome desserts with her Brownie and Blondie mixes! Iโll share the recipes with you in my next post, because they turned out FABULOUS. ๐
I have another low carb meal & recipe to share with you this week too, because I whipped up a huge beautiful meal yesterday that included a big pan of roasted vegetables with a shrimp & cauli-rice dish. ๐
Those were frozen vegetables, tossed in olive oil and garlic powder, and just baked crisp at 350. So easy! I prefer to โkeep it simpleโ and just eat whatever I have on hand โ or whatever is quick & easy. Which this morning is pecans & string cheese with a big bottle of waterโฆ because I have a busy work day. ๐
How are things going with you?
I would love to hear an update! Donโt forget to weigh in, either here or in our low carb challenge group. If you have any questions or comments, I would love to hear those too. I look forward to catching up with you!
I hope this โphoto tourโ of some of my recent meals gives you some easy ideas to help you stay on track whether youโre on the go, or just need some simple ideas in a pinch. Iโll finish up those lists for you that I mentioned in the beginning too, because we do all need some CAKE and CHOCOLATE in our life now and then. ๐ *cheers*

Can you explain why the fat is so important in this die?. I need to burn off fat (lose weight) so should I still be eating fat or cut back until I lose weight and am ready for maintenance?
Hi Denise ๐ Great question! Thatโs exactly how I have lost all of MY weight: eating 70-80% of my daily calories in healthy fats. This will explain how it works: http://www.travelinglowcarb.com/4606/lchf-diet-explained/ (thereโs a science to it).
Also see: http://www.travelinglowcarb.com/4689/ketosis-symptoms-and-low-carb-flu/
If you eat too lean, you wonโt lose weight. So definitely donโt skimp in that area. ๐
Thank you Lynn! Your blog is so helpful. I have one more question. I havenโt ever seen you talk about supplements. Do you take anything?
I donโt take any supplements, no. If I get sick, like a stomach flu or have other tummy troubles for some reason (usually only when sick or on meds) I will take a probiotic โ but thatโs rare, thankfully. ๐
Just thought you should know that I will have to be taking out stock in pilinuts! Iโm addicted and now my 12 year old is loving them!
Iโm glad to hear you LOVE them too, Janene. ๐ Everyone Iโve introduced them to here has fallen head over heels in love with the Pili Nuts. They are so unique, and absolutely addictive! And super healthy too. They are still being wild harvested so they are FULL of nutrients. ๐ Enjoy!!

Lynn, thanks for the photo tour of all of your foods! I am very intrigued by that low carb โNutellaโ! I could eat jars of that stuff! LOL!
When I first found your sight about a year and a half ago you used to make a peanut butter fudge with pecans, peanut butter and coconut oil. I have tried it several times and it is amazing! I havenโt seen you feature that recipe in quite awhile. I like to make it and divide it up into several pieces and have it as a snack at night. Just one bite does it for me! Iโm sure new folks might enjoy it too. Just make sure to keep it in the freezer now! ๐
The Nuti Light spread is delicious. ๐ I got it in one of my Keto Krate boxes awhile back. It would be great made with that fudge, btw!
The recipe for the fudge is: http://www.travelinglowcarb.com/6247/low-carb-peanut-butter-fudge/
And the peanut butter pecan bars: http://www.travelinglowcarb.com/8855/lchf-peanut-butter-pecan-bars/
I used that same fudge recipe recently to make a sauce to drizzle over my low carb pie โ THAT was delicious! If you missed it, that recipe is here: http://www.travelinglowcarb.com/17189/low-carb-pie-crust/
Oh wow! I bet all of these recipes you just shared would be great with that Hazelnut Nutri Light spread! Thanks for the idea! ๐
Yes, that hazelnut chocolate spread is yummy โ and so versatile! I need to make a batch of peanut butter & chocolate fudge with it for Aaron. ๐ That would make another good recipe post. Who doesnโt love peanut butter & chocolate?! I love it melted together and drizzled over my low carb cakes, like in this photo: https://www.facebook.com/lowcarbtraveler/photos/a.1709079829120605.1073741842.226460087382594/1709081935787061/?type=3&theater YUM!
Thank you for all the visuals and sharing your lifestyle! You make low carb look easy!
Thank you, Amy ๐ It IS easy โ if you keep it simple. ๐ lol. I would totally freak out (and back out, haha) if I had to cook every day or meal prep every week. ๐
The low carb bread, Iโm addiced to it, yumo!
I agree, Sherry โ and they have so many other great products too! I just got through trying their granolaโฆ so stay tuned for my post on that. ๐ *cheers*
Hi Lynn,
This is great! I just stumbled over your low carb page and itโs so so tempting! Am now reading over so many of them, I will love to try it out as all the comments from others make it so attractive!
Please keep me posted, thanks
I will stay on
I have also read about the low carb challenge, I have subscribed by email but I want to clear my kitchen, get ready before I can join the Facebook group so that I will be actively participating,
Thanks
I have a question. Doing IF does a person gain muscle tone? I hope so. I was thinking I would lose muscle and get flabbier.. ๐
Hi Nicole,
I donโt personally do IF (intermittent fasting) or any kind of fasting. I simply eat when Iโm hungry and donโt when Iโm not โ and keep it that simple.
Youโll gain muscle through exercise, and burn fat through ketosis. ๐
Just found your website and cannot wait to try some of these snack and meal ideas. I have been keto for 3 months now and have gone from 278 to 246. I still have a long way to go, but I feel so much better
Welcome, Charlotte. ๐ Congrats on your success so far, and for taking control of your health & goals!! I look forward to hearing more from you, and getting to know you. ๐ xo ~Lynn
